I have a breakfast casserole recipe that is delicious as well as simple to make. Let me know if you'd like me to post it. It contains eggs, cheese and sausage.

I like fresh fruit with breakfast so I would do a tray.
An assortment of breakfast breads would be nice too such as muffins and rolls. Gravy and biscuits are delicious too! Service coffee and juices and I'd say you would have a very nice menu to offer your guests.

I'm sure you will come up with something very very nice.

What a great idea. Brunch is my favorite party to host. The last one we had I invited all the neighbors (it was a small neighborhood) and we had probably 25 or more coming and going at different times. One recipe everyone just loves is a creme brulee French toast you make the night before. I got the recipe from the link I'm posting below but I'm sure you're going to get plenty of ideas from the good cooks here.

I agree with Lori on the fruit tray - it is always a hit and it looks beautiful.
Quiche could not be easier and you could make one non meat if you have anyone who prefers.
Then a bread plate with croissant, mini danish and muffins.
Finally, a side of breakfast meats and big pitcher of OJ...
(Champagne for Mimosas?)

favorites are the French Toast Casserole, Egg and Sausage Casserole, Fruit.. Monkey bread is a hit with kids... you could do that or cinnamon rolls.

I have a spinach/feta quiche recipe that is really good if you want it. Another more unique thing to serve is Gooey Butter cake... either regular or lemon flavored... It's a really sweet coffee cake and a bit hit around here.

Problem is most breakfast/brunch things will probably get repeated. You could add bisquits and gravy.. it's heavy, but different. If you have a more healthy bunch; you could offer yogurt with different toppings.. granola, fruits, etc. Hope about offering cold strawberry soup?

If you want to liven it up a bit, you could serve Mimosa's or Bellini's for drinks.

If you wnat to do something really different.. you could try Mexican breakfast foods/casserole.. You may also be able to work in a Dr. Suess theme.,... Green eggs and Ham, etc...

Sometimes picking a letter and just going with it is really fun too... Just do like "B" foods... for example for B you could do... bacon, brocolli quiche, banana bread, belgin waffles, bellinis, etc... It's a fun way to do things.

That really sounds like a fun thing to do. Everyone has some great ideas. I even like some nice homegrown tomatoes to add to the breakfast menu. They go well with what ever meats and potatoes you might serve.

I am serving brunch Nov. 1, the morning after Kalie's wedding. Most of the people will be heading home past our house, so we will have the kids here to open gifts also. Anyway...I am serving sausage breakfast bake, ham breakfast bake, blue berry, strawberry & banana muffins, I will also be serving some kind of fruit and of course OJ, coffee and a Mimosa. I need it to be something that people can come at any time, and also all made ahead of time! (My sister is coming before the wedding...I am leaving it all up to her to make this stuff! =) )

Mmmmmm, I like Spicey's suggestions. Sounds yummy and easy. The Monkey Bread sounds good too and that's one of those things that people like but don't make at home or they'll eat the whole thing. (at least that's the way it happens around here.) LOL

I think anything you make will be a big hit with the Mimosa's flowing. :-)

Thanks for the suggestions. I'm sure things will be duplicated. I'd like to have things that could all be made ahead of time. I'm trying to think everything through.... I think too much!

Just a thought--could you keep a journal of what was served, in fact if all the gals did that, it might help to much duplication.
I prefer simple items, and not so many breads etc. Don't forget that some people do not eat pork so beef sausages or turkey ham is good. There are also cookbooks out their with brunch ideas, along with a variety of magazines--Good Housekeeping, Country magazines, etc.

I think I got this from someone the KT. Quick and easy.

Breakfast Lasagna

Sauce
*********
6 eggs
2 C. milk
1 t. salt
1 t. pepper
Filling
*********
2 C Shredded Cheddar cheese
1/2 lb. bacon, cooked and broken into small pieces
Noodles
***********
6 slices white bread
Prepare sauce. In a medium bowl, combine eggs, milk, salt, and pepper. Whisk until well blended. Set aside.
Spray an 11X7 baking dish with nonstick cooking spray. Layer three bread slices, slightly overlapping, into bottom of dish.
Sprinkle with 1/2 cheese and all the bacon. Place three remaining bread slices on top. Sprinkle with cheese. Pour sauce over the top of the lasagna. Cover with plastic wrap and refrigerate overnight. Remove from the refrigerator 30 minutes before baking.
Preheat oven to 375°. Remove plastic wrap, cover with foil and ake 40-45 minutes. Remove foil and bake an additional 10 minutes or until a tester inserted into the center comes out clean. Remove from the oven. Let rest 5-10 minutes before serving. Serves 6

Here's another one I have, it's my favorite.

Brunch Egg Dish

Crust
1 pkg frozen hashbrowns (24oz)
1 egg
salt and pepper

Egg Topping
7 eggs
1/2 cup milk
1 1/2 cup shredded cheddar cheese (or whatever you have in ref.)
1/4 cup onion
12 strips cooked crisp bacon

Preheat oven to 400°. Combine potatoes and 1 egg. Press into a Pampered Chef stone/cakepan, (or Pyrex), and bake for 20 minutes. Whisk eggs and milk, and microwave on high for 3 minutes. Stir, and cook an additional 3 minutes. Stir. Spread eggs evenly over baked crust. Top with bacon, and sprinkle with cheese. Bake for 10-15 minutes. Let set for 15 minutes before serving.

this is a family favorite I am always asked to bring. Kids seem to like this better than traditional baked egg casseroles.

easy make ahead sausage (or bacon) and egg casserole

1 dozen hardboiled eggs - chopped
1 lb cooked loose sausage (or bacon)
1 can cream of mushroom soup
2 cups shredded cheddar cheese

spray a 9 x 13 glass baking dish with non-stick
spread 1 bag of thawed hashbrowns on bottom
stir together eggs and soup (do not dilute) and spread on hashbrowns
sprinkle meat on top
top with cheese
cover and bake 1 hour (if refrigerated it may take an extra 15 minutes or so.

another option french toast is to take a nice thick slice of sourdough and cut into 3/4" strips with a pizza cutter. It become more of an hor'douvre (SP?) than a messy breakfast.

how about a fruit pizza?

Superb! Make the day before and pop in the oven in the morning. Serves 8.

Ingredients:
16 slices white bread, crusts
removed
16 slices Canadian back bacon or
ham
16 slices sharp cheddar cheese
6 eggs
1/2 tsp. pepper 2 mL
1/2-1 tsp. dry mustard 2-5 mL
1/4 cup minced onion 60 mL
1/4 cup finely chopped green pepper 60mL
1-2 tsp. Worcestershire sauce 5-10 mL
3 cups milk 750 mL
dash Tabasco
1/2 cup butter 125 mL
Special K or crushed Corn Flakes

Instructions:
Set 8 pieces of bread into a 9" x 13" (23 x 33 cm) buttered, glass baking dish. Cover bread with slices of back bacon. Lay slices of cheddar cheese on top of bacon and then cover with remaining slices of bread to make it like a sandwich. In a bowl, beat eggs and pepper. To the egg mixture add dry mustard, onion, green pepper, Worcestershire sauce, milk and Tabasco. Pour over the sandwiches, cover and let stand in fridge overnight. In morning, melt butter, pour over top. Cover with Special K or crushed Corn Flakes. Bake, uncovered, 1 hour at 350 deg.F (180 deg.C). Let sit 10 minutes before serving. Serve this with fresh fruit and hot cinnamon rolls.

Yes, the gooey butter cake can be made with a cake mix. Here's a recipe. It really goes over well and is something different. Do NOT serve warm -- In fact, I usually make it the day before and even refrigerate it over night to set it a bit. For a lemom variation, use a lemon cake mix and add a couple teaspoons of fresh lemon juice into the top cream cheese mixture before cooking instead of the vanilla. YUMMY...

ps...don't worry if the top browns slightly... when it cools it should look better. Also, I'm surprised the recipe doesn't list this... but save a little of the powdered sugar for dusting on the top after the cake has cooled (like you would do with brownies). It looks nicer and is very tasty, and is almost alwasy done with gooey butter cakes.

Below is a good easy spinach quiche recipe. I'm making it this week for the second time.

Could you maybe have more salads, less breakfast foods? Maybe a nice cold bean salad (Cowboy Cavier at the site below is one of my favorites), a broccoli salad, the grape salad (with cream cheese and nuts), tuna and chicken salads along with an assortment of breads, muffins and fresh fruit.

I've made this quite a few times.

BREAKFAST CASSEROLE

1 lb. sausage, cooked
Grated cheese
4 eggs
1 c. Bisquick mix
2 c. milk
Salt, pepper

Cook sausage, drain. Put in the bottom of a 13x9 pan. Sprinkle cheese over sausage. Mix together eggs, milk and Bisquick. Pour over sausage and cheese. Bake 20-25 minutes, 350 degrees.

I don't do the 13x9, do the square pyrex dish.

To make a fruit salad extra special, I like to cut strips of fresh mint in it. Yum!

I second (third?) Bellinis or mimosas.

Yogurt with fruit, granola and nuts

Bagels with cream cheese and salmon (with capers, tomatoes, red onion)

Quiche

Pastries (cinnamon roll, coffee cake, etc)

Oatmeal bar? Serve with different toppings.

My favorite brunch restaurant always serves a cold strawberry soup. Here's the recipe from DisneyWorld:

Strawberry Soup

Ingredients:
2 lb., 8 oz. strawberries (frozen variety, thawed with juice)
16 oz. heavy cream
2 oz. sour cream
3 oz. plain yogurt
8 oz. fresh strawberries

Directions:
1. Mix first four ingredients.
2. Beat slowly until well mixed and a smooth consistency.
3. Chill; shake well before serving.
4. Add fresh strawberries as garnish.

I was asked to bring Bananna Muffins to the one on Friday.

I forgot about this recipe from my sister. She used to host a holiday brunch every year and tried these. They were on the menu by request for as long as she had the brunch. In fact, I had to go to the little beach grocery and buy three more cans of biscusts and more butter!! One batch she made didn't even make it to the buffet table before they were gone.

GARLIC PARMESAN ROLLS

1 can Hungry Jack biscuits (Pkg. of 10)

Mix together:

1/2 c. mayonnaise
1/4 c. dried oregano
1/2 c. freshly grated parmesan cheese
1/4 tsp. garlic powder
1/4 tsp. dried basil
3 green onion tops, chopped

Preheat oven to 350. Place biscuits on baking sheet and make a well in each. Fill with the mixture and bake 14-15 minutes.

Here's some of my personal arsenal:

Cinnabon Likes I make them the night before to the "rise and bake" part..Shape put in pan(s) and cover with plastic wrap..put in fridge over night..take out the next morning, remove plastic wrap...let come to about room temp and bake..frost...They can be warming up and baking while you prep/make something else, or do a final pass over on the bathrooms. LOL

Banana Snack Cake For a breakfast food, just sprinkle with powdered sugar or a quick glaze of maple syrup and powdered sugar.

Brunch Pizza

Best recipe in the universe for easy and versatile Biscuits.
I use butter instead of shortening. Make sure it's well "cut" and they are perfect!
JP's Big Daddy Biscuits For ladies I recommend patting into 1/2" thick and cut with 1" cutter. You can make these the night before and bake off in the morning too..See the opening description. They do great that way too.

Sausage gravy is sooooo easy. Brown some delish sausage. I like Jimmy Dean natural HOT (It's got a little kick but not really hot.) No fat in the pan when you are done or barely any..but still enough to sprinkle with a few T of flour, cook a bit..add in some garlic powder, fresh cracked pepper and milk to thicken. About a cup and a half for 1lb of sausage and 2T of flour.

I make these once or twice a month.
Grandma's English Muffin I free form them into "buns". Let rise then brown on a flat griddle or even a frying pan. Dry pans!
I personally add 2 T of butter to the dough.
You would suprise your ladies if you made homemade ones. They will feel very spoiled!

Brunch is not just breakfast foods. You can also have things like tea sandwiches,crab puffs, salads, egg rolls etc. Just about any food that is easily served and eaten.

Personally I like to choose an ethnic theme and run with it to be different. Why not do a Mexican, Chinese,Western or a southern style brunch? Like someone else mentioned there will be repeats since most people equate brunch with breakfast foods rather than luncheon foods. I say dare to be different.
