Caroline, got me looking for recipes with tomatoes, and I just found this one and doesn't it sound delicious?

Might make for my next month's gals luncheon

TOMATO PIE

unbaked pie shell

6 lg. tomatoes

3/4 c. mayonnaise

1 c. grated cheese (cheddar, fontina, Swiss, etc.)

Basil

Salt

Pepper

Line a 9 inch pie plate with pastry and chill. Slice tomatoes thinly. Lay in the crust. Sprinkle with chopped fresh or dried basil, salt, and pepper. Mix mayonnaise and grated cheese and cover tomatoes with this mixture. Bake at 400 degrees for 15 minutes; turn oven to 325 degrees and bake another 30 minutes. This may be baked without pie crust. If so, bake at 350 degrees for 15-20 minutes and add 2 tablespoons flour.
