Clipping canine toenails

I have two chi's. One of them has white toenails and those nails grow very slowly. The other one (Gracie) has black nails, and these nails grow very quickly and also in a curved shape. They need to be cut every two weeks, as opposed to Tosha's nails that hardly ever need to be cut. I like to try to cut Gracie's nails sometimes to save time, money and stress (she hates going to the vet). I'm always afraid of cutting the quick, which I did do once, and I felt terrible. How do you know how much you can cut without causing pain to the animal. I tend to cut very small amounts, but I know I'm not getting anywhere near enough. Any tips?
