What's for dinner this gorgeous Sunday?

An absolutely, incredibly gorgeous day today.

We discovered eggplant this year and we love it. We often grill it, for sandwiches with grilled peppers, onions, tomatoes and cheese on a pannini.

Tonight I breaded and fried it, to have with our roast beef and mashed potatoes, gravy and some of my relish.

It's been beautiful here in Ohio too. I love it.

I've never tried eggplant, so have some for me. Your entire meal would be great.

I made meatballs out of lean ground turkey, cooked them, then poured a jar of alfredo sauce over them and simmered them for about half an hour. I had them with brown rice, and a side of creamed corn. Finishing touch was watermelon.

mmm...eggplant! YUM! SInce I'm on day 6 of a 10 day detox program, I am having baked cod and some roasted cauliflower...along with my "shake" (gag)!

Glenda this is the recipe we like and it's so easy. 1 (8 oz.) pkg. medium egg noodles 1 (8 oz.) carton sour cream 1 (10 oz.)can cream of mushroom soup, undiluted 1 tsp. dried dillweed 1/4 c. sliced green onion 1/4 c. sliced ripe olives (I don't use them) 1 c. (4 oz.) shredded Cheddar cheese, shredded 1 lb. frozen peeled and deveined shrimp, thawed (could use diced up cooked chicken) Cook noodles according to package directions; drain and set aside. Combine sour cream, soup and dill in a large bowl, mixing well. Add onion, olives, 1/2 the cheese and shrimp; stir well. Stir in noodles. Spoon mixture into a lightly greased shallow 2-quart casserole. Cover and bake at 350 for 30 minutes. Uncover, sprinkle with remaining cheese and bake an additional 5 minutes or until the cheese melts. Serves 6-8.

Nicole, I don't think garlic in a jar comes even close to fresh. Not by a long shot! It makes a difference in anything you're fixing that calls for garlic. It sure doesn't smell the same when cooking, does it? Isn't it nice that something so simple makes your husband so happy? Jasdip, I will make those potatoes soon. I love oven roasted potatoes and I love roasted garlic......how could the combination miss? Susan, I sure nuke left over burgers. They will lose a lot of moisture and fat, so I always put a paper towel under them before the reheat. Monica, thanks for letting us know where you got your pieroges. It still bothers me that I can't remember where I've had them. Maybe Michigan...I lived there for a few years.

You've had a rough time and I'm happy to hear that you were pampered. :-) Sue, what a fun day! I love chickens. I had a friend some time ago who had several, one of whom (Martha) loved him to pieces. She would come roaring across the yard whenever she saw him, wanting to cuddle and be carried around. Ooh, ellendi! That's my kind of place! The food, I mean. Too bad about the rotten service, what a shame. Terri, I'm happy that you had all of your family this weekend. I love good ribs! I've got some in the freezer that I'll probably fix this week. Yep. Packages of dry Italian, Ranch, Onion Soup mix and brown gravy mix. OMG! I am usually guilty of over-salting because the old taste buds are giving out, but I couldn't even eat this. Hubby poured it over hamburger buns and ate it like an open face roast beef sandwich. With lots of unsweetened green iced tea! *shudders*

we went to Costco and picked up their version of mac and cheese, and glad I did! feel like I'm getting babysittingitis...I love my grands but even they can be germy...and just back in daycare...

We had my sister's homemade tender and delicious perogies with sour cream and caramelized onions. A Haagen-Dazs ice cream bar for dessert. I don't want to know how many calories all that is!

It was gorgeous here, too. Not too hot nor humid. A good evening to grill some chicken and a mess o veggies.

Well it started pouring rain the minute we left the house to go shopping and get groceries. So we skipped the groceries will go another day.

We had chicken with fried okra and some very good watermelon.
