When I make green beans, I frequently use either slivered almonds or onion rings to spice them up. For broccoli, maybe a cheese sauce. I know these are not spices/herb, but I'm not very creative. I do use white pepper instead of black sometimes to make the flavor a little different.

I like sauteeing frozen corn. Butter and oil, salt and pepper, and usually some paprika, oregano, cumin, just grab whatever out of the cupboard. The sauteeing gives it more flavour.

More often than not, I throw in my spice mix, which is a homemade blend of seasonings. Kind of a southwesterny flavour, with cumin, paprika, chili powder, dry mustard, etc etc.

If you like I can post the recipe. I have before, but I can do it again. I also use it on meats, eggs, fried potatoes; it's very much an all-purpose seasoning.

To broccoli, brussels sprouts, green beans, asparagus I often add a few drops of fresh lemon juice to the light margerine that I stir into the veggies before putting on the table. Add little dried oregano to the butter/margerine with lemon to really pick up broccoli.
Look at Mrs. Dash's seasonings to pick up veggies also.

I like fresh lemon squeezed over most green vegetables with a sprinkle of sea salt. I've found that the True Lemon product is nice to have on hand when you don't have a fresh lemon.

Montreal Seasoning for Chicken is also good on vegetables.

For green beans I sometimes add some vinegar. Other times I add a touch of ham base, rice vinegar and a sweetener (agave syrup or truvia).

I grew up on a dairy farm so as one might imagine, we used milk for everything....

For fresh or frozen whole kernal corn, green beans and especially my favorite, peas, put them in a small sauce pan and add enough milk to just cover them, add a couple pats of butter and slow simmer, not enough to scald the milk, until they are tender. When they are tender mix 1tbs of cornstarch in about 2oz of cold water. Pour in slowly and continue heating until the milk just slightly thickens.

Another variation is to mix whole kernal corn and baby lima's to make succotash.

Not only are the veggies good, the thickened milk broth is excellant over a baked or boiled potatoe.

I put a little bacon grease in with my green beans. You can make a white sauce for creamed peas to change it up. I just like my corn with butter, s&p. Broccoli with cheese sauce is wonderful.

Lazypup, I'd forgotten how much we like succotash. I need to make that soon!

I often times use some store bought salad dressings in stuff, like Italian, or some of the balsamic vinegar ones, I look for new and interesting ones that I think would be good cooked in or put on after cooked. I love doing green beans in the wok with olive oil and balsamic vinegar and some garlic, even works well with the frozen ones.
Check out that isle in the store there are lots of dressings, marinades, and sauces that can be used other than their regular uses.

Wow! a whole lot of good ideas. Thanks, KT friends. Jasdip, I'll go on the recipe site and find your seasoning mix. I used Lowrys (sp>) season salt the other day, and it it just toooo salty. I think if I make Jas's blend I can control the salt. You all are just super!!!

I like to sprinkle toasted almond slivers over the buttered green beans. You can also dress them up with a little of the canned fried onion rings chopped and sprinkled on them. Season broccoli with salt, pepper, butter and fresh lemon juice from a fat wedge of lemon. I also like cheese sauce on broccoli. I melt some Velveeta cheese in some milk or cream in a small saucepan, and I add a little zip with a pinch of cayenne or some dry mustard. I live in the southwest, so thank goodness we can buy fresh vegetables year round.

When preparing steamed cabbage, try a dash or two of curry powder. I enjoy it.

Nutmeg, I love in creamed spinach.

A sprinkle of nutmeg over vanilla ice cream is quite tasty!

Freshly ground black pepper on a biscuit brushed with melted butter before you bake.

I saute garlic in a small amount of olive oil and then add vegetables like green beans or leafy green.
