Trying to Remember Simple Bran Quick Bread Recipe

Hi -

I used to make a bran "bread" that was very simple and had few ingredients. It was great toasted. The recipe I want uses 1 cup Miller's bran, 1 cup chopped dried fruit, 1 cup (I think) of milk, and only one or 2 other things.

You definitely mix the ingredients and let sit for a half hour or so, then just bake it. There is definitely no yeast in it. I think it calls for 1 cup of sugar but that's way too much for me so I remember putting in 1/4 cup. Can't remember about flour or eggs.

Not looking for recipes using bran cereal.

Thanks for all the suggestions! Here is the one x 'Country Magazine' (it also calls for 'soda' which I don't see mentioned in the recipes here). Also, I use a heating pad for my old yeast recipe but tried one of those long heating plates/trays w/ a thermostat for this recipe & it works great ... no dipping out cooled water & adding hot, etc.! Was funny to read the original old recipe, old phrases & the way quantities were named; I can just see a woman making this outside her covered wagon or sod hut! DAY 1 Starter: 8 T. cornmeal 'pinch' of salt 'pinch' of 'soda' 1 tsp. sugar Put all in pint screw cap jar (I used a Mason 2 C.jar), mix well & 'fill' (no quantity mentioned here?) with scalding water, stir well, cover & let set overnite in a warm place (I put it in a pan of warm water on the heating tray rather than having to keep dipping out cooled water & adding warm water, etc. as the original old recipe called for). DAY 2: In large bowl, add: 1 qt. milk (or 1/2 milk & 1/2 water) add starter 1/2 tsp. salt white flour to make stiff batter Stir well & cover & I placed it in pan of warm water on the warming tray 3-4 hrs. (if slow to rise,stir again & place back on warmer) when dough rises: add 1 tsp. salt ( again!thus I guess: 'salt bread'!) 3-4 T. shortening (I used bacon grease... probably what the pioneers used also!) flour to make stiff dough, knead 10 mins.,put in greased loaf pans (makes 3 large loaves for me), let rise to double in size. Bake 375 degrees 30-40 mins.; remove from oven & butter crusts well. I hope with repeated use this recipe will be quicker for me to make! I liked the texture but kinda missed my grandmother's bread with the 'yeast' aroma! This made 3 large loaves for me.

These are easy, plain, and quick to make. They are sort of free-form crackers, so I think to break them up in smaller portions when no one is looking might be the way to go. Kraxy Krackers 2 3/4 cups unbleached flour 2-4 TB sugar 1/2 t. salt 1/2 t. baking soda 1/2 cup real mayonnaise 8 oz. carton plain yogurt In a large mixing bowl, stir together flour, sugar, salt, and soda. With a pastry blender, cut in mayonnaise until well mixed and coarse crumbs form. Stir in yogurt. With your hands, firmly press dough into a ball. Cut into 16 equal pieces: first cut ball of dough into quarters, then cut each quarter into fourths. On a pastry cloth with a covered rolling pin, roll each piece to 1/16-inch thickness. Each quarter will be an uneven round. Place a few inches apart on ungreased cookie sheets and sprinkle lightly with salt. Prick all over each cracker with a fork. Bake in a preheated 400 degree F oven until lightly spotted brown - 6-7 minutes. With a wide metal spatula, remove to wire racks to cool. Store in a tightly covered tin until ready to serve. Makes 16 huge crackers.

Pumpkin Bread 2/3 cup shortening 2-2/3 cup sugar 4 eggs 1 can (15 oz) pure pumpkin 2/3 cup water (or use cider) 3-1/2 cup flour 2 tsp. soda 1-1/2 tsp salt 1/2 tsp baking powder 1 tsp cinnamon 1 tsp cloves 2/3 cup coarsely chopped nuts 2/3 cup raisins Heat oven to 350. Grease 2 loaf pans. Cream shortening and sugar thoroughly. Add eggs, pumpkin and water. Blend in dry ingredients, except nuts and raisins. Stir in nuts and raisins after batter has been mixed well. Bake 60-70 minutes or until wooden pick inserted in center comes out clean. I think I set my timer for 50 minutes and then checked it, but don't remember if I had to cook longer than that or not. This is my favorite pumpkin bread recipe, and is wonderful with a cream cheese and lemon and sugar glaze on it. Rosie's Banana Bread 1/2 cup oil 2 eggs 3/4 cup mashed bananas 1 cup sugar 1-1/4 cup flour 1 tsp. soda 1/2 tsp salt Preheat oven to 350. Mix oil, eggs, and bananas with sugar. Sift dry ingredients and add. Bake 50 minutes in heavily greased and floured pan. This is a very, very moist bread, so good greasing and flouring of the pan is necessary. I also add 1 cup chopped walnuts to this. This, again, is the best banana bread recipe I have found. Cherry Zucchini Bread 2 eggs 1 tsp. ground cinnamon 3/4 cup granulated sugar 1/2 tsp baking soda 1/3 cup vegetable oil 1/4 tsp. salt 1/3 cup lemon juice 2/3 cup shredded, unpeeled zucchini 1/4 cup water 2/3 cup dried tart cherries 2 cups all purpose flour 1 Tbs. grated lemon peel 2 tsp. baking powder Put eggs in a large mixing bowl. Beat with an electric mixer on med. speed 3-4 minutes, or until eggs are thick and lemon colored. Add sugar, oil, lemon juice, and water and mix well. Combine flouyr baking powder, cinnamon, soda and salt. Add flour mixture to egg mixture and mix well. Stir in zucchin, cherries, and lemon peel. Grease and flour the bottom only of a loaf pan. Pour batter into prepared pan. Bake in preheated oven 55-65 minutes, or until wooden pick inserted in center comes out clean. Makes 1 loaf. Emily, I'm sorry you had trouble. I think that too much flour might have been the problem. I know the recipe calls for 6 cups of flour, but whenever I make any kind of bread, I always hold back at least 1 or more cups. I only add more flour if I think the mixture is too, too wet. I forgot that I kind-of ran into the same problem you're describing. Even at the five cup stage, the flour mixture seemed more like a kneading dough than a batter. So I remember (now) adding about 1/4 -1/3 cup additional water to make it more batter-like. When I got the batter into the pans, I was so worried about over-proofing the dough. I didn't want to pop the pans into a hot oven and then watch the bread deflate. So I think I could have let the dough rise in the pans longer. I'm sorry you had trouble. Forgive me for not mentioning anything. This old gray mare's brain ain't what it used to be. I need to make a note on my copy of the recipe too or else the next time I make it, who knows what I'll remember. I hope you'll try the bread again. It really did turn out well. My biggest problem right now is that my husband keeps wanting to have "toast" snacks.

All Bran Bread
Ingredients:
1 Egg

1/2 teaspoon Salt

1/2 cup Sugar

1/4 cup Molasses

1 1/2 cups All Bran

1 1/2 cups Flour

1 1/2 cups Milk sour

1 teaspoon Baking Soda

Directions:
1. Beat egg and add salt, sugar and molasses.

2. Add sour milk and all bran and let set till most of moisture is taken up, add flour and soda.

3. Put in greased loaf pan and bake in 350 F oven for 1 hour.

Thanks for the suggestions. None of these are close, but they sound like good recipes. Mine had no molasses and was unprocessed (Miller's) bran and far fewer ingredients. I will put your offerings, above, on the list to try and certainly appreciate your posting them!

Found one in cooksrecipes.com called Miller's bran muffins that has water, bran, honey, oil, eggs, flour baking soda, yogurt raisens, bananas (guess you could sub dried fruit.)
If you cannot find it let me know. I just googles Miller's Bran and then Miller's bran muffins.

here's a muffin...the hodgson's mill site has several recipes...

Basic Bran Muffins

1 1/2 c HODGSON MILL UNPROCESSED WHEAT BRAN1 c milk1 egg1/3 c soft shortening1 1/2 c HODGSON MILL UNBLEACHED WHITE FLOUR, SIFTED1/2 c sugar3 tsp. baking powder1 tsp. salt Preheat the oven to 400 degrees F. Combine the wheat bran and milk in a mixing bowl. Let stand 2 minutes or until most of the moisture is absorbed. Add the egg and shortening. Beat until well blended. Sift together the flour, sugar, baking powder and salt. Add the dry ingredients to the bran mixture and stir just until all are moistened. Spoon the batter into oiled muffin cups (3/4 full) and bake 25 minutes or until lightly browned. Serve hot.

NOTE: For Blueberry Muffins add 1 cup fresh or frozen blueberries to batter.

Makes 12 servings. Each serving: 163 calories; 4 g dietary fiber; 26 g carbohydrates; 4 g protein; 6 g fat; 19 mg cholesterol; 309 mg sodium.
