Just back from sister's dr. appt. so it's just a salami sandwich for me.

I have been craving my potato salad so I am making some and also smothered cabbage and onions and smoked sausage.

Tea Brack recipe first, then how to make homemade buttermilk. -Grainlady TEA BRACK (source: Irresistible Irish Breads - magazine article by Deborah Krasner) Brack, an Irish word for bread, is often used when referring to fruited mixtures. Tea Brack is a traditional tea bread which is an easy version of barm brack. Makes 1 loaf. 2 c. dark seedless raisins or dried currants (I use currants) 1-1/2 c. firmly packed dark-brown sugar 1-1/2 c. strong brewed tea, chilled 1/4 c. rum (I use 1/8 c.) 2 c. unsifted all-purpose flour 1-1/2 t. baking powder 1/2 t. ground cinnamon 1/2 t. ground nutmeg 1/2 t. salt 1 large egg, at room temperature, lightly beaten 1. Several hours or the night before baking, in large glass bowl, combine raisins/currants, brown sugar, tea, and rum. Cover bowl with plastic wrap and let sit overnight. 2. Heat oven to 325°F. Grease an 8-1/2x4-1/2-inch loaf pan and line with waxed paper. Grease waxed paper. 3. In medium-size bowl, stir together flour, baking powder, cinnamon, nutmeg, and salt. Slowly beat flour mixture and the egg into raisin mixture just until combined to form a batter. 4. Pour batter into greased loaf pan. Bake brack 1-1/2-hours until browned and cake tester inserted in center comes out clean. Cool in pan on wire rack 5-minutes. Turn brack out of pan and remove waxed paper. Cool brack completely on wire rack. Grainlady note: I use two 7-1/2x3-1/2-inch loaf pans or three 5-3/4x3-3/4-inch loaf pans and reduce the baking time accordingly. This is a very moist bread - more currants than bread, almost. I like the smaller pans so I can cut the bread into thin slices that don't fall apart. If you make it in a regular loaf pan, the slices tend to split and fall apart. -------------------------- I use a large amount of buttermilk when it comes to baking on St. Patrick's Day, so I make a homemade version of it using information from "Natural Meals In Minutes" by Rita Bingham. I use a non-instant powdered milk, but regular commercial milk works VERY well. Homemade Buttermilk To a 1-quart canning jar add 1/2 c. buttermilk and fill the jar with regular milk OR reconstituted powdered milk. Note: You can use commercial buttermilk as the starter, or a reconstituted liquid made from powdered buttermilk, or buttermilk from a former batch of homemade buttermilk - your choice. Stir well and cover (I use a plastic lid designed to use with canning jars). Let stand in a warm place (at least 80°F) until clabbered, about 12-18-hours. Stir until smooth. Refrigerate. Grainlady note: I keep mine in my oven with the light on. The temperature at the opposite side of the oven from the light is about 80°F. You can use homemade buttermilk from a previous to culture the milk for the next batch. Just make sure you use it within 2-weeks. Older buttermilk doesn't work as well as newer buttermilk. If you've ever used reconstituted powdered buttermilk, it's rather insipid, thin, and tasteless compared to commercial buttermilk. The homemade buttermilk is more like commercial buttermilk.

No flexibility here unless it is something really, really important. "Supper" is at 6pm sharp! I am very, very, good at getting the complete meal set out on the counter promptly at 6. We fill our plates at the counter and DH takes them to the table. I give him a 10 minute before the hour warning by saying, "you should be in the kitchen getting ready". You wouldn't believe the things he suddenly is 'compelled' to do on his way. He will check the tv listings, change into his evening loafing clothes, does his blood sugar, then may decide to update his blood sugar log with the last 2 weeks results. While filling his insulin syringe he will decide it's time to change to a new bottle and replenish the syringe supply from a back room closet. Gets side tracked while washing his hands and may decide that now is the time to clip his nails etc, etc. Once in the kitchen, now may be the time to refill the water jug, pick the label off an empty pill bottle, or wash a pot or two. Meanwhile, I have filled my plate and am sitting at the table waiting for him to bring my now barely warm food. Drives me crazy!

I'd probably be staying at home any way ... but the car is in the vehicle hosp. so, as it's difficult to hitch-hike at night, I figure I need either to stay home, or arrange transportation with someone. More importantly - don't have an invitation to a party. I've thought that it would be a good idea to emulate the little New Year babe that arrives without much clothing ... as I'm not too enthusiastic about emulating the old gray long-haired and -bearded guy with the flowing robes and scythe that looks to be about ready to cash in his chips. And as I don't need to depend on Depends (not yet) ... I thought that I might celebrate in my original attire ... nuthin'. Trouble with that is ... that's it's usually about 60 degrees in here ... so I'd be in for some teeth chattering (if I had any to speak of). So I guess that I'll just stay with the four or five (sometimes six) layers on top and three or four on the lower parts. Maybe dress up a bit, for currently I'm wearing a quilted jacket, both of whose arms had had the outside cloth multipley ripped, so that when I visited the neighbour farmer a few weeks ago, their son in law notified me, with a serious expression, that he wondered whether I was aware that my jacket had a hole in the elbow ... to which I replied, just as seriously, straight-faced, "Which one?". I've since repaired all of the rips, on both arms ... and was surprised at how much of the task that I was able to do on the sewing machine. Even if it were to be just jammies - more "Bbr-r-r - r - r" time, if lacking a thick blanket under which to snuggle. The friend who drove me on some errands, then home, yesterday said that they have a party at home with another long-term-friend couple from 60 miles away, as they've done for many years ... and then the friends sleep over, to avoid driving while under the influence. This year it's their turn to host, so they were planning and working on the goodies. He's a distant relative, and his wife, in whose campaign I helped quite a bit when she ran for Federal Parliament a few years ago, is now on the (elected) Executive Committee of the city. May you all have a joyous time to conclude the old year ... and usher in the new. ole joyful P.S. If you're to be away from home, and imbibing ... please arrange for a designated driver to deliver you home: we all prefer not to hear of a friend being dead or dismembered to start the new year, right? o j

Sounds like it could be thyroid. On the other hand, I have my thyroid checked every six months now that I take thyroid supplements, (it's fine) and my immune system was crap this winter even though I did every thing imaginable. As for herbs and vitamins, be careful. You may be taking a placebo, very difficult to determine if the active ingredient in the supplement is actually present. Most of the time I doubt it. Would be best to grow your own, but even then, chemical composition varies. With vitamins, it is whether your body can even absorb what you are taking, many things cancel each other out, like asprin/acetominophin and vit. C, for just one example. Calcium and iron for another. Same with foods, vitamin content can drop dramatically when they've bee sitting around or upon cutting them open, etc. Other than what has been mentioned, (hydration, CLEAN humidifier, hand washing, etc.) with the cautionary note about "caveat emptor" (know your sources, freshness, interactions, etc.) another supplement I have had good luck with is lysine. Lastly, lots of sleep, a diet RICH in whole foods, lots of fruits and vegetables, and SOUP. I don't know if soup makes the vitamins in the ingredients extra absorbable or what, but soup along with other hot liquids helped me finally expel the last of the flu lingering in my lungs. I got a flu shot but it didn't stop the flu from laying me low for two months. Vit. D helps too during the low sunshine times, but it is tricky to get it absorbed. Stay away from alcohol.

I'm really tired tonight. It was a really long day on the golf course today. This weekend is the men's member guest and they were using two of the courses so everyone else played on the third course. It took about 5 1/2 hours to play and if that wasn't tiring enough, I had to run some errands afterwards. I left here at 9:30 this morning and didn't get home until almost 6:00. I think I just might bake myself a sweet potato. Heard DH in the kitchen so I guess he hit the freezer for something.

A favorite : a big salad with all kinds of greens and veggies, hard boiled egg....topped with slices of grilled steak. I'll make some thousand island dressing and pumpernickle croutons to go with it.

georgysmom, I beat you to the sweet potato. I had that w/leftover chicken and Stovetop stuffing. Added raw carrots and celery as the vegetable.

Thanks for the compliment, georgysmom, but I still eat way too much and still overdo on the junk foods. I need to get back on the wagon the way I used to be, instead of part-time.

As usual ate at Panera like I have for the past six or more years every Friday night. Squash soup, tomato mozzarella panini, apple, and hazelnut coffee. Ate with daughter and her family.

We had pan seared scallops with carrots, the last of the fresh tomatoes and some fingerling potatoes. Followed that up with a cannoli from a good Italian bakery.

I've been cooking dinners for us with limited supplies @ our rental house, so we don't have to interupt our renovation work. :0) I made spaghetti & meat balls......didn't have any soda crackers so I crushed cheese nips & added ranch dressing to put in the meatballs....."interesting" combination and NOT recommended. LOL

Hubby had homemade fried rice and deli fried chicken.
I had the rice and a salad with leftover grilled chicken on top.

I made chicken cacciatore last night with new sauce from Krogers... really yummy. I added a whole chopped onion and whole red bell pepper and noodles. let it all cook down with the chicken breast meat. It was very very tasty. Had some bread to go with it and tomatoes caprese.... melted. yummy!

We had hot wings, French fries, baked beans with the usual celery, carrots on the side. Blue cheese dressing and buttermilk ranch dressing for the sides. The dressings were homemade by little ol' me. First time and they were a hit. No left overs except for fries and little bbeans.

we hit the local chicken place,.I had the mi cherry salad with grilled chicken, and dh had fish...I used to get the rib dinner but at $15 for 9-12 ribs (baby back) I refuse to pay that...
