Barbequed Salmon Mediteranean

4 Fillets 6-8 oz Salmon, skin on or skin off

Marinade:

2 tbsp Olive Oil

2 tbsp Fresh Lemon Juice

2 tbsp Chopped fresh rosemary

Freshly ground pepper, to taste

Salt to taste

Directions:

1. Combine all ingredients, except salt, to make marinade.

2. Create a flat, rectangular "box" with foil, big enough to hold all pieces of salmon. Place salmon on foil, skin-side down. If skin has been removed, spread a couple of teaspoons of the marinade onto the foil, then place salmon on top.

3. Pour marinade evenly over all pieces of salmon. Marinate for 15 minutes or up to 3 hours (ideally, 1 hour).

4. When ready to barbeque, lightly sprinkle salmon with salt (sea salt is very good).

5. Place foil and salmon, on barbeque, and cook at 375F for approximately 12 minutes. Test for doneness - salmon should just flake when pressed with a fork.

Serve with tossed salad and baby potatoes or rice  always a great dish!
