Eggs!

Just fixed myself two "eggs in the nest" with couple slices jennie o turkey bacon. Love my yolks runny!

Also known as "toad in the hole".

Used sandwich rounds for my bread.

Haven't had those for at least 13 or so years. Used to make them for GS when he was a wee tot.

How do you enjoy your eggs?

    Any which way but raw--I like them runny, too. Only the white part has to be cooked.

    Thanks Sandy! I know where there is some... but it may not be enough. My sister just moved back to Jenks from Ft Worth and I found some in a field near her new house and also growing along side the road... though I'm not sure exactly what variety it is. I'm thinking maybe green? The flowers were very greenish with the slightest hint of pink. But again, that may not be enough, so I'll definitely take you up on that knowledge when the time comes! ~Laura

    What a cool find. There must be some Flat-topped Aster somewhere near you because these butterflies only exist near their host plants. These caterpillars will overwinter, which can be tricky because there is a high risk of them drying out. (I tried to overwinter a few one year--failed and didn't want to try it again because I didn't want to harm the local populations). I guess I would encourage you to find the stand of asters somewhere and release most of the caterpillars. They make a web and feed together--hundreds (so you will need a lot of the plant); they stop feeding about August and rest at the base of the plant for the fall/winter. They re-awaken in spring and resume feeding about the time the host plants have re-leafed. There are resources about rearing overwintering caterpillars. If you search on this site for a Ladobe's posts, he gave a detailed explantation of a technique he used to get most overwintering larvae to survive winter. Good luck!     They aren't identical if you look at them very closely. Your lady bug eggs should be smooth in appearance. Your cabbage worm eggs should have little ridges. You may need a magnifying glass to help you see the ridges. I'll find and link an image of a cabbage worm egg that has been magnified to show the ridges.     My favorite way to have eggs is poached on toast. Sometimes for dinner, I used to make omlettes to order, and I liked them with ham, cheddar, fresh tomatoes and mushrooms and onions and green peppers. My family never liked big breakfasts, so I turned these into a family dinner with sectioned grapefruit halves and biscuits.

    I cook with eggs but I don't care much for them by themselves. I use hard boiled in tuna or potato salad and bake with them. I have my own hens and get more eggs than I can use so every one of my five possums gets an egg a day. My daughter, the city slicker, turns down my offer of fresh eggs. She likes to buy them in the supermarket. I am just the opposite. I don't like to buy "cage eggs".

    DH likes eggs basted, and he likes me to use milk. Took me awhile to learn how. He also likes a veggie omlet. I like mine either over med or scrambled, with salsa. Sometimes I will scramble with sauted onions and cheese and even add olives.

    I don't pay much attention to the raw yolk scare. I love a gently fried egg, yolk runny, on toast.

    Also a true Caesar salad with the 2 or 3 minute egg and lots of garlic is pure heaven.

    I also love a good omlette as long as I don't have to make it as I don't usually keep the ingredients I like on hand.

    Omelette or scrambled, or hard-cooked. I can't eat undercooked eggs--never did like the texture, and after losing a week of my life to food poisoning from raw egg in Caesar dressing some years ago, I won't eat any eggs that are raw, runny, or otherwise undercooked. Something you never want to go through twice.

    I like them all kinds of ways.
    Today I fried eggs and ham for brunch, great.
    I love omelets too usually add some pre cooked sausage crumbles, cheese, and what ever I have like onions, tomatoes, spinach etc.
    I also love fresh made egg salad still warm on soft white bread.

    I like breakfast at any time but I am still trying to teach my husband it can be served any time. He loves it but thinks it is just strange.

    I like my eggs most any way except the whites must be cooked. My favorite way is over easy with runny yolks. Often I fix scrambled in the microwave.

    I like my eggs over easy, but the white has got to be done and the yolk runny... and I like poached eggs to, same way.. I don't much care for omelets, although Bob loved them, so I would fix him one with ham, eggs, tomatos, cheese, onions and peppers..

    I usually eat them hard boiled. I always keep some in the fridge for a quickie snack/meal. If I am out scrambled or omelet is the only way, not runny anything for me~~if it is for an evening meal at home it is a fritta with veggies/ potatoes, some sausage on the side for DH.

    Glenda I forgot to add, I made Toad in the Hole for my kids at dinner all the time when they were young. My DD is 32 and she eats it for dinner still, has turned her BF onto it also;)

    I like my eggs in cakes or cookies or egg salad sandwiches.
    The thought of runny yolked eggs make me gag.
    It is difficult for me to sit across the table from someone eating over easy eggs.

    Make myself egg McMuffins quite often. If frying one, I like white to be DONE, and yolk dippable for toast.

    As long as the whites are cooked through, I like my eggs any way you can make 'em! Having access to fresh eggs from happy chickens makes a difference (how do I know they are happy? They make happy chicken noises and pickpocket me for treats and sit on my lap, that is how!).

    I never liked scrambled eggs until I learned how to make them properly. Scramble them up, do NOT add any liquid (no milk, no water, no nuttin). Do NOT add any salt or pepper.

    Take a small pat of butter and cut 2/3 of it in little pieces, drop into your bowl of egg. Melt the other in a hot pan that has been sprayed with cooking spray.

    Add your egg, and use a spatula to constantly scrape through to the bottom towards the middle from all directions as the egg cooks. Your pan should be hot, this is a fast process. Cut through the mound of cooked egg in the middle and turn it about so that any uncooked areas finish cooking.

    You want them to still be MOIST. By the time they hit your plate they are perfectly cooked. If the pan is hot, I can have scrambled eggs on my plate in less than a minute.

    These are more like the custardy eggs of a french omelette, not dried out curds weeping liquid on the plate. I absolutely HATE weeping scrambled eggs.

    I truly miss fresh eggs. Used to have chickens when I lived in the country.

    Store bought eggs are just that.... store bought.

    The few times I've had fresh eggs, thought they were the best and so pretty!

    Don't like runny yolks. Dances, I've been wanting to try scrambled eggs your way...just heard about this a few days ago. Where have I been?

    Soft boiled, poached, over easy, scrambled. I'd think a hot pan would create 'tough' eggs -- no so? I fry or scramble over very low heat. Love my 'flat end' spoon for scraping up and redistributing the scrambled egg in the pan.

    I've gone back to buying the store brand of Jumbo eggs. The specialty brands are two or three times as much and don't seem to me to taste THAT much better. Wish I could find farm-fresh eggs.

    My mother told a story from her childhood on a small farm. Her mother wanted to raise some ducks, so she bought some fertile duck eggs from a neighbor and put them under one of her hens. The hen's chicken and duck eggs hatched, and all went well until the ducklings spied the pond and took to the water. Mama Hen was *frantic*!

    Scrambled well done! Or a ham and cheese omlette. Hard boiled. Just please don't give me an egg that is runny or scrambled wet. DH likes them over medium, but he eats them any way I make them, as I still haven't mastered them that way, even after 30 years! Love fresh eggs from a friend, but don't get them often. It's a 40 minute drive one way, and she doesn't always have them when we go. I could buy them from a few neighbors, but even those don't taste the same as our friend's do.

    I used to get the best eggs Benedict at a place in Denver, they piled crab meat on top then poured on the wonderful sauce. Oh how I would love to have those very ones again. We would go every weekend so I could have my fix lol

    We both love hot boudin and fried eggs for breakfast, if I cook that for my husband he is happy happy happy!

    When my granddaughter was about 4 I made those for her, she called them "inside outside eggs" and it stuck, have alse heard them called "hobo eggs" My prefrence is over medium, or a good vegie omlet is always good, the more veggies the better, green peppers,broccoli,avacado,tomatoes,green onion.sounds good.

    Waffle House offers: scrambled cheese eggs, grits, sausage patties or bacon and raisin bread.

    Their scrambled cheese eggs are perfectly cooked.

    How about "egg & orange"? Raw egg, a bit of sugar, beaten up with orange juice. I haven't had that since I was a girl -- probably just as well with health scares.

    For me the eggs could stay in the chicken. I never eat eggs no matter how they are cooked.

    As long as the white is thoroughly cooked,i can eat them anyway.My favs are over med,runny yolk,cheese omlet,soft boiled,hard boiled in a lot of different dishes.

    Scrambled, not runny. I don't add anything to it -- no cheese, nothing. And I can't recall the last time I bought eggs other than Eggbeaters.

    Dances -- I'll have to try your method!

    I haven't had a good omelette in a long time -- either when I cook them or when I order it at my favorite diner (it was absolutely loaded with onions and peppers -- if I'd been cooking it, those veggies would've gone into 5 or 6 omelettes! I had to send it back...)

    Anybody have tips for making good, fluffy (and no well-done marks on the bottom) omelettes?

    The only Toad in the Hole I know of, is a British dish ... pork sausages cooked in yorkshire pudding batter. Yum!

    Scotch Eggs - hard boiled egg that is covered with minced pork meat and fried. Typical pub dish in the UK.

    If they're fried I like them over med- over hard. I don't mind a little bit of runny yolk but I can't chance any gooey white so in restaurants I err on the side over hard. I also like veggie omelettes or scrambled.

    The best scrambled eggs I've ever had (and started making since) were at a friend's out of town wedding at a summer camp where breakfasts were served cafeteria style. After the scrambled eggs were just about cooked you toss in basil and a little bit of cream cheese and stir and cook just long enough more for the basil to wilt. They are delicious! Every time I make them for anyone they always love them.

    Sorry no runny eggs for me or eggs with ketchup on them. I love them fried, scrambled or hard boiled just the way they are. Yum!!

    I'm confused about your toad-in-the-hole description. Toad in the hole is sausages baked in Yorkshire Pudding (which is good). Must be a regionalism thing - learn something new everyday.

    bfelton, I grew up with egg-in-the-nest/toad-in-the-hole being one and the same. The way I described.

    I am aware of the toad in the hole sausage version, but that's not the version I grew up with.

    My very dear DH is a chef by trade & loves eggs - in sales now. He makes the MOST amazing breakfasts using leftovers in the frig - yesterday he had pieces of pork rib off the bone, mushrooms, calamari all sauteed & his eggs over all of it. He likes his eggs over easy. I just consulted with him - tomorrow on the menu - sauted mushrooms & onions, roasted peppers, pieces of pot roast & then eggs spread over all (over easy) with a slice of rye toast. He also makes amazing breakfast wraps & breakfast stuff in tortillas.

    He cooks most of what we eat!

    At least he should cook for hunting season.....

    I have told him he should open a breakfast only place!

    I can eat eggs cooked anyway there is but overeasy is my favorite, except sunny side up. I touched the top of one of those once and it was still cold. No Thank You.

    I am a cook in a restaurant and last week a customer came back in the kitchen to tell me, it is really hard to find overeasy cooked just right and his were perfect.
    If you have never tried it take leftover cooked pasta and fry it in the pan to warm it up and put eggs over it and scramble it together it is so good. You can add onions and/or green peppers if you like.

    Yesterday at the Super One store I asked a young man who was stocking the area to hand me a half dozen egg carton which was up high. He said sure and then examined every egg to make sure none were broken.I thought that was so nice. BTW the use by date was sometime early Dec

    I like them any old way, and yes, I've even eaten them raw, but that was a few (ahem, quite a few) years ago, before we learned to be afraid of everything.

    I'll eat the yolks hard and still like them, but I'm in heaven when the yolk is runny. When we have eggs for breakfast I will eat the white first and then attempt to put the entire yolk in my mouth at one time and let it "pop" in my mouth and truly savor it. It is sometimes a difficult task to do without breaking the yolk, but DH found the perfect solution - a mini spatula with a little piggy on the handle! I know I should be embarrassed by my behavior, but I'm not!
