Original Recipe Yield 2 servings

Ingredients

â¢ 2 medium zucchini, cut into 1/4-inch slices

â¢ 2 tablespoons butter or margarine, melted

â¢ 1 tablespoon minced fresh oregano

â¢ 1/4 cup grated Parmesan cheese

â¢ salt and pepper to taste

Directions

1. In a bowl, toss the zucchini, butter and oregano. Arrange in a single layer on a greased baking sheet or shallow baking dish; sprinkle with Parmesan cheese. Bake, uncovered, at 350 degrees F for 35-40 minutes or until golden brown. Season with salt and pepper.

This was posted on a Crock-Pot Forum.
It sounds delicious, but what other fruit would you recommend besides blueberries? (I don't like bb's).

Crockpot Blueberry Dessert Dumplings

2 pints fresh or frozen blueberries
1/2 cup plus 2 Tbs sugar (optional)
1/2 cup water, warm if using frozen blueberries
2 Tbs instant tapioca
2 cup all-purpose flour
2 1/2 tsp baking powder
1/2 as salt
4 Tbs unsalted butter; chilled
1/2 cup milk
1 large egg
2 Tbs light brown sugar

In a 3.5 To 5 quart crockpot, combine blueberries, the 1/2 cup
granulated sugar, the water and tapioca. Cover and cook until the berries have formed a thick sauce, 5 to 6 hours on low.

In a medium bowl, whisk flour, the remaining 2 tbs granulated sugar, baking powder and salt to combine. Using a pastry blender or two knives, cut in the butter until the mixture resembles coarse meal.

In small bowl, beat milk and egg together. Stir into flour mixture to form a soft dough.

Turn your crockpot setting to high. Drop the dough by
tablespoonfuls on top of the blueberries. Cover and cook until the topping is firm and a toothpick inserted in the center comes out clean, about 30 minutes. Sprinkle the dumplings with the brown sugar. Let the dumplings stand for 5 minutes before serving, then spoon into individual bowls.

The countdown has begun for the beginning for college football season. Just one week away. I'm making this to snack on.

SWISS AND BACON DIP (Foodgawker)

8 slices center cut bacon, chopped
8 ounces cream cheese, softened
1/2 cup mayonnaise
2 rounded teaspoons prepared Dijon style mustard
2 rounded teaspoons horseradish (optional)
1 1/2 cups Swiss Cheese, shredded
3 scallions, chopped
1/2 cup smoked almonds, coarsely chopped
Baby carrots and a selection of breads or crackers for dipping

Preheat oven to 400 degrees F. Brown bacon in nonstick skillet over medium high heat. Drain crisp bacon bits on paper towels.

In a mixing bowl, combine cream cheese, mayonnaise, mustard, horseradish (if using), Swiss cheese, and scallions with cooked bacon. Transfer to a shallow small casserole or baking dish and bake until golden and bubbly at edges, 15 to 18 minutes. Top with chopped smoked almonds. Place dip on a platter and surround warm casserole with breads and carrots for dipping.

Chile Rellenos Casserole I make this all the time! Great to bring to a potluck! Filling 1 lb bulk breakfast sausage, like Jimmy Dean 1 lb hamburger 1 large yellow onion 1/2 tsp seasoning salt 4 TBL tobasco sauce or cajun hot sauce 5 eggs 1/4 c all purpose flour 1/4 tsp seasoning salt 1 32oz can whole green chilies 1 lb grated cheddar cheese Brown the meat onions, add salt. Then line a large 9 x 13 casserole or baking pan with the whole green chiles. Open each chile and remove any seeds before lining the dish and go up the sides with the chilies. Then dump the meat & onion mixture on top of the lined pan. Now in a large mixing bowl whisk the flour, eggs salt & hot sauce together. Pour over the meat mixture. Cover with foil. Bake @ 375 for 40minutes. Remove from oven and top with grated cheese, bake another 5 minutes.

Moravian Sugar Cake Ingredients For the dough 1 russet (baking) potato (about 1/2 pound) 1/2 cup plus 2 tablespoons warm water 1 envelope (about 2 1/2 teaspoons) active dry yeast 1/2 cup granulated sugar 3/4 stick (6 tablespoons) unsalted butter, melted and cooled 1 large egg 1 1/2 teaspoons salt 2 1/2 to 3 cups unbleached all-purpose flour 3/4 stick (6 tablespoons) cold unsalted butter, cut into bits 3/4 cup firm packed light brown sugar 2 teaspoons cinnamon Preparation Make the dough: In a small saucepan combine the potato, peeled and cut into 1-inch pieces, with enough water to cover it by 1 inch and simmer it, covered, for 10 to 15 minutes, or until it is very tender. Drain the potato well, force it through a ricer into a bowl, and stir in 2 tablespoons of the water. In a small bowl proof the yeast in the remaining 1/2 cup water for 5 minutes, or until the mixture is foamy. In a large bowl stir together well the yeast mixture, the mashed potato, the sugar, the butter, the egg, and the salt, add 2 1/2 cups of the flour, and stir the dough until it is combined well. I add 1/2 tsp. dried oregano to this and more croutons. I mix the croutons in rather than sprinkle on top. This makes a lot so it's great for a pot luck (and even kids like it). PEPPERONI PIZZA SALAD (Tast of Home 2003 Recipe Cookbook) 10 plum tomatoes, chopped 3 green peppers, cut into 1" pieces 2 c. (8 oz.) shredded mozzarella cheese 1 pkg. (3-1/2 oz.) sliced pepperoni 1 can (2-1/4 oz.) sliced ripe olives 1/4 c. chopped onion 1/3 c. tomato juice 1/4 c. red wine vinegar or cider vinegar 1/4 c. olive or veg. oil 1 garlic clove, minced (I use 2) 1/2 tsp. dried basil 1/4 tsp. pepper 3/4 c. seasoned salad croutons In a large bowl, combine first six ingredients. In a small bowl, combine tomato juice, vinegar, oil, garlic, basil and pepper. Pour over salad and toss to coat. Cover and refrigerate several hours. Just before serving, sprinkle with croutons. Grilled Summer Vegetables 2 small fennel bulbs 1 small eggplant, about 1 lb, cut lengthwise, 1/2" thick 4 plum tomatoes, halved 3 large bell peppers, 1 green, red and yellow, cut into 1/2" strips 2 tbsp orange juice 8 basil leaves, slivered 1 garlic clove, minced 1 tsp orange zest Preheat grill to high. Cut stalks off fennel and set aside. Peel bulbs and cut vertically into 1/4" slices. Coat fennel, eggplant, tomatoes and bell peppers with cooking spray and sprinkle with salt and pepper. Grill vegetables until tender and evenly browned; about 4 minutes on each side, turning once. Transfer to serving platter, and sprinkle with orange juice. Finely chp 1 tbsp reserved fennel fronds and mix in a small bowl with basil, garlic and orange zest. Sprinkle over vegetables. Serve warm or at room temperature.

Jasdip, you can use any fruit, fresh, frozen or canned (if drained) It shouldn't make a bit of difference.

Tailgate Dip

2 cans (15 oz) field peas with snaps drained and rinsed
2 cans (11 oz) white shoe peg corn drained
2 cans (10 oz) Rotel
1 can (14.5 oz) diced tomatoes
5 green onions diced
1 (16 oz) bottle zesty Italian dressing
1 tsp minced garlic
Combine and chill overnight. Serve with Fritos Scoops.
