"We always cooked our fresh green beans in a pot with a pork roast and potatoes.(cooked in water that made a broth)"

I have about a 5 lb pork shoulder thawed and another half a gallon of green beans ..

Please tell me how you cook yours? Brown the roast? Cover with water? Seasonings? How long do you cook? When do you add the beans and taters?

wondering if she puts her gb in the roaster with the roast and potatoes? I always have some juice from the meat itself...5lb i'd cook at 325 for 2 hours? ( at least that's what I use for boneless pork loin) no added water...

since I season the meat with Lawry salt, I wouldn't season veggies with much more...

I put my roast in for the correct amount of time MINUS 30 minutes. Then, I put the potatoes in one corner of the pan and my green beans and sliced onions in the other corner and let them steam for the remaining 30 minutes.

If you put them all together, at the beginning, you will have stew! I don't add any more seasonings then what I added from the start of the roast.

Freezing is the preservation method of choice for ease (drying takes a LONG time) and best results when 'picked green'. Oh. I thought different vegies needed different ratios of salt and water, for safety reasons. Is that all wrong? Different veggies may benefit flavor-wise from different brine levels but that is a matter of taste. As long as you use one of the recommended salt brine levels - see salt brine charts referenced above in Joy of Pickling (JOP) for example - then you can safely ferment any vegetable or mixture of vegetables. This, of course, assumes you use the proper fermenting techniques too - enough brine to cover the amount of vegetables, time, air temps, cover, skimming, etc. Dave PS: Randy - feel free to start a new thread. I snap them into the size I want and water blanch them for about 3 minutes, cool in ice water for about the same time, dry, and put them into freezer bags. Sometimes I use my vacuum sealer, but usually not with beans... it just depends on how soon I think I'll be using them. You may want to cross-post this question into the Harvest forum. The regulars who post there are much more experienced than I with storing veggies. Just post the same question, and include a few lines about freezing/canning or whatever else. :-)

My mom used to use a cottage ham, fresh green beans,either whole or broken in two or three piece with new potatoes covered with water salt and pepper to taste,cooked on top of the stove. As kids we loved them. So tasty and yummy on a cold winter day. Very simple.

We put the pork roast in the pot with water covering it, (and usually have to add to the water while cooking)

When the roast is about half done put the beans and potatoes (cut in half)
