Dear Mr./Ms. Deli Worker

I know you make a lot of different things and can't be expected to have the perfect recipe for everything but there's one thing I have yet to figure out.

One of the simplest and most common deli items is potato salad. I know people like different kinds but how about a request from someone who doesn't claim to be a three-star Michelin chef but can cook and get some compliments occasionally.

Has it ever occurred to you that *some* of us like to have potato salad with COOKED potatoes? I like crunch in the potato salad, but not crunchy potatoes. And I realize the fashionable thing today is to use red potatoes but that compounds the problem. Red potatoes need to be cooked more. Why not use the tried and true russets? How about trying Yukon Golds? I've learned to avoid deli potato salad but occasionally I weaken and think they must have learned something by NOW! Sadly you continue to prove me wrong.

It's ironic how you can cook the macaroni in the pasta salads PERFECTLY al dente but can't tell a crunchy potato. Or is it fashionable now to have crunch in potatoes destined for salads? Some of your recipe secrets must be getting out to the restaurants too since I've had more than one crunchy baked potato over the years too.

I guess it's down to if you can do better yourself than do it so I'll pick up some russets or Yukes and do it myself.

I wonder what it would cost to have Gordon Ramsay go into these places, slam the salad bowl on the floor and scream THEY"RE NOT COOKED!!!!, then kick a wastebasket and shout YOU HAVE TO TASTE THINGS!!!! I would also suggest he look in their walk ins but I don't think I want to see what their coolers and freezers look like!
