Pulled out the cast iron yesterday and made hubby's favorite for tonight. Chicken and rice.

I'll take some each of patti's and 2.5acres meals.

I made a meatloaf today. Had a baked potato and creamed corn to go along with it.

I fried up leftover potatoes, and finished the sausage and cabbage, and the quinoa tabbouleh (with lovage) You like that word, don't you Patti? ;-D

Leftovers. Last night DH made inside-out ravioli. He cut the recipe in half, but there is still more than enough for tonight. And it's one of those things that tastes better the second time. Oh, and cheese bread.

Finally french door windows installed and new living room window, so I rushed to Mama Goldberg's and got my usual, then ran home, for the installers.

Shopping day with Amber and Alyssa and we had lunch at Bob Evan's. Used my coupon on the meal. We all had breakfast for lunch. Mine was a cheese and spinach stuffed omelet with home fries and a biscuit plus unsweetened iced tea. I was not too hungry this evening so I warmed up a leftover salmon patty and made a sandwich with lettuce, tomato and mayo. Just water to drink.

Sure thing, Patti. There are lots of recipes online and most of them are similar to the one we use. It is from my 39 year old Better Homes and Gardens New Cook Book, with only a couple of changes.

INSIDE OUT RAVIOLI
1 pound ground beef
one half cup chopped onion
1 clove garlic, minced
1 10-ounce package frozen chopped spinach
1 one-pound can spaghetti sauce with mushrooms
1 8-ounce can tomato sauce
1 6-ounce can tomato paste
1/2 teaspoon salt
dash pepper
1 7-ounce package (2 cups) shell or elbow macaroni, cooked and drained
1 cup shredded sharp process American cheese
1/2 cup soft bread crumbs
2 well beaten eggs
1/4 cup salad oil

Brown first 3 ingredients in large skillet. Cook spinach using package directions. Drain, reserving liquid; add water to make 1 cup. Add spinach liquid and next 5 ingredients to meat mixture. Simmer 10 minutes. Combine spinach with macaroni and remaining ingredients; spread in 13x9x2 inch baking dish. top with meat sauce. Bake at 350 degrees for 30 minutes. Let stand 10 minutes before serving. Serves 8 to 10.

NOTES:
1. In place of the American cheese, we use a mixture of sharp cheddar and monterey jack.

2. Last weekend I made tomato sauce from my garden tomatoes, but if I don't happen to have any in the freezer, we just use a jarred sauce from the grocery store.

3. We do not cook the spinach before adding to the recipe. Just squeeze out as much moisture as we can (saving it for one of the steps.

4. And just in case you're not sure there is enough cheese in the dish, when there is about 10 minutes left, we pull it out of the oven and top it with mozzarella and shove it back in the oven!

We had such a good dinner! Green bell peppers were on sale the other day, 10 pounds for 10 dollars! I didn't buy 10 pounds but I did buy 4 huge peppers. So last night I made stuffed peppers, which I like to stuff with a Spanish Rice type mixture (all homemade, no recipe really). I cut the peppers in half and stuff the halves, and I pre-cook them in the microwave for about 3-5 minutes before filling with stuffing. Stuff with the Spanish rice, then in the oven for half an hour. Top with large hand fulls of shredded cheddar cheese then back in the oven another half hour. Served with fresh corn on the cob, the dinner was fantastic!

Panera was on the menu tonight...A bowl of their delicious french onion soup and a grilled chicken Ceaser salad..

Gemini, I've never eaten at Panera and I hear so many good raves about the restaurant and especially the soups. Panera has been the favorite restaurant of my little niece since she was old enough to talk. Loves their grilled cheese. Doubt that she's ever eaten in a McD's!
