Alert! Alert! Jiffy Cake Mix

I looked for Jiffy Mixes at Kroger. They had the Corn Bread but not the cake mix.

Today I was at Food Lion. They had the CB, and the clerk told me the cake mix is no longer available.

They had 7 boxes of it, marked down, and I got 2 of them. The use by date is 9/19/10, so it is fresh, but there won't be any more.

Hope to make the recipe tomorrow.

You're kidding? Which cake mix did you get? I read that recipe and meant to go back and print if off. Dog gone it..I just got home from Walmart and didn't think to check!

I won't presume to advise that in every climate, soil and situation it makes little difference. I will state that in my zones 9 and 10 gardens, the main difference fresh over composted made was temporary chlorosis and some vegetative centers. Both of which rather quickly dissipated. I watered copiously prior to applying the manure. I kept it just under the drip zone (away from the shanks, trunks and crowns of the plants) and over the rest of the entire surface of the beds. I watered copiously afterwards. The drainage was good in most of that garden, with a few spots where the soil was a bit too "loving". With that heat, two to three inches of horse manure, kept regularly moist with overhead, oscillating sprinklers, became a thin layer of earthworm castings like material in three months. There were spots I had to make the original planting holes with a large power auger. After keeping it mulched with horse manure for a summer, I could sink my shovel in to the handle digging holes. Soil which initially resisted water (it rolled right off) became easy to water. It just soaked right in. I witnessed others attempting to duplicate those efforts along the coast where the temps were many degrees lower and the humidity many percentage points higher. Kept regularly wet, it didn't "digest" as it did in the valley heat. I had no mushrooms or other fungal fruiting bodies. In the "Perma Fog", there were many mushrooms and the manure took months longer to disappear. A much thinner layer performed much better in those conditions. Kim

Sounds to me like the oven is ok and it's just a question of adjustments. I have Wilton pans and they don't cause a problem. Without seeing photos I couldn't comment further on the issues around the bread or the cake layers. I'll give you a rundown of how I use mine and what I do/don't do. Perhaps trailrunner and loves2cook4six also will chime in here as they are both bakers and have the same oven. All this said with the caveat that mine is an older vintage, non-self-cleaning and has the grease screen in back that needs to be removed for the baking modes to work properly. FWIW I find the masterchef settings useless and guaranteed to overcook anything. I ignore them. I preheat 30 minutes. With stone, 45-60 mins. Convection Bake: For single rack I use 2nd rung. For cakes (including angel food), cupcakes any delicate pastry (meringue) and any time I'm doing multiple racks. Have done 3 racks of cookies and 6 pies (which took a bit longer) with success. If not doing multiple racks, I remove all but rack I'm using and remove the drip pan. I don't ever leave a rack in over anything I'm baking. Also sweet or higher-fat bread, anything with a soft crust. Have found this to be even, gentle heat. Intensive: Pies, crusty yeast breads, cobblers -- anything that needs bottom action or a heat boost. Pizzas, naan, calzone with the stone on rack using bottom rung. Heaviest batter breads that might not cook through easily. Surround: I don't use this much because it essentially broils and bakes at the same time. I adjust rack low to high depending on how much browning is needed. Good for things like Shepherd's pie, baked ziti, gratins, casseroles, stuff with toppings like cheese, bechamel or streusel. Bake: I think of this as dumb-bake. My setting is 15 degrees slow so I adjust it. Any time I want a slightly moister baked product or don't need the convection I use this setting since the air circulation will make things drier and crisper. All reheating. I don't find this slower than convection, just has different use. I'm an oven cook and have really come to depend on mine. For savories, autoroast rocks and so does the rotisserie. I like the probe and while it requires a rough calculation of cooking time (another unhelpful aspect) the countdown and alert are great. Again, disclaimer: There are few absolutes and my ideas on how to use "European convection" are based on English oven website I stumbled across which actually made some sense of it. Miele needs to do a much better job.

Oh, my, right now I am fighting an infestation with very small brown bugs. Let me tell you I have never been so sick in all my life. They were everywhere!!! I even had packets of UNOPENED Hidden Valley ranch dressing-----bugs!!! I guess I brought them home with bird seed as has been reported but how the little nuisances got into so many things. I will say this--for those of you storing things in sealable plastic bags---don't bet the ranch. I had things stored in vacuumed sealed bags and they got in there. I also had a tin container for dog food with an extremely tight lid. Didn't matter to the bugs. What I have done so far was to wash EVERY dish, pot,pan,lids,etc in the dishwasher, washed out cabinets anddrawers withsoap and bleach waterplus all the tin cans. Let it dry out then sprayed with an insecticide made especially for restaurants, hospitals, pantries, etc. I threw everything out. pasta, cereal, dog food, bird seed, flour, even found one in a salt shaker. OUT!! Now, I am sick about this because they seem to have come in so fast andI can't figure out how. Now, the spray that I used is no longer available so does anyone know of a brand of insecticide spray that is safe to use in cabinets when used according to directions? I really would appreciate any help because I intend to stay alert and armed----just in case----. Thanks so much for any help you can give me. BT

This whole thing has me scratching my head. There's been some peanut farms with trouble and one major company with problems. It's almost like there's a surprise when a company that uses a, how to describe it... low quality supplier? for their supplies has to recall products. I was talking to a lady at the store the other day and I commented how well stocked the peanut butter shelves were. I like Skippy and it was on sale for $1.49/jar. She and I agreed on this. I had two jars in my cart and she was getting some. We agreed that there was no need to fear the major brands. Just avoid the peanut butter added items where the companies don't do quality control on the product themselves. As I said, I bought two jars. They'll be on the shelf for a while anyway just in case. But the places that use it as an additive and don't care who the supplier is, to me would be suspect. At this point though, I would not buy a store brand or generic brand of jar peanut butter. Probably safe? Yeah. Worth the risk? Not to me. I found it curious that Target pulled a bunch of items (in their house brand) to be on the safe side. I commend them for being proactive. But then I noticed a number of other items they had on the shelf containing peanuts that they didn't pull. Again, I'm not running in fear, but I found it curious.

I'm still confused about that recipe. Is it a jiffy size cake mix or a regular? One post said one thing, and one post said another. Of course, maybe I just misunderstood ;)

The jiffy cake mix makes a 1 layer cake, so a regular cake mix would equal 2 jiffy box mixes.

For a while they were selling small boxes of cake mix that only made one layer (or 12 cupcakes). Those are probably as hard to find as the Jiffy Cake Mix though. I thought the smaller boxes were a good idea since who wants to make 24 cupcakes for just your family but I don't think it caught on. I still have a few boxes of the cake mix (and brownies too) that I found in CVS. I think they were Duncan Hines but I'm not sure.

I would just divide and use half of a regular yellow cake mix and save the rest for later. Brand name cake mixes are always on sale, it seems. Today it would end up costing about 50 cents for the cake part of the recipe since Betty Crocker cake mixes are on sale for a dollar each.

Just an FYI: I have sucessfully frozen cake mixes. I just throw the box in the freezer and let come to room temp before mixing.

Juellie, There has been a little confusion about the recipe.

In the earlier thread, Kayjones said Glenda's was the right one.

Glenda's:
GREAT EASY CORNBREAD

1 (8 1/2 oz.) pkg. Jiffy corn muffin mix
2 (8 1/2 oz.) pkgs. Jiffy yellow cake mix, or 1 pkg. reg. yellow cake mix

Mix each package as directed on box. You can do this all at once. Pour into a 9 x 13 pan. Bake at 350 degrees until done and golden brown. Great with butter and honey!

So I will be using that one. Hope it works!

Bump, that Jiffy site is a keeper. Some good sounding easy recipes there. TFS. The store locator said the store I went to has the cake mix. Guess they will until somebody buys those last 5 boxes. Maybe it will be available in some areas, but not all. Depends on how it sells I guess. Oh, I got Yellow cake mix.

The original recipe she posted had a t. of vanilla in it, too. I think it'll be good either way.

Here's my recipe again:

Jo's (Tippins Restaurant) Cornbread

One box of Jiffy cornbread mix
One box of JIFFY yellow cake mix
1 teaspoon good vanilla

Mix both boxes according to package directions, add the vanilla and bake for 45 minutes to 1 hour at 350 degrees - do a toothpick test at 45 minutes - it might not take a full hour in your oven.

This cornbread is smooth and sweet - good with ham and beans, soup, salad - it can be frosted with icing for a not-so-sweet cake!!! I love it with honey butter and just honey, or a good jam - it's really comfort food.

I have made this for all potluck occasions, visits to shut-ins and for my family - I always am requested to bring it or provide the 'recipe'.
