My two favorite preps with eggplant are :

Eggplant parmigiana. Make sure to follow a recipe that cooks the eggplant thoroughly first before it gets layered lasagna style into a baking dish with tomato sauce and cheese.

Baba ghanoush. Google it, you'll find many recipes. It's always better the next day, so make it in advance. It's heavenly. I prefer recipes that use a few drops of liquid smoke, it approximates the taste that results when the eggplant is cooked over an open fire.

Of the two, I think baba ghanoush is easier to make. Other than waiting for the eggplant to roast in the oven and then cool, the rest of it takes about 5 minutes.

Fried eggplant:

2 tablespoons (probably more) canola oil, olive oil, whatever oil you prefer
1 large eggplant, peeled and sliced into rounds
3 eggs, beaten
2 cups dry bread crumbs

Directions:

Heat oil in a large skillet over medium-high heat. Dip eggplant slices in egg, then in crumbs, and place in hot oil. Fry 2 to 3 minutes on each side, or until golden brown. Drain on paper towels. Salt and pepper to taste.

I love baba ghanoush.

I love batter fried eggplant and sautéed with onions. I have never had it any way that I didn't like it. It is a great veggie!

We just tried endggplant recently as well. We like it sliced into rounds or lengthwise and grilled. We use it as a side veggie, but love it in grilled vegetable sandwiches.

Peel some strips from it as the skin is tough to chew.

I do just as dulithinbloom does, but I peel mine and sprinkle with salt first. Let the salt sit a few minutes before dipping in egg then panko and frying. Then, I sprinkle it with Monterey jack cheese and broil. YUM>

It's also good if you bake it till it's soft. scoop it out and sprinkle with salt/pepper. It's great on crackers! YUM I love eggplant!

Great roasted on the grill too!

Cut the eggplant in half lengthwise. Score the cut sides of each half in a crisscross pattern deeply but not through the outer skin. Mix breadcrumbs, diced garlic, parsley, parm cheese, salt and pepper and force the mixture between the cuts in the eggplant. Place on baking sheet, drizzle with olive oil and add tomato (sauce, fresh diced or your choice) and bake until soft. It really is quick and so good. Satine

Ratatouille

I just saw a recipe on pinterest for enchilada stuffed eggplant and it looks wonderful! I may have to go back and find that one.
Just try going to pinterest and searching for eggplant recipes you will find an abundance.

My method of frying breaded eggplant like the two above, except, after the eggplant is pealed and sliced (about 1/4" thick), As per my grandmother, I sprinkle some salt on each side of the slices, and cover them with a dinner plate and an iron on top (not plugged in, of course). Grandmom always said you had to get some of the moisture out for frying, or they get soggy.

PS. stewed tomatoes go real good with fried egg plant.

Ratatouille! I forgot all about that Sleeper! I've always wanted to make it, but I never have.

My favorite way is also fried. I am not crazy about it any other way.

I did find that eggplant doesn't keep very well. I had them in the frig and used 2. The 3rd got all soft and squishy, so I cut it up for my little composting worm buddies.

Love eggplant parmesan. But the way I grew up eating it is fried with a little oil and eaten dipped in soy sauce and probably my favorite way. My mom used to slice it with the skin on it. I cut mine off before I fry it.
