What's for dinner this gorgeous Sunday?

An absolutely, incredibly gorgeous day today.

We discovered eggplant this year and we love it. We often grill it, for sandwiches with grilled peppers, onions, tomatoes and cheese on a pannini.

Tonight I breaded and fried it, to have with our roast beef and mashed potatoes, gravy and some of my relish.

It's been beautiful here in Ohio too. I love it.

I've never tried eggplant, so have some for me. Your entire meal would be great.

I made meatballs out of lean ground turkey, cooked them, then poured a jar of alfredo sauce over them and simmered them for about half an hour. I had them with brown rice, and a side of creamed corn. Finishing touch was watermelon.

mmm...eggplant! YUM! SInce I'm on day 6 of a 10 day detox program, I am having baked cod and some roasted cauliflower...along with my "shake" (gag)!

It was gorgeous here today so we hit the road to see what we could get into, hit a few sales, got some goodies, then decided to go to Landrys seafood on the waterway at the Woodlands. OMG had one of the best meals in a long time, we both had the broiled platter, with steamed veggies and a wonderful rice mix. They are pricy but oh so worth it occasionally. We have their VIP membership card which is a great deal. We both said we needed a nap after that. Marilyn looking forward to seeing y'all Monday night.

Nicole, I don't think garlic in a jar comes even close to fresh. Not by a long shot! It makes a difference in anything you're fixing that calls for garlic. It sure doesn't smell the same when cooking, does it? Isn't it nice that something so simple makes your husband so happy? Jasdip, I will make those potatoes soon. I love oven roasted potatoes and I love roasted garlic......how could the combination miss? Susan, I sure nuke left over burgers. They will lose a lot of moisture and fat, so I always put a paper towel under them before the reheat. Monica, thanks for letting us know where you got your pieroges. It still bothers me that I can't remember where I've had them. Maybe Michigan...I lived there for a few years.

Monica, Happy Birthday to your DH! It was sweet that you made him a nice feast for his birthday. Bet you don't have leftovers!! Glenda, sometimes I get tired of healthy and then watch out! I'd just love what you had for lunch. Love fried oysters. Jasdip, I imagine your house smells wonderfully like fresh bread. Yum! I just love having the fresh summer vegetables. Our growing season is about over in Florida. I only had one decent tomato. Hmmph! Georgysmom, I hope you were celebrating a tournament win??? Lunch sounds delicious, but I'd have to go for the pie. Since Mary mentioned making that chocolate pie, I've been wanting pie. Sweet or savory. Guess I just would like to have the crust :-) Mary, we don't seem to have many hummingbirds around here. I put out feeders the first year we were here and just changed the sugar water every few days 'til I got the message. Sure hate to hear your weather report, since we'll be driving through TN Wednesday. I'll wave as we go by!! Raven, fresh tomatoes AND strawberries. You are a lucky girl! Jeaninwa, I swear your post wasn't there when I responded earlier. I don't know what's going on with my computer (or this site??). Your dinner sounds delicious and colorful. Carol, aren't husbands a wonderful gauge of whether we should make a recipe again or not? Sounds like RR's chicken dish was a big hit at your house. Enjoy your Chinese dinner. Nita, you are seeing so many wonderful places and people. I can't tell you how jealous I am that you're meeting in London with all my favorite people. Give them all a big "Nita hug" for me. Kittiesmom, I'm with you on the avocado and cilantro, too. They can only make things taste better. Pammyfay, you're my kind of girl--eat dessert first! I'm trying not to buy any meat/fish until after our trip next month, but that salmon sure sounds good. Rhizo, we had a rotissiere but it was so big I didn't have anyplace to store it. I don't remember if it was a Showtime but it sure made a good chicken--also hot dogs. It worked by rotating around and around.

we went to Costco and picked up their version of mac and cheese, and glad I did! feel like I'm getting babysittingitis...I love my grands but even they can be germy...and just back in daycare...

We had my sister's homemade tender and delicious perogies with sour cream and caramelized onions. A Haagen-Dazs ice cream bar for dessert. I don't want to know how many calories all that is!

It was gorgeous here, too. Not too hot nor humid. A good evening to grill some chicken and a mess o veggies.

Well it started pouring rain the minute we left the house to go shopping and get groceries. So we skipped the groceries will go another day.

We had chicken with fried okra and some very good watermelon.
