What To Do with an Eggplant?

I was given a very small eggplant. How would you fix it?

I would use it for "eggplant caviar".

Bake until tender,skin and cut into small pieces. Then saute it with some onion,green pepper and a bit of tomato sauce, salt and pepper.

Serve cold on rye bread. I like it on toasted bread. You can also use those little bruscetta sliced breads from the deli.

I would either flour and fry it or use it instead of pasta to make eggplant lasagna. Then there's eggplant parmesian.

😊 I only use the eggplant to make Mediterranean dishes ( you probably havn’t heard or seen) one dish is made with roasted eggplant on fire then mashed and sautéed with garlic, turmeric, tomatoes and eggs, has a smoky flavor and aroma to it. ( another dish is with sauted eggplants cooked with lots of garlic, tomatoes, dried mint, turmeric and a dairy product called Kashk. Also eggplant stew with lamb...all are very delicious. I’m more used to cooking with the long skinnier eggplants ( less seeds).

Ra Ra! Moussaka, this is lush and freezes well, there is no hard and fast with this but the egg plant holds up well, If I have spare, I just do as I do, for a moussaka which is coat in olive all and bake for about 20 mins. I did some hunting for moussaka recipes on the net and they all seemed very long and involved and contained 2 much eggplant for my taste, but remember that is my taste! so here is mine and remember you can double up. 1 LB mince beef (should be lamb!!) but beef is a good substitute 1 med yellow Onion chopped 3 Garlic cloves or teaspoons of garlic paste (I like garlic) Couple of liberal teaspoons of dried italian herb mix or whatever you fancy from the garden. bit of salt if you want, I don't bother black pepper 2 or 3 generous twists. 1 28 oz tin of toms, doesn't matter what type, if whole just smash them up a bit in the pan, or you can use fresh or frozen really not an issue. make up as you would a meat spaghetti sauce. 1 med Eggplant, sliced and cooked in olive oil, in the oven til soft 2 med pots sliced and nearly cooked by boiling (leave these out if you can't be bothered, I just like it) layer, meat sauce, Egg plant, pots, in whatever order you fancy, I normally do a bit of meat first. cheese layer, either 3 cups of, half and half, thick cream, whatever cream! or plain yogurt whatever you have around. nutmeg if you have it, if not no worries. 3 eggs beaten into the cream/yogurt. 1/2 cup of Parmesan, or really any cheese you have lying round but just increase the amount as not as strong, I have been known to just make the sauce without cheese and thrown a slice of mozzarella on the top, bake at 350, until done as in hot thorough out and top nice and brown! if freezing leave out the cooking stage til you need to eat it. I know its fairly wishy washy, but I don't have time to fanny about on complicated recipes that call for ingredient, that I wouldn't use for anything else. I am keen to try ksrogers idea, and I also like coffehaus one and have made something similar to it in the past, and it was really good

I dried eggplant a couple of times, but was never tempted to taste it. However, dried summer squash is pretty good. If its nice and dry, and you can keep it that way, it's crisp.

Cathy, I agree, just sliced and roasted with olive oil, salt, lots of black pepper, it's yummy. I also like baba ganouj, this recipe is from Eating Well and uses some of that powdered sumac I bought to make Lars' Algerian chicken. When Elery is here he will grill the vegetables for me, otherwise I just stick 'em in the oven. They are better grilled but good roasted too. Baba Ganouj 2 medium eggplants, (about 1 pound each) 4 cloves garlic, unpeeled 1/4 cup lemon juice 2 tablespoons tahini, (see Note) 1 1/4 teaspoons salt Extra-virgin olive oil, for garnish Ground sumac, for garnish Preheat grill to high. Prick eggplants all over with a fork. Thread garlic cloves onto a skewer. Grill the eggplants, turning occasionally, until charred and tender, 10 to 12 minutes. Grill the garlic, turning once, until charred and tender, 6 to 8 minutes. Transfer the eggplants and garlic to a cutting board. When cool enough to handle, peel both. Transfer to a food processor. Add lemon juice, tahini and salt; process until almost smooth. Drizzle with oil and sprinkle with sumac, if desired. Make Ahead Tip: Cover and refrigerate for up to 3 days. Annie

I would dip in egg and then breadcrumbs, saute lightly and then place it on top of a breaded fresh veal cutlet with tomato sauce and fresh parmesan and mozzarella and bake it until cheese is melted and sauce is bubbling hot.That is what I would do.

I cut it thin (unpealed), dip it in egg, then flour mixed with cracker crumbs then fry it well. turns out to be almost like egg plant chips as I like it well done. Also have made eggplant parmesan. Then I take the skin off before I eat it. It helps hold the slices together while frying.
Season with salt/pepper or garlic salt or???
Marie who has raised them. Hard here due to the shorter seasons but they are much better than store bought.

I would glue some swiggley eyes on it and put a little witch hat on top and set it on my porch. :-) I don't like eggplant, but some of the cooking suggestions sound pretty good.

Marie,,,, I gave up gardening,,,first I planted a whole pound of bird seed, but I didn't get any birds, just some stupid weed looking stuff, then I planted eggplants and what do you suppose? Did I get any eggs? Hell no, only some stupid purple pumpkin looking things...I give up.

LOL Lydia! Eggplant is yummy in many ways! My favorite is cubing it and dipping it in egg and then panko bread crumbs and then deep frying. Eggplant croutons YUMMM!!!

if THE EGGPLANT IS SMALL SIT IT OUT ON THE BACK PORCH AND LET IT ROT.if IT'S A GOOD SIZE THAN GET A GOOD RECIPE AND FRY IT.yOU WILL BE GLAD YOU DID.

peel and slice. dip it into an egg milk mixture then roll it in crushed ritz crakers. Fry it in butter/oleo. Yummy
