Do you take a bone in ham out of the fridge

and let it come to room temperature before putting it in the oven?

When I saw your title, I thought, "well ... if you don't take it out of the fridge ... it'll probably look rather deteriorated after a couple of months".

But then ... most likely less so than you would, if you were to inhabit the fridge for a couple of months.

If it's smoked and you're heating it, I'd probably give it 30 minutes and then warm it gently in a low temp oven.

If uncooked, maybe 60-90 minutes to let the chill escape.

I think you're an accomplished cook, so you know it's just a matter of cooking time and heat penetration. If you're cooking something to 150 degrees or more, the difference between 45 degrees and 65 degrees as the starting point probably doesn't matter much.

It's not just pork that's fatty. Beef and chicken are, too. A little fat is essential for good flavor. Don't give up on hocks, though - they have the very best flavor for beans and it's the flavor we're used to from pork & beans, baked beans, bean soups, etc. I always think ahead for soups and stews so I can cool them as Linda and woodie suggest and remove the solidified fat from the top. If you have to make and serve in one day, at least let it settle a long time, skim it, then float slices of bread in the fat and remove. Not nearly as effective, but very helpful.

I love bean and split pea soup, and I also try to squeeze a pot of green bean soup out of the ham bone broth. There is a German restaurant we frequent when we are in the area (an hour from here), and I always have to have the green bean soup and try to make something similar at home. I don't have a recipe, it's by-guess and by-golly. I sprouted Great Northern beans for two days and made soup with them and ham hocks yesterday. With the cold weather moving in, it's as Martha would say, "a good thing...." :-) I also like to make a Christie Brinkley recipe for "Bean Soup" which includes navy beans, cabbage, bay leaf, potatoes, carrots, celery. It's a vegetarian recipe, but it's great with a ham bone or ham hocks added to the recipe. -Grainlady

Hubs made AMAZING navy bean soup in the crockpot from a ham bone yesterday. Basics were onion, carrot, celery. Water to cover. Seasonings were 2 bay leaves, (and then it gets a little murky because I had to leave for work and hubs is very secretive about his recipes and techniques). As far as I can tell, he added garlic, thyme, and Mrs. Dash Garlic and Herb seasoning. Along with our secret ingredient for the best soups, "Better Than Bouillon" vegetable soup base. It's an amazing base for soups and we like it much better than unsalted chicken broth which is the other product we use. The only thing stopping us from using it more is we try to do as low salt as possible. Hubs also said he added a bit more of our leftover ham to the mix than just what was on the bone.

I've never noticed a fat thing with using a ham bone in soup... but I do like to heat up a big marrow bone like that to get it release it's goodness into the water. It's not only what might be on the outside of the bone- it's also giving time to unlock what's in the bone and the sometimes not so yum rendered with simmering a bone. It might also be the split peas I use- mostly calling for an hour or so of cooking. Not enough time for the bone to give it's best. But a little bit of pre simmer to let the bone bloom.. mmm.

mine usually goes from fridge to a low temp (not more then 325 )to warm....

I usually bring roasts, steaks, turkey to about room temp before cooking. Never thought about ham though.
Just popped that 10 lb baby in the oven at 275. Dinner will be about 4 PST. Serving with hubby's favorite - fresh green beans and baby red taters, cooked in bacon fat, garlic and onions and some vegetable stock.
I had a dream about this ham last night. Woke up and could have sworn I smelled it cooking. I must be looking forward to this meal! LOL

When my kids still lived at home, I didn't want to take time cooking on Christmas morning. So I stuck a ham in the oven when I first got up. I would have made my potato salad the day ahead. Then we'd take a break from the morning activities for me to stick the baked beans in beside it. I can still remember how good the house smelled by noon.
