gwanny's recipe: Salsa chicken and black beans 1 jar of your fave salsa 1 can of black beans, drained and rinsed 1-2 cups shredded cheddar or Mexi-blend cheese 4 boneless, skinless chicken breasts Place chicken in baking dish and cover with salsa and beans.***I put the beans in bottom of pan, then top with chicken and salsa, cover and bake at 350 for 35 minutes. Sprinkle cheese over top and let bake another 5 minutes. Moist, yummy chicken!! Serve with a dollop of sour cream on each. This was fabulous!!! Only thing is that our supermarket chicken breasts are so large, I'd cook them for at least 45 minutes before adding cheese. Sour cream is a must.

Thanks for asking, Lydia1959! Sjerin told me you inquired (thanks!) I have been working temp and have also been really busy trying to reorganize my house. Things are progressing. I got an unbelievable bargain on ground chuck so I spent 2 1/2 days cooking it up and freezing it which is good because I start another assignment on Monday. Don't know how long it'll last and it may be busy as I'll be transcribing and taking care of Cardiology patients. Thanks for asking! Will try to post again as soon as possible. HI Kathy....so good to hear from you...sorry to hear your husband isn't doing real good. I think it is a smart move to be by your kids...but I'll bet it's hard to leave that place. Our place gets harder and harder for Denny to take care of. We have a young man at church who comes out all the time to help Denny. They've become good friends.. They come out and play card games or dice games with us quite often. They are much younger than us but I've never fit with my own age group...I'm too imature...hehe I sure hope when things slow down you will come here more often...we miss you. patti

If you like your sauce sweet you can use 1 cup ketsup, 1 cup water and 1/4 cup packed brown sugar to whip up a quick sauce. I love this to pour over pork chops to bake. ~Betsy
