Spice Cake with Cinnamon Cream Cheese Icing from Christmas Cooking Southern Style 2008
1 cup unsalted butter, softened
2 cups sugar
6 large eggs divided
3 cups cake flour
2 ½ tsp baking powder
1 tsp ground ginger
1 tsp ground cinnamon
1 tsp ground nutmeg
½ tsp salt
1/8 tsp ground cloves
1 cup buttermilk
1 recipe cinnamon cream cheese frosting
Garnish ground cinnamon
Preheat oven to 350 degrees
Grease and flour 3 (9 inch) cake pans, set aside
In a large bowl, beat butter and sugar at medium speed with an electric mixer until light and fluffy. Add egg yolks one at a time, beating well after each addition
In a medium bowl, combine flour, baking powder, ginger, cinnamon, nutmeg, salt and cloves; sift. Add to butter mixture, alternately with buttermilk, beginning and ending with flour mixture.
In a medium bowl, beat egg whites at high speed with an electric mixer until stiff peaks form. Gently fold into butter mixture. Divide batter among prepared pans.
Bake 20-22 minutes, or until a wooden pick inserted in the center comes out clean. Let cool in pan for 10 minutes. Remove from pans and let cool completely on wire racks.
Spread cinnamon Cream-Cheese Frosting between layers and pon top and sides of cake. Garnish with cinnamon if desired.

Cinnamon Cream Cheese Frosting
1 8 ounce package cream cheese softened
¾ cup butter, softened
1 Tablespoon heavy whipping cream
¼ tsp ground cinnamon
7 cups confectionary sugar
In a Large Bowl, beat cream cheese, butter, cream and cinnamon at medium speed with an electric mixer until creamy. Gradually add confectionary sugar, beating until smooth

My mom talks about spice cake with carmel frosting. She says she used to buy a little box of Jiffy carmel frosting mix. Anyone remember it - and know of a good recipe close to the Jiffy mix?

Joann - that cake sounds wonderful. Thank you for sharing it. We had spice cake for our wedding 32 years ago and the frosting was made with cream cheese. The cinnamon in the frosting is a nice twist. I'll make it soon.
