Tomorrow's noon time meal is being baked today. Pork shoulder Boston roast is in the oven, two sweet potato breads are waiting to come out of the pans and the candied sweet potatoes will be put in the oven soon. I have lots of peeling and baking to do yet. Hope your recipe turns out good Sherry.

I'm trying to find some way to cook chicken in a slow cooker for dinner tonight. Been looking at my cookbooks and haven't found anything I like.

I make this chicken in the slow cooker. It uses frozen boneless chicken breasts. So it can be done anytime, because you don't need to remember to take the meat out of the freezer.

It's by a well-known slow-cook author, but I can't remember her name right now.

Orange Hoisin Chicken

2 tbsp frozen orange juice concentrate, thawed
1/4 cup honey
2 tbsp soy sauce
3 slices fresh ginger, peeled
3 garlic cloves, minced
2 tbsp hoisin sauce
1 tbsp sesame oil
6 frozen boneless, skinless chicken breasts (do not thaw)
2 tsp cornstarch
2 tsp cold water
1 tbsp toasted sesame seeds, for garnish

Mix sauce ingredients in the slow cooker. Add chicken and combine make sure chicken is well coated.

Cook on Low 5-6 hours.

Transfer chicken to a warm platter. Strain sauce into a small saucepan. Combine cornstarch and water and thicken sauce.
Pour some sauce on the chicken and pass the rest. Sprinkle sesame seeds on top of chicken.

We declared this a keeper! I posted the recipe on the dinner thread, but I'll put it here as well.

Beef and Mushroom Stew
Raisins and molasses are the secret ingredients that gives this stew its richness. Adding the mushrooms for the last hour of cooking makes them as tender as the beef.

3 tbsp flour
2 lb boneless beef, cut in 1-2" cubes
2 tbsp cooking oil
4 medium carrots, cut in 1/2" slices
2 medium onions, chopped
1/4 cup cider vinegar
1/4 cup molasses
14 1/2 can diced tomatoes
salt and pepper
1/4 tsp ground ginger
12 oz fresh mushrooms, halved
1/4 cup raisins

Place flour and some salt and pepper in a plastic bag. Dredge beef, shaking off excess flour. Brown in hot oil in a Dutch oven, in batches if necessary.

Place carrots and onions in 4-quart slow cooker; add browned beef.

In medium bowl combine cider vinegar, molasses, tomatoes, salt and pepper and ginger. (I used a bit of cider vinegar to deglaze the dutch oven). Pour some of the deglazed liquid in with the tomato mixture and pour over meat and vegetables.

Cook on Low 8 hours or on High 4 hours.

Add raisins and mushrooms and cook on High 1 hour longer. Serve over noodles or mashed potatoes.

Because this has no potatoes, it freezes very well. I'd like to double it next time, and use a 28-oz can tomatoes.

DH cut up a pork roast, added carrots, mushrooms, green peppers, potatoes, tomatoes, onions and celery.
Cooked them in the pressure cooker with some seasoned salt.
Delicious!!

Thanks Jasdip, going to save it for another time since I just threw a bunch of stuff in the crockpot this time.

Try this with boneless chicken breasts. I made it this morning before I went to work. It was ready when I got home and the house smelled wonderful.
Place 4 -6 skinless, boneless chicken breasts in the crock pot.
Then mix together:
1 large jar of your favorite salsa. I use a corn & black bean salsa.
4 tbsp. brown sugar
2 tbsp. Dijon mustard
A few drops of hot sauce to taste.
Pour over chicken.
Cook on low
Serve on top of brown rice.

This is so good! I sometimes add beans to mixture.
DH just loves it. The chicken is so tender and the sauce is yummy! I freeze any leftovers for DH to heat up when I work evenings.

Mush your chicken recipe sounds great! I have a chicken with salsa and cheese that I make in the oven that DH loves!

Where do you get corn and black bean salsa?

I knew you were around Niagara, I don't recall seeing a black bean salsa and that's why I asked. Thanks!

If any of you are near a Price Chopper, their brand (Coyote Joe's) of salsa include those with black beans and corn, in mild, medium and hot temps, and they are wonderful with Fritos Scoops :-)

I am slow-cookin' today....pork and sauerkraut. YUM.
