What'cha having for dinner?

Our weather has cooled off finally. We didn't even hit the 90 degree mark for the first time since May 26 (35 days). I've learned not to trust the weatherman, though, so I made shrimp and rice salad. It's good when the weather is hot. I'll serve it on a lettuce leaf with sliced hard-boiled eggs and cucumber slices around the edge. Club crackers to go with.

Are you all gearing up for the holiday weekend? I think having to plan dinner the night before a big weekend is the hardest ever!

leftovers...

There is the ribs from day before yesterday and potato salad..
Or a few pieces of Chicken Parm from lastnight with Polenta.

Or make a sandwich...

We have been having a beautiful weather week here in northern IL. Low humidity, cool nights, windows are open and ac is off!

I am grilling chicken, rice and corn on the cob.

A friend sneaked in Tuesday night while I was away and put a small Halloween wreath in my yard. It was made with gum balls, complete with stems rotating all the same way and spray painted orange. Nice bow, too. She had won the pieces as a trick or treat item at the local horticultural meeting, and her husband assembled it. That is all of my decorations and a fun surprise when I returned later that evening! I do have a black and white shirt with cats and pumpkins on it that I will wear to class Friday p.m. When I taught school, this was the holiday kids really liked although MY principal told me in the last year not to let the students make Day of the Dead masks (Mexican thing for Spanish class) as some parents would think I was satanic. Oops!

momj47, THANKS for the recipe...that cake looks amazing! I keep wondering though, who has 10 cake pans?!! virginia, it sounds like you made special plans to me. Working in the yard is a plan (which is mine this weekend); about whether or not it's special I guess depends on how you feel about it when it's done! gibby, your cooking plans and lake weekend sound fun. Enjoy all that good food! I had a dream yesterday morning we bought a lake place (without a boat), and it was across the street from the lake. I remember thinking I liked the view until a car drove past to obscure it for me. I guess that tells me if I ever get the opportunity, what NOT to do! eileen, Yumm! I may just have to add potato salad to my menu for the weekend. It sounds delicious, especially with my ribs. terri, I'm not finding any good strawberries yet since ours are mostly shipped in, so I'll bet it will be Father's Day for us too. Have a wonderful and tasty holiday! (I love the idea of London Broil.) My closest TJ's is in St. Louis which is a four hour drive for me. Obviously I haven't made that in an while! I'm headed to the meat market for some lean bacon, then off to find my ribs...

Red Stag is nasty in my book but the bar is selling a bunch of it... they mix it with coke from what I see. I was given a free shot when it was first stock... tastes like extra alcohol cherry brandy... think I'd rather have the brandy if I'm having a bit. Making iced tea for work. I'm glad it is so expensive to just buy in the store... my homemade is so much better! Ceylon with honey today. I cheat by nuking a coffee cup with a tea bag then mixing with cold water... still beats store bought. Free gatoraid at work!... if I make it. Felt bad because nobody made it yesterday and I was busy.... poor production workers were sweating like pigs. Have to get after the company... gatoraid is a safety item... cases of heat stroke disappeared when gatoraid was introduced. For less then the cost of a single ER visit the company can supply free gatoraid during the hottest six months of the year. Improves moral, keeps people working, saves the company money... so of course we slack and forget to keep it available.

Well Gene --- though you say your coffee pursuits may have scared everyone away - it seems to be the only thread that got anyone's attention! I have started to make my own coffee --- but just to save the cash! It's got to be cheaper than $1.00 a cup (16oz) if I make it at home, right? Course, after I bought the cheapest maker in town (maybe $29 for a Braun w/britta filter) and a thermal mug @ $8 and the flavored creamer, who knows? I bought some Folgers cause it was on sale. Just okay. I end up putting in so much creamer that it's probably about 1 gazillion calories and more than $1/cup. Sigh. On the shuttle arm - it's received rave reviews - especially the new "boom" with the damage detection sensors. I took a lot of robotics in my senior yr of engineering --- back when it was mostly manual!!! Ha - won't be of much help today. But, the telecomuting definately perked my interest. It will allow me to take some pre-med classes at the university now! How's the Miata? I used to have a prelude. Loved running around in it --- but much too small for my x-large dog crate these days. I'm on the other end of the spectrum now, driving a huge-mungus Armada. Impulse purchase that I dream of getting out from under. Sigh again. Have a good weekend all .... I have a lot of homework to catch up on - but I'm gonna get some shopping in sometime!

We just finished dinner. We the pork with an Asian-type sauce in the slow cooker with mashed potatoes and carrots.

I also have spaghetti sauce on the go. I'll use the hand blender to smoosh some of it up.

Having leftover stroganoff. DH loved it! Then peanut butter/chocolate chip/raisin/oatmeal cookies. :0) Just tried those cookies, home made and they were wonderful!

Patti, can you post your recipe? I need some new ones for the incoming students. One of them doesn't like cooked tomatoes, and well, a lot of things I cook have cooked tomatoes in them.

Including tonight's meal: skinless boneless chicken breast topped with fire roasted tomato salsa, corn on the cob and lemon meringue pie. I was going to make some rice to go with it but it seems like too much food right now. I may make something else for the kids to eat when they get home, though. Lauren's in the park with friends and Alex just went to the movies. He's seeing The Last Airbender and wanted me to go but I really not that interested in that movie and I want to relax since I have to go back to work tomorrow.

short ribs, mashed potatoes, sauteed spinach and a salad. Gosh it was good.

Hubby had steamed mussels in garlic wine sauce. I had cheese blintzes with sour cream. Been craving them.

Here you go, Kathleen. It makes a lot!

SHRIMP SALAD

1 c. cooked shrimp, chopped
3 c. cooked rice
1/4 c. celery, chopped
1/4 c. stuffed olives, sliced
1/4 c. pimento (I don't put this in)
1/4 c. green onion, chopped
1/2 tsp. each salt and pepper
3 Tbsp. mayo
1/2 c. French dressing

Mix everything together and refrigerate.
