this recipe looks really really good! Just a different

take on the regular baked potato. I might have to try

this!

How about trying the North African equivalent? Here's a nice one: Maakouda Batata What youÃ¢ÂÂll need: Ã¢ÂÂ¦1 kg or 2 lbs. potatoes (about 5 medium) Ã¢ÂÂ¦1 small onion, finely chopped Ã¢ÂÂ¦1 to 2 tablespoons butter Ã¢ÂÂ¦3 or 4 cloves garlic, pressed Ã¢ÂÂ¦1 1/2 tablespoons cumin Ã¢ÂÂ¦2 teaspoons salt Ã¢ÂÂ¦1/2 teaspoon pepper, or more to taste Ã¢ÂÂ¦1 teaspoon turmeric (optional) Ã¢ÂÂ¦1/4 cup chopped cilantro Ã¢ÂÂ¦2 eggs, beaten Ã¢ÂÂ¦olive oil, for frying What youÃ¢ÂÂll need to do: 1.) Peel and blanch the potatoes (until you can insert a knife halfway into them) for about ten minutes. 2.) Ideally, submerge the potatoes in cold water and set them aside for an hour, into the fridge if you like. This isnÃ¢ÂÂt necessary if you successfully cool the potatoes. 3.) Grate the potatoes into a mixing bowl. 4.) Dice the onion and mince the garlic. 5.) Melt the butter in a frying pan and on medium-low heat, sautÃÂ© the onions until translucent, say, for about ten minutes. Add the garlic and stir-fry for a minute or two and then remove from heat. 6.) Dump the onion, garlic, spices, and eggs into the mixing bowl and mix vigorously until well-blended. 7.) Add enough olive oil to the bottom of the pan to cover it and replace onto heat. 8.) Scrape potato mixture into the pan and tamp with spatula; if not a spatula, then use a small animal. 9.) Let it fry for ten minutes or so, or until you think the bottom is browning. Place a large plate face-down over the pan and deftly turn the pan upside down. 10.) Place the pan back on the heat and add a little olive oil. Replace the maakouda in the pan so the other side can brown, too, for about ten more minutes. 11.) I love twice baked potatoes, so I'll be saving this entire thread! LOL Her's a favorite of ours. We often have them as a meal, served with just a salad or side of vegetables. Andouille and White Cheddar Over-Stuffed Baked Potatoes Recipe courtesy Emeril Lagasse, 2000 8 large baking potatoes, like Russets Drizzle olive oil Salt Freshly ground black pepper 3 tablespoons olive oil 2 cups thinly sliced onions 1/2 pound andouille sausage, ground 8 tablespoons butter 1 to 1 1/2 cups cream fraiche 1/2 pound white cheddar, grated 1/4 cup chopped chives 1/4 cup chopped parsley Preheat the oven to 400 degrees F. Season the potatoes with olive oil, salt and pepper. Place on a baking sheet and bake until tender, about 1 hour. Remove from the oven and cool. In a saute pan, over medium heat, add 2 tablespoons of olive oil. When the oil is hot, add the onions. Season with salt and pepper. Cook until caramelized, about 8 minutes. Remove from the heat and cool. Meanwhile, in a saute pan, over medium heat, add the 1 tablespoon of oil. When the oil is hot, brown the sausage, about 6 minutes. Using a slotted spoon, remove the sausage and drain on paper towels. Set aside. Using a sharp knife, remove the top 1/4 of each potato. Using a spoon, remove the flesh from each potato, leaving about 1/4-inch border on each potato. Set the hollowed potato shells, aside. In a mixing bowl, combine the potato flesh, butter, and cream fraiche. Season with salt and pepper. Using a hand masher, mash until smooth. Add half of the cheese, onions, sausage, chives, and parsley. Season with salt and pepper. Mix well. Fill each hollow potato with the potato/sausage mixture. Top each potato with the remaining cheese. Place on a baking sheet and bake until the potatoes are warm and the cheese melts. Remove from the oven and serve. Linda

I've made macarons with almond flour, very delicious but a bit finicky. I made some pancakes and they were acceptable, but I made bread and it wasn't. Zucchini bread was better. My daughter is celiac and can't have gluten, so almond flour works in some cases. You can also find a lot of recipes using almond flour on the paleo diet websites and blogs. Annie

I make a version of that without the garlic. I didn't know it had a name! LOL

Sliced drizzled with melted butter and sprinkled with herbs.

I also like baked potatoes, mashed with a bit of horseradish and sour cream. Gives it a nice tang.

We had steak the other night, made too many baked potatoes so now I'm stuck with 2 whole baked potatoes.Tonight I'm going to layer ham, sliced potatoes, chopped onion and cheese,pour milk over it and bake that for dinner.

I make them,you put a wooden spoon down lay potato on top slice the potao it wont go all the way thru I add butter and garlic and bake yum..

I guess we are going to have a late dinner. I just put these in the oven. BUT I wrapped them in foil! lol THEN I came back here to check the recipe for the temp and I see that they aren't cooked in foil. Oh well, I let you know how they turend out! lol

I made them for supper.They were good but I think my potatoes are weird! I had to cook them for 50 mins and they still weren't done.We ate them anyway because the steaks were done. I got a bag of potatoes once before that had to be cooked forever to get done.Wonder why that happens sometimes? Next time I'm going to get the little red potatoes,bet they'll be wonderful cooked like this!

Kat, makes me happy to hear you talking about food and wanting to enjoy it. :)

You mean you could've sworn you had wrapped the spuds in foil and later discovered you hadn't? Sounds like our friend, Chemo Brain. That used to scare me then I just had to laugh about it. :)

Recipe sounds yummy, but guess I'm lazy and just usually nuke my potato.
