peanut butter cookies....

I think Glenda shared a recipe once for peanut butter cookies, that consisted of:

1 cup peanutbutter

1 cup sugar

1 egg

It is absolutely deeelish, but I am wondering if you think it would work with a cup of Splenda instead of the sugar??

I can't help with the splenda question, but I know one thing, don't use Reduced Fat PB. I don't know what it does to the cookie but they were NOT good and I won't use that again! LOL

You may be over-baking the cookies. Try cutting the baking time by a minute or so. When you take them out of the oven, allow them to set on the baking sheet for a minute to "set" before removing them. What type of flour are you using? All-purpose is a good choice for cookies. If you use high-protein bread flour, or even King Arthur All-Purpose or Robin Hood All-Purpose, which are higher in protein than national brands of all-purpose flour (Gold Medal and Pillsbury), that will cause the cookies to be crispy. How are you mixing them? If you use a stand mixer when adding the flour, you may be over-mixing the dough and developing too much gluten, which will cause the cookies to be tough, not tender. I prefer adding flour by-hand using a Danish Dough Whisk to avoid over-mixing and too much gluten development. Clair de luna's flourless cookie recipe is a yummy choice. I just made some with agave nectar for my diabetic neice and she thought they were wonderful. Me, I like oatmeal in my peanut butter cookies. Don't you just LOVE choices ;?) -Grainlady

That's essentially the recipe my mother used all the time. They're great. She always used shortening. Nice and crumbly. My sister mixes butter and shortening. I usually use the butter flavored shortening. Also she never added the salt. Peanut butter generally has enough salt and if you use salted butter, that too has salt in it but use if you like. A suggestion to speed things up, just grab a bunch of the dough and roll it in your hands into a log shape about 1"-1 1/2" or however big you want them, then break off the pieces and set in the pan. Take the fork and go at them. My mother's recipe said to dip the fork in flour but I usually touch the fork to the dough then dip it in sugar. As you're breaking off pieces, usually 2-3 in the pan and one in the mouth. Love that peanut butter cookie dough!

Here's Paula's
God Bless Paula Deen for Flourless Peanut Butter Cookies!

1 cup peanut butter
1 egg
1 tbsp vanilla
1 cup Splenda

Mix and roll into balls (about walnut sized) and flatten with fork dipped in Splenda. Bake at 350 for 12 minutes.

TIPS
-Do NOT overcook -- they will get crumbly since there's no gluten

Ditto: Do NOT use reduced fat pb

AND cook them until lightly browned

That's correct grammahony, no flour in this recipe. It's gluten-free this way so they're acceptable for celiacs (gluten-intolerant people). My (celiac) sister has tried this recipe and says they're quite a bit sweeter than our old fashioned "Mom's recipe" PB cookies, but they're very good and nice to have something that normally would be out of the diet.

I had suggested she experiment a bit with rice flour or something, but since this works, go with it.

Now this has me hungry for peanut butter cookie dough! I tend to eat a bunch of the dough before it gets baked! But a batch is still good.

These also work with a chocolate chip in them, a chocolate star or a Hershey's Kiss.

My favorite cookie of all time is "Peanut Blossoms"... peanut butter cookes with a Hershey's Kiss...
