Alert! Alert! Jiffy Cake Mix

I looked for Jiffy Mixes at Kroger. They had the Corn Bread but not the cake mix.

Today I was at Food Lion. They had the CB, and the clerk told me the cake mix is no longer available.

They had 7 boxes of it, marked down, and I got 2 of them. The use by date is 9/19/10, so it is fresh, but there won't be any more.

Hope to make the recipe tomorrow.

You're kidding? Which cake mix did you get? I read that recipe and meant to go back and print if off. Dog gone it..I just got home from Walmart and didn't think to check!

I won't presume to advise that in every climate, soil and situation it makes little difference. I will state that in my zones 9 and 10 gardens, the main difference fresh over composted made was temporary chlorosis and some vegetative centers. Both of which rather quickly dissipated. I watered copiously prior to applying the manure. I kept it just under the drip zone (away from the shanks, trunks and crowns of the plants) and over the rest of the entire surface of the beds. I watered copiously afterwards. The drainage was good in most of that garden, with a few spots where the soil was a bit too "loving". With that heat, two to three inches of horse manure, kept regularly moist with overhead, oscillating sprinklers, became a thin layer of earthworm castings like material in three months. There were spots I had to make the original planting holes with a large power auger. After keeping it mulched with horse manure for a summer, I could sink my shovel in to the handle digging holes. Soil which initially resisted water (it rolled right off) became easy to water. It just soaked right in. I witnessed others attempting to duplicate those efforts along the coast where the temps were many degrees lower and the humidity many percentage points higher. Kept regularly wet, it didn't "digest" as it did in the valley heat. I had no mushrooms or other fungal fruiting bodies. In the "Perma Fog", there were many mushrooms and the manure took months longer to disappear. A much thinner layer performed much better in those conditions. Kim

Brian . My trees just arrived also. They are so cute. Here they are. I watered them and put them in the shade. Not sure if I should repot them right away or wait until they recover from the shock of travelling. It is exciting for sure . It looks like they were grafted only 3 months ago and look delicate. Dave did a good job of packing them . My new little babies. So sweet! I can understand your not wanting to return to work . I remember that same feeling and my husband still works and he feels the same as you. He hates to go back to work after vacation and on Mondays. Retirement is great,but you wonder how you used to find time to do everything. It is a gorgeous day here as well. My trees have been fed this morning bad pampered. Now do you really think your prime rib is better than mine. I think not! LOL,! You know those are pretty strong words Brian. You enjoy your dinner tonight with your family. Sounds like fun. We are having BBQ hamburgers tonight and will sit on the patio and enjoy the evening. The milk with the fresh bread crumbs really make the hamburger moist. I thought it was odd at first but only do them that way now. Steve we have a problem in Windsor with raccoons invading backyards. The city has a program to relocate them. Maybe they relocate them to you. Haaaaaa. Trace. What a nice greenhouse. You must be as excited as I am to have one this winter. It looks like you are in a zone similar in climate to mine. Will you insulate with bubble wrap or solar blanket? I am having fruit drop from my lime. As Brian says the greenhouse will prevent that. Mike. How exciting for you to be going on vacation. William I have looked at the fertilizers and still don't know what to get. I have tomato tone and various miracle grows and osmocote. This tablespoon of lime is to 5 cans of the shrub soil and 2 cans of perlite - what size is the can? My lime is pelleted; do you think that will work? What is on the sack of your lime; some of it is dolomite with Mg and some just Calcium Carbonate lime. When you talked about your mix before I looked at the shrub mix at Lowe's and thought with those ingredients I could just buy Miracle Grow, but I was thinking of my many pots of stuff I have here in summer. The little dab of potting mix it takes to grow starts is well worth the effort and expense. Something I used this spring was bad and I think it was the jiffy mix. Some of my plants are doing very well and some are not. In that bitter weather I had the jiffy mix inside and my real potting mix outside. I think I potted some stuff in just the Jiffy Mix and I think those are the duds. You were smart to do an experiment and note the difference. I rely too much on my bad memory plus when I want to plant something I want to plant it now.

I had a German shepherd/boxer mix dog as a kid. She could and did eat anything. My first from-scratch cake was a devils food with a thick, rich chocolate frosting. We put it on the coffee table with plates etc., as we'd invited friends to come for cake and coffee. I was so proud of that cake. It never occurred to us that LuLu would bother it, she was very good about not taking food etc unless we gave it to her. I walked out into the living room just in time to see her oh-so-casually saunter by the coffee table...and nibble off the cake with the side of her mouth as she passed. She must have been making passes for a while, because she'd managed to eat about 1/4 of the cake. She used to pick all the low hanging pears from our tree, she'd circle the tree staring up until she found the ripest one before jumping up to grab it. She ate a lot of pears, they never seemed to bother her. The only thing she ever ate that I recall making her sick was the time she got into the coffee can full of bacon fat we kept under the stove. It was a 10 pound can, and it was getting pretty full, I noticed as I was draining that morning's pan. When I came home from school, there were these odd little pools of some light brownish-grey stuff everywhere and the house reeked of bacon. LuLu was nowhere to be found (she often hid when she knew she'd done something wrong). In the kitchen, the cabinet under the stove was open, and the coffee can only had a few inches of fat left in it. LuLu was eventually found, huddling in the corner of the yard looking pretty miserable...still retching once in a while. To the day she died, some 15 years later, she wouldn't touch a piece of bacon. If you offered her one, she'd back away from you, whites of her eyes showing!

I'm still confused about that recipe. Is it a jiffy size cake mix or a regular? One post said one thing, and one post said another. Of course, maybe I just misunderstood ;)

The jiffy cake mix makes a 1 layer cake, so a regular cake mix would equal 2 jiffy box mixes.

For a while they were selling small boxes of cake mix that only made one layer (or 12 cupcakes). Those are probably as hard to find as the Jiffy Cake Mix though. I thought the smaller boxes were a good idea since who wants to make 24 cupcakes for just your family but I don't think it caught on. I still have a few boxes of the cake mix (and brownies too) that I found in CVS. I think they were Duncan Hines but I'm not sure.

I would just divide and use half of a regular yellow cake mix and save the rest for later. Brand name cake mixes are always on sale, it seems. Today it would end up costing about 50 cents for the cake part of the recipe since Betty Crocker cake mixes are on sale for a dollar each.

Just an FYI: I have sucessfully frozen cake mixes. I just throw the box in the freezer and let come to room temp before mixing.

Juellie, There has been a little confusion about the recipe.

In the earlier thread, Kayjones said Glenda's was the right one.

Glenda's:
GREAT EASY CORNBREAD

1 (8 1/2 oz.) pkg. Jiffy corn muffin mix
2 (8 1/2 oz.) pkgs. Jiffy yellow cake mix, or 1 pkg. reg. yellow cake mix

Mix each package as directed on box. You can do this all at once. Pour into a 9 x 13 pan. Bake at 350 degrees until done and golden brown. Great with butter and honey!

So I will be using that one. Hope it works!

Bump, that Jiffy site is a keeper. Some good sounding easy recipes there. TFS. The store locator said the store I went to has the cake mix. Guess they will until somebody buys those last 5 boxes. Maybe it will be available in some areas, but not all. Depends on how it sells I guess. Oh, I got Yellow cake mix.

The original recipe she posted had a t. of vanilla in it, too. I think it'll be good either way.

Here's my recipe again:

Jo's (Tippins Restaurant) Cornbread

One box of Jiffy cornbread mix
One box of JIFFY yellow cake mix
1 teaspoon good vanilla

Mix both boxes according to package directions, add the vanilla and bake for 45 minutes to 1 hour at 350 degrees - do a toothpick test at 45 minutes - it might not take a full hour in your oven.

This cornbread is smooth and sweet - good with ham and beans, soup, salad - it can be frosted with icing for a not-so-sweet cake!!! I love it with honey butter and just honey, or a good jam - it's really comfort food.

I have made this for all potluck occasions, visits to shut-ins and for my family - I always am requested to bring it or provide the 'recipe'.
