What's for dinner Saturday?

Rainy, rainy day. It rains, quits, then rains again. A very nice rainy day.

Tonight we're having Jasdip's chicken breast and the dilled cumcumber salad and pasta salad left over. Here's Jasdip's chicken recipe if you missed it before. It's delish!

JASDIP'S CHICKEN BREASTS

Dip in a melted butter, Dijon, Worcestershire sauce and minced garlic, then rolled in seasoned breadcrumbs. Bake at 350 for about 1/2 hour or more, depending on the thickness of the chicken.

white beans with rice and sausage. Cheap and easy, but good and filling.

Our friend dropped in on his bicycle this afternoon. He was out on a couple of errands and when he went home he realized that he hadn't taken his house key with him. So he dropped around to put in some time till his neighbours came home who have a spare key. I had taken a baked ziti out of the freezer, and knew there would be enough for 3 of us, so we had that and salads. Some oatmeal-carrot muffins that I made today as well. Terri, I made the hamburger bun recipe that you posted, we had breakfast burgers. I halved the recipe and only got 4 buns out of it, so I'll definitely make a full recipe next time.

Gosh, everyone's dinner sounds so good! I swear that I'm going to get a slow cooker; I must be one of the few that don't. I'm looking forward to those cool autumn evenings. I sort of miss our little outdoor chiminea....it was enjoyable to sit around a fire and chat over drinks. Jasdip, my eyes are FABULOUS! My vision gets sharper and brighter every day. I asked Robert this evening if he noticed that the TV reception had improved and he just laughed at me. I simply cannot believe that I have this vision out of my own eyes. My doctor somehow managed to finess my new lenses so that I feel like I have almost infinite far vision but still can see well enough close up that I've only needed readers for very small print. I can put on my makeup, read most things without my new little readers. I will donate all of my eye glasses next week. Pretty amazing. I had him, his technician, and myself dabbing our eyes last week at a checkup visit after my second surgery. I made him stop what he was going, I took his hand in mine, leaned close to him and told him how much my new vision meant to me, someone who had really been so burdened by terrible vision since I was a little, tiny girl. I wanted him to know that my life was changed.

Yes, nasty wet snow out, probably got 6 inches on top of what we had already. I don't have to get out so it doesn't bother me. I was looking for my two big muffin pans, they each hold 24 and in the process started cleaning on my pantry. I did find the pans and will use them Tuesday for my rolls I have to bake. Supper was more of the leftover potato soup and I made a new pie dough and baked a little of it and am putting instant vanilla pudding over it and will try that. I liked the crust. Thanks, Terri. No wonder you don't feel like cooking after all that baking and cooking your did over the holidays. I hope you're just tired and not coming down with something. (Fingers crossed!) Thanks, Pam. The only thing that happened was I got that cold/sore throat that's going around, but with my compromised immune system (whatever that means), it knocked me for a loop and I spent over 2 weeks in bed--half the time barely able to drink due to the sore throat. It sure feels good to feel half way decent!! I'm sure sorry about your sister and it must be hard on you taking care of her when you aren't used to it. So nice of your DH to be helping you out--a lot of men wouldn't. Enjoy the French toast! Hi, Mary--thank you. I haven't seen you posting much lately and was hoping you are feeling okay. I sure don't envy you that 22 degree weather. Ick! I think I have meatballs in the freezer i made earlier. I'll have to check. Shirley, thank you. I had some leftover of roasted chicken breasts. So, for dinner tonight, I'm having Chicken Tortilla Soup. Another cheap and easy, yet also filling.

Left over Chinese take-out from Thursday. Kung pao shrimp over white rice. I got 3 meals out of it. The first night I ate both spring rolls. The place just opened up and I had to try it out. Food was delish but they are cramped on space to eat it there so it will be take out for me.

Alex had chicken nugget meal from Wendys and I had part of a Wendy's chicken apple pecan salad. I'm addicted to them. Lauren's probably having smores, she's swimming/camping out with her girl scout group. They really aren't girl scouts anymore, but they all still hang out and do things with the troop leader and her kids.

Tomorrow we're grilling for the first time on our new firepit. I'm making shrimp/onion/mushroom/squash kabobs and rice patties my mom used to make. Haven't made them since Alex was little. You cook the rice (short grain), form into burger-looking patties, dip in soy sauce and put on the grill till they're brown and crispy on the outside.

Taking a short break from pulling weeds out back. I hate my backyard but am trying to be more active and clean it up. Every year I go through this and can't wait till I can build a large patio back there and have it fixed up and grass planted where the old pool used to be.

Niki's West, farmers market fresh food cafeteria.

Smoked sausage and kraut with 7 layer salad.

Ventured over to farmers market, but not many trucks there :o(

Bought pieces of fried chicken at WholeFoods, supplemented with coleslaw and potato salad from my local deli. All I had to do was heat the chicken. As my MIL used to say I'm "not from the cooks." But I am from the eaters.

I bought some frozen salmon filets at Target and had one of those for dinner along with some left over potatoes and carrots and a cucumber salad. I thought the salmon was a little dry.
