Looking for Recipe

When I was a kid my grandmother would make these coconut pastries. They were not baked, seems to me they were just coconut with icing sugar shaped into cone shape and dipped in chocolate. But there must be more to it than that, they were sure good.

Has anyone ever made these??

I would bet they were a no-bake macaroon variation dipped in chocolate.

But, are you sure she didn't bake them? Macaroons are so sweet and chewy (very ooey gooey good) -- they don't seem like a baked cookie to me. They are often made with sweetened condensed milk and are dipped in chocolate or have a baking cherry on top.

Oh thank you so much. The one with the egg sounds like it might be it. My grandmother got it from her mother who made it because they didn't have much money.....just like the lady on the recipe said was the reason her great grandmother made it. Wow...!

RECIPE: Looking for Recipe on Red Beans &Rice/carribean style

The recipe below is from St. Thomas & Carol Bareuther is a nutrionist here. Here's one from Puerto Rico: PIGEON PEAS & RICE (serves 8) 2 TBL olive oil 1 small yellow onion, minced 1 stalk celery, minced 1 clove garlic, crushed 1/2 green bell pepper, seeded & minced 2 cups shelled pigeon peas (or use canned, drained) 1 TBL tomato paste 1/4 tsp cumin 1/2 tsp thyme 4 cups water 2 cups white rice Salt & pepper to taste In a deep saucepan saute the onion, celery, pepper & garlic in the oil until onion is soft. Remove from pan & set aside. Add water to saucepan & bring to a boil. Boil peas until just barely tender. (Skip this step if using canned.) Return vegetables to pan along with tomato paste & spices. I found this one today. OVERNIGHT APPLE BUTTER mixture of apple varieties, rather than just one type, will produce apple butter with rich, complex flavor in this slow cooker recipe. Good choices include Esopus Spitzenburg, Granny Smith, Jonathan, Northern Spy, Rome, Stayman, Winesap, and York. Enjoy the apple butter over toast or English muffins, or serve it with pork chops or chicken. Yield 4 cups (serving size: 1/4 cup) Ingredients 1 cup packed brown sugar 1/2 cup honey 1/4 cup apple cider 1 tablespoon ground cinnamon 1/4 teaspoon ground cloves 1/8 teaspoon ground mace 10 medium apples, peeled, cored, and cut into large chunks (about 2 1/2 pounds) Preparation Combine all ingredients in a 5-quart electric slow cooker. Cover and cook on low 10 hours or until apples are very tender. Place a large fine-mesh sieve over a bowl; spoon one-third of apple mixture into sieve. Press mixture through sieve using the back of a spoon or ladle. Discard pulp. Repeat procedure with remaining apple mixture. Return apple mixture to slow cooker. Cook, uncovered, on high 1 1/2 hours or until mixture is thick, stirring occasionally. Spoon into a bowl; cover and chill up to a week. Stovetop variation: Combine all ingredients in a Dutch oven. Cover and cook over medium-low heat 1 hour or until apples are very tender, stirring occasionally. Strain through a sieve as recipe instructs in Step 2. Return mixture to pan. Cook, uncovered, over medium-low heat 15 minutes or until thick, stirring frequently.

No, they were not baked. They were all white and shaped into a cone and the top part was dipped in the chocolate.

Ingredients:
Â2 pounds sifted confectioners' sugar
Â1 can sweetened condensed milk
Â2 cups flaked coconut
Â1 stick butter or margarine, melted (4 ounces)
Â3 cups chopped pecans
ÂDipping Chocolate (below), melted
Preparation:
Mix all ingredients together, shape into balls, then chill until hard. Dip chilled balls in dipping chocolate and let cool.
Store in airtight container in refrigerator.

Dipping Chocolate
Use melted chocolate almond bark or purchased dipping chocolate, or the mixture below

Â1 cake paraffin wax
Â12 ounces semisweet chocolate chips
Melt wax and milk chocolate chips together in double boiler. Dip candy in mixture then cool.

Here's one just with powdered sugar...they are fully coated in chocolate..but I'm sure you could just dip part of them...

I know you said they weren't baked... but this is a quick, eay, good recipe. May want to try sometime if you really like these sort of things.
