Shrimp and cheese grits are the bestest!

I've made them mostly on the stove, by adding sharp cheddar cheese. I friend bakes them in the oven, but also adds a topping of grated sharp cheddar on top. They are oh soooo good. I never use a recipe because I make (or used to), them all the time. If you bake them, you put the cooked grits mixed with cheese and a little more milk to keep them from getting dry. Bake in a shallow pan. Most of mine is by "feels" right, and they always turn out OK.

This is one introduced to me in Virginia. I absolutely love it.

Garlic Cheese Grits ( mmm Delicious!)

1 C. quick cooking grits
1 egg
½ C milk
2 C grated sharp cheese
1-2 T melted butter
1 large clove garlic, finely chopped
½ tsp salt
1/2 C chopped sweet onion (optional)

Cook grits according to package instructions. Beat egg slightly, add milk and beat a little more. Add egg/milk mixture, cheese, onion, butter, salt and garlic to grits. Stir until cheese melts. Pour into greased casserole and bake 30 minutes ate 350Â, or until set.

Quantity is easily adjusted.

Here's how I did cheese grits for ex!
Fry him a couple patties of sausage.
On the top of the stove cook the grits in water until thickened. Throw in grated cheddar cheese, to your taste, salt and pepper.
THEN ex would maticulously cut up the sausage, put the grits on a plate, stir in the sausage, and top it with red eye gravy.

By THEN everyone else was done, while he ate and licked his platter clean.

Made this for a KT'er from NJ when she was staying with me for a KT gathering here. She had never had grits EVER.
I'm also taking this to my ladies potluck, tomorrow

Sausage and grits casserole --freezes well
SERVES 8 -10

2 cups water
1/2 teaspoon salt
1/2 cup quick-cooking grits
4 cups grated cheddar cheese
4 eggs, beaten
1 cup milk
1/2 teaspoon dried thyme ***optional but I like it
1/4 teaspoon garlic powder
2 lbs sausage, cooked, drained and crumbled (we use hot Jimmy Dean hot variety) ***I prefer Jimmy Dean premium
Directions
1Bring water and salt to boil. Stir in grits. Return to boil, reduce heat, then cook for 4 minutes.
2In large bowl combine grits and cheese and stir until cheese is melted.
3Stir in cold milk, thyme, and garlic powder. Mix well.
4Stir in eggs, mixing well.
5Stir in sausage.
6Pour in 13 X 9 inch pan. Cover and refrigerate overnight.
7Remove from refrigerator and let stand 15 minutes. Bake at 350 degrees for 50-55 minutes
