There are may versions of the Better Than Sex Cake.This recipe was given to me by an aunt. I made it once many years ago to take to work. It was a hit. 1 (18.5 oz) yellow cake mix 1 (1 lb 4 oz) can crushed pineapple 1 C sugar 1 ( oz) pkg vanilla pudding mix (not instant) 1 C whipping cream, whipped & sweetened flake coconut, lightly toasted Prepare cake mix according to directions on pkg. Pour into 13 x 9 pan and bake as directed. Cool. Combine pineapple & sugar & bring to a boil. Cool slightly. Poke holes into cooled cake with a fork. Pour pineapple mixture over the cake. Prepare pudding mix according to directions. Cool. Spread over pineapple & chill. Just before serving, cover with whipped cream & sprinkle with coconut.

Spice Cake with Cinnamon Cream Cheese Icing from Christmas Cooking Southern Style 2008 1 cup unsalted butter, softened 2 cups sugar 6 large eggs divided 3 cups cake flour 2 ½ tsp baking powder 1 tsp ground ginger 1 tsp ground cinnamon 1 tsp ground nutmeg ½ tsp salt 1/8 tsp ground cloves 1 cup buttermilk 1 recipe cinnamon cream cheese frosting Garnish ground cinnamon Preheat oven to 350 degrees Grease and flour 3 (9 inch) cake pans, set aside In a large bowl, beat butter and sugar at medium speed with an electric mixer until light and fluffy. Add egg yolks one at a time, beating well after each addition In a medium bowl, combine flour, baking powder, ginger, cinnamon, nutmeg, salt and cloves; sift. Add to butter mixture, alternately with buttermilk, beginning and ending with flour mixture. In a medium bowl, beat egg whites at high speed with an electric mixer until stiff peaks form. Gently fold into butter mixture. Divide batter among prepared pans. Bake 20-22 minutes, or until a wooden pick inserted in the center comes out clean. Let cool in pan for 10 minutes. Remove from pans and let cool completely on wire racks. Spread cinnamon Cream-Cheese Frosting between layers and pon top and sides of cake. Garnish with cinnamon if desired. here's another one I found today ZUCCHINI BROWNIES TIME: Prep: 20 min. Bake: 35 min. + cooling: 1 cup butter, softened 1-1/2 cups sugar 2 eggs 1/2 cup plain yogurt 1 teaspoon vanilla extract 2-1/2 cups all-purpose flour 1/4 cup baking cocoa 1 teaspoon baking soda 1/2 teaspoon salt 2 cups shredded zucchini FROSTING: 2/3 cup semisweet chocolate chips 1/2 cup creamy peanut butter In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in yogurt and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture. Stir in zucchini. Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. For frosting, in a small saucepan, combine chocolate chips and peanut butter. Cook and stir over low heat until smooth. Spread over warm brownies. Cool on a wire rack. Cut into bars. Bluejeansforever, I would think the mini marshmallows would work. I think the package probably tells how many cups equal how many big marshmallows. I have not done that, but I imagine it would be just fine. Let us know how your cake turns out. Sue
