Banana Picnic Cake

1 yellow cake mix, mine used soft butter

2 very ripe mashed bananas

1 cup brown sugar

1 cup chopped nuts

3 eggs

24 large marshmallows

Mix the cake mix with the soft butter or oil. Add the mashed bananas and the eggs. To this add just enough water to make it like a cake batter should be. I didn't measure.

In a lightly greased 9 x 13 pan with deep sides place the 24 marshmallows evenly across the bottom. Then pour on the cake batter. On top of the batter add the brown sugar and chopped walnuts. Bake at 350 degrees until done, maybe 35 to 40 minutes. It depends on your oven, just watch it. Enjoy.

That sounds good...except the marshmellows...I don't think I'd add them....

Do you use a frosting?

I just made banana bread last night, although I don't really care for it because I don't like bananas the kids love it. My recipe is kind of like Nancy's because I use yogurt, but kind of like Glenda's because it calls for sour cream and like neither because it takes shortening, LOL. I'd rather have cake, though. Even with my banana bias, I love this cake. I made banana bread because I can leave that alone but this cake is impossible for even me to resist. The notes are from the original poster but like her, I omit the lemon zest. Banana Cake (Rose Levy BerenbaumÂs Cordon Rose Cake) Jgarner-Cooking Forum (good as layer cake, elegant, delicate texture) mix together: sifted cake flour 2 cups (200 g) sugar 3/4 c + 2 Tbs (170g) baking soda 1 tsp baking powder 3/4 tsp salt 1/2 tsp puree together: 2 large ripe bananas 1 c (227 g) sour cream 2 Tbs or up to 1/2 c (30 g to 121 g) 2 large eggs 2 (100 g) grated lemon zest 2 tsp (I left this out since I don't like the flavor of lemon with banana) vanilla 1-1/2 tsp soften: Butter 10 Tbs (5 oz) (142 g) Add butter and half of pureed mixture to dry ingredients in stand mixer and mix at medium with paddle for 1-1/2 minutes. Scrape bowl and add rest of banana mixture in two batches, mixing 20 seconds after each addition. Pour into 9"x2" round pan (I just lined the bottom with parchment, no spray or butter) and bake at 350 F for 30 to 40 minutes. Cool for 10 minutes in pan and then turn out onto rack to cool completely. I should also mention - the sunrisebakery version of them is not exactly like the original. It's tasty but the cake is more like angelfood cake and the filling is softer. If you really want something close to the original ones you'll probably have to make them yourself.

No frosting is necessary and I just used the amount of butter called for in my mix which was 1/2 cup of soft butter. I used up one dead banana in my freezer and one that was rapidly limping towards old age. My house really smells good now!

Thanks for posting Sue...it sounds delish. I assume the marshmallows melt into the cake...right? I have some quite stale ones I'm wondering if I could use up that way.

Sue, your recipe is different than the one I posted, but it's interesting they're both from Indiana. Mine came from a cookbook my sister in Ft. Wayne gave me.

Do you make or have someplace near that makes a good breaded tenderloin? I had to learn to make them here in Florida, but when I go home, I HAVE to have one from the drive-in. ;-)

Patti43, I think you can buy the tenderloins already breaded at a small grocery here in town. I have not bought them but Cheryl, our oldest has. I usually just make my own. I don't know of a good place around that you can buy them all hot and ready to eat. They are really good if you can find a place that makes them right. I like them with mayo, lettuce and tomato. How do you like yours? Yes, I copied your recipe for picnic cake. I have a recipe for a zucchini picnic cake I hope to make soon also. I always love a good recipe. I imagine the most of this cake I made today will go over to Amber and Mike's :)

This sounds like a great way to use up very ripe banana's, as we have grown tired of banana bread.

Sue, I like my tenderloin with dill pickle only...and sticking out the bun about 3" on each side.

I will try the banana picnic cake next time. DH loves anything with bananas. I also want to see the difference of putting the marshmallows on the bottom instead of on top. Don't you love how the brown sugar and marshmallows get crispy/gooey? Now if I could figure out a way to get some peanut butter, DH would be in heaven. He loves PB, marshmallow and bananas. haha

Patti43, you might try peanut butter chips in your cake. I tasted my banana picnic cake and I did like it. I like the way the marshmallows push through to the top and melt with the brown sugar and crisp up the nuts. Half of the cake just went home with Amber and Mike as well as some of my cucumber salad I made using Jasdip's mayo recipe. Yes, nothing like a great big ole tenderloin sandwich with more meat than bun! I just may have to make some of those up one of these days really soon!
