'I make wild rice soup, and I also make a wild and white rice salad.'

Both those dishes sound scrumptious!

LOL, Here I am! I'll gladly share my wild rice recipes!

Wild Rice Soup

6 tablespoons margarine or butter
2-3 tablespoons minced onion
1/2 cup flour
3 cups chicken broth
2 cups cooked wild rice
1/2 cup finely grated carrots
1 cup minced ham or leftover cooked chicken
3 tablespoons chopped slivered almonds (you can put them in the soup OR toast and top as a garnish)
/2 teaspoon salt
1 cup half and half
2 tablespoons dry sherry (I use vermouth)

In large saucepan, melt margarine; saute onion until tender. Blend in flour; gradually add broth. Cook, stirring constantly, until mixture comes to a boil; boil and stir 1 minute.

Stir in rice, carrots, ham, almonds and salt; simmer about 5 minutes. Blend in half and half and sherry; heat to serving temperature. Garnish with snipped parsley or chives.
Amount: 6 cups.

And here's the wild rice salad recipe

WILD RICE SALAD

1/4 tsp salt
3/4 cup brown rice, or brown basmati rice
1/2 cup wild rice
1 can sliced water chestnuts, drained
1 red pepper, diced
1 green pepper, diced
2 stalks celery, diced
1/2 cup raisins
1/2 cup diced red onion
1/2 cup toasted almonds
1/4 chopped fresh parsley

DRESSING:

1/3 cup orange juice
1 tbsp grated lemon rind
2 tbsp lemon juice
2 tbsp soy sauce
1 tbsp vegetable oil
1 large clove garlic, minced
1 tbsp rice vinegar
1/4 tsp salt

In small saucepan, bring 2 1/4 cups water and the salt to a boil. Add basmati and wild rice, reduce heat, cover and simmer 45 minutes. Transfer to a large bowl. Add water chestnuts, green and red peppers, celery, raisins, almonds and parsley. Toss.

In small bowl whisk dressing ingredients. Pour over salad and toss to coat. Serve at room temperature.

Yogurt Granola Bread: 1 1/2 c warm water 2 T yeast 1 c plain yogurt 1/2 c honey 1/4 c oil 2 lrg eggs 5-5 1/2 c unbleached flour 1 c granola 2 t salt 2 c. w w flour Proof yeast in warm water. Heat slightly the yogurt,honey,salt and oil. Add the eggs and proofed yeast. Make sure the mixture is not too warm before combining. Put 5 c unbleached and 2c ww flour in bowl. Add all of wet ingred. Stir w/ large spoon til holds together then remove from bowl and knead. May add rest of flour as needed. Rise in covered greased bowl approx 1 hr. Shape into 2-3 loaves and place in greased 8x4 pans. Rise 1 hr. bake at 350 for 30-40 min. ( I doubled the recipe made 6 loaves) Hungarian Pumpernickel Bread 2 T yeast 1/4 c warm water 1 1/2 tsp salt 2 c buttermilk 1/2 c molasses 2 T orange zest 2 t caraway seeds 3 c rye flour 2 1/2 - 3 1/2 c ww flour glaze: 1/4 c water boiled 5 min w/ 1 T molasses. cool Proof yeast in water. Boil for 1 min. the molasses,orange zest,caraway and salt. Cool and combine with the buttermilk and then the proofed yeast. Combine all of the rye flour and all but 1c of the ww flour in a bowl. Add all of the wet ingredients and stir well til holds together. Turn out and knead. May use rest of ww if needed. Rise in covered greased bowl about 1 hr til double. Shape into 2 round balls and rise approx 1 hr. Brush with glaze and bake at 350 for 50 min. Brush again with glaze after removing from oven. Jasdip....they look delicious! The chocolate chip cookies lose every year. The judges are looking for "unusual". A bar cut to look like a cookie is sort of cheating....but it's got an edginess to it maybe....I'm giving it a try. rhizo......I'm comfortably retired from the computer industry. This is my "something to do job" & medical insurance. I work in a call center. It's monotonous, so they do "something" almost every week to "entertain" us. We have young people working there, but the majority are people who were layed off and ended up, not by choice, getting a job there, out of their comfort zone. Lots of people with college degrees. The company will even pay for your college degree while working there. Kayjones....Megan is a chef(culinary degree), owns her own catering business on the side. She suggested making those. Here's what I have so far. I made carrot delights(in 1956 they won a cooking contest, my sisters favorite) and pecan bars made in a jelly roll pan, then cut into rounds with a biscuit cutter when cooled. Here are a couple of our family favorites: SLOW-COOKER ADOBO PORK SANDWICHES WITH ROSEMARY-GARLIC MAYONNAISE 2 cups canned chopped tomatoes, drained 1 Tblsp. brown sugar 1 Tblsp. chili powder 3 Tblsp. red wine vinegar 3 Tblsp. adobo sauce 1 Tblsp. honey 2 garlic cloves, chopped 4-1/2 lbs. pork shoulder 6 sandwich buns Rosemary-Garlic mayonnaise (recipe follows) Toppings: lettuce leaves, tomato slices Process first 7 ingredients in a blender or food processor until mixture is smooth. Cut pork in half, and place in a 5-quart slow cooker. Pour tomato mixture over pork. Cook on HIGH for 8 hours; remove from slow cooker. Cool slightly; shred and serve on buns with Rosemary-Garlic mayonnaise and desired toppings. Yield: 6 servings. Rosemary-Garlic Mayonnaise 1/2 cup mayonnaise 2 garlic cloves, minced 1 Tblsp. chopped fresh or dried rosemary 1 Tblsp. lemon juice 1/8 tsp. salt Stir together all ingredients. Chill. Yield: 1/2 cup. Recipe from Southern Living magazine, Sept. 2001 issue. CROCKPOT CHINESE PEPPER STEAK 1-1/2 lbs. steak (any cheap cut) 2 Tblsp. vegetable oil 1 clove garlic, minced 1/4 cup reduced-sodium soy sauce 1 tsp. sugar 1 cup bean sprouts 1 cup tomatoes, diced 2 green peppers, sliced in strips 1 Tblsp. cornstarch 2 Tblsp. water 1 large onion, cut in chunks Cut steak in strips. Brown steak in oil. Mix garlic, soy sauce, and sugar; pour over steak. Cook 6 hours on low in crockpot. Turn to high and add sprouts, tomatoes, green peppers, and onion. Dissolve cornstarch in water and add for thickening. Cover and cook an additional 30 minutes to 1 hour. Serve over hot cooked rice. LEIGH'S BAKED BEANS FOR CROCKPOT 1 lb. ground beef 1/2 lb. bacon (diced) 1 medium sweet onion (diced) 1 red bell pepper (diced) 1/3 cup white sugar 1/2 cup brown sugar 1/2 cup light corn syrup 3/4 cup ketchup 1/2 cup barbeque sauce 1 tsp. each: salt, pepper, chili powder 1 Tblsp. mustard 1 can each: pork and beans, pinto beans, navy beans, and white butter beans. Brown ground beef, bacon, onion, and pepper, drain. Put this in crockpot and add the rest of the ingredients. Cook all day on low heat.

In all due respect, MsMito, I don't find that answer snippy. Unless her tone of voice was off? But it's likely she doesn't have an exact recipe, and just cobbles those ingredients together until it looks right. I mean, it does sound kind of simple. The only real question in my mind, without having seen the dish, is the proportion of ham to potato. The words "can" and "pkg" are a bit nebulous. And I think I'd use pepper jack to kick it up a little. But, really, you shouldn't have much trouble replicating it.

I still have a bit of wild rice and the soup is calling me. That's on the menu for tomorrow.

The wild rice soup sounds so good ....however.....I think you could take the above soup recipe and leave out the wild rice and add any thing that your heart desired...

just make a list..

broc
asparagus
cauliflower
potato
peas
chard
spinach
onions
leeks
any vegetable that comes to mind
salmon
crab
get the picture that I am painting here

that is the base for any good creamy soup that you want to make...just add your own main ingredient and it will be fabulous and wonderful..
