What's for dinner Wednesday?

Leftovers here. That leftover whatever it was I made with the puff pastry top plus sliced tomatoes are making an encore tonight. Harry had to have his blood tested today (he's on Coumindin) and then we did our weekly shopping. It is ungodly hot outside and by the time I got all the groceries in and put away, that was about it for accomplishing anything today. Then his CHF team called and the lab didn't run all the tests they were supposed to, so we have to go back tomorrow. Thankfully, it's in Ocala but it's still pretty far from our house.

Hope your day was cool, although I don't know where THAT would be except San Francisco. What are you having for dinner?

I'm not a sweets eater, either, but love warm ginger bread with lemon hard sauce or whipped cream. I think I see some in my near future! Angelaid, I do leave the skins on the sweet potatoes. Getting a real recipe from me is rare, lol. I so often invent toss this and that together. For the glaze, I mixed some peach jam, chili sauce, a bit of apple cider vinegar, minced garlic, and red pepper flakes. The peach was the primary ingredient. It would be good with apricot or even apple jelly or jam, too. Thank you for the cookbook recommendations, Alisande.

I'm donating blood tomorrow, so last night I had spinach. Tonight I'm having liver. Plus a multi vitamin. Because my diet has sucked lately. I just hope it's enough to get my iron up so I can donate. #26!

Raven, I finally remembered to pick up some asparagus! I'll have it tomorrow with something. Ellendi, tonight I just cooked it in a very basic way. I like having cold leftovers to put on a salad, in my green sludgies, soups, etc. One cup quinoa, rinsed and drained twice. Use a mesh strainer. Add one and a half cups water or broth to the pot with the quinoa, bring to a boil with the lid on....then turn heat down to simmer for ten minutes or so. Let sit for five minutes with the lid on after the heat is off. I also add it raw to any rice or mixed grains that I'm cooking. I even add it when I'm making pea or lentil soup! Always rinse it....it has a bitter taste otherwise.

Warmer here today - around 86. Because of all the rain over the last couple of days, it was very humid. I was so glad to see the sun! Our summer has been cooler than normal. I don't remember a 100 degree day so far. It was cooler than normal last year too. We went out for Mexican tonight. Had a delicious carne asada.

I bought some nice pork chops on the weekend, so we had those with locally-grown broccoli and green beans. The beans were simmered in water and olive oil for a few minutes till tender-crisp, then the lid removed and let the water evaporate. Threw the broccoli in, once it was about cooked, and tossed it with a bit of balsamic vinegar. Hubby loved them, and he hates green beans. Boiled potatoes with the skins on as well.

The local broccoli is so good, and BIG! Not like the expensive little things they try to sell us prior to ours coming in. I'm going to miss it when it's over.

Baked Cod fillets, creamed potatoes, buttered broccoli with cuke, onion and sour cream salad.

Dotmom, we love cod. Do you bread it before baking? I do sometimes and other times I just slather it in olive oil and salt and pepper. Good both ways.

Jasdip, maybe I'm looking in the wrong place, but I haven't had locally grown broccoli. I think it's too hot here. Here's a funny story. Harry's family moved into a house where the previous owners had planted a garden. One day his dad went out, saw all the "flowers" and "weeded" all the broccoli out and put it in the trash because it'd "gone to seed". Guess broccoli wasn't a poplular vegetable in rural Georgia back in the 30's! Never thought about mixing it with green beans. Hope your coping, dear friend!

Mexican birthday lunch.

Didn't know what I was ordering and mine ended up being nothing but a hot dip.

Company was much better than the dip.

But they did give me sopapillas as a birthday surprise.

Oooh, Raven, I bet those potatoes were delicious. Do you halve or quarter them first?

Thanks for the reminder, socks. I'm hungry for a hamburger on the grill and needed to check the freezer for buns. (I did have some.) I like mine with provolone cheese, mayo, sliced onion and avocado. Makes my mouth water thinking about it.

I haven't made a beer butt chicken in a long, long time. Actually, I've never made one. Harry does that. ;-)
