We love Waffle House! We've never had bad food from there, and we have a "favorite" location with a couple of "favorite" waitresses.

BBQ sandwiches with corn on the cob & fruit salad.

We also enjoy Waffle House. Had lunch there last week. Today's dinner is carrots potatoes and a roast in the crock pot and corn bread ready to go in the oven.

I'm leaving Wednesday for a golf trip to Pinehurst with my lady friends. I said I would make a "healthified" version of nachos so yesterday I made unfried refried beans (8 hours in the slow cooker) and today I'm going to play around with nachos. Top some corn tortillas with the refried beans and some 2% milk cheddar cheese, bake them and top with salsa and guacamole. Trying to keep them a little low fat (not so low calorie but better than most nachos) I also made some gazpacho last night. So that's what we're having. Gazpacho topped with some crab meat and "healthified" nachos. YUM!

Wow georgysmom, I'm on my way over right now! That sounds SO good! I have an avocado at perfect ripeness that I'll bring along!

kittiemom, bbq sandwiches sounds very good. Do you like your sauce on the side of mixed with your meat? I'm a sauce on the side person.

georgysmom, my son was in 82nd Airborne, Ft Bragg, and I looked at finding a place in Pinehurst, and one I found was backed up to the golf course. Love love love Pinehurst.
Your healtified version of nachos sound great but gazpacho with crab meat is fine dining :o)

The sun is out, first time since Mon no rain.
For dinner it was hamburgers on the grill & the rest of the macaroni salad. Dessert was the rest of the banana pudding.
I think we are going to rent goats for the lawn it is so long.

DH and DD want steak every Sunday. I think I will have A Bubba burger and fruit salad-maybe a hot dog too!

Glenda, I like my sauce on the sandwich. I know there are differences in what people refer to as bbq. I grew up & still live in eastern NC. Our bbq is pulled pork with a vinegar sauce. Sandwiches typically have slaw. DH grew up in Charleston, SC, where the sauce is mustard-based. The best style bbq sauce is one thing we'll never agree on, lol.

I didn't realize your son had been in the 82nd. My deepest thanks for his service. I went to Fort Bragg so many times growing up. My dad is retired Air Force. My parents liked to stock up at the commissary because the prices were so good. We went to Fort Bragg because the commissary was much bigger than Myrtle Beach Air Force Base.

I had some of my spaghetti sauce over brown rice tonight. Tasted pretty good. Think I may have some applesauce later on.

Thanks, kittiemom. Son was injured in a jump and was medically retired. He loved being in the military. He and his military "brothers" are still very close.

had a hankering for egg salad, so since we'd gone to the movies earlier in the day, and we both had big tubs of popcorn, we had egg salad sandwiches and watermelon for dinner.

I don't make my own applesauce. I think I only tried doing that once and wasn't too impressed with the results. I don't eat it often so just buy the ones that have 6 individual servings to a pkg.

I fixed lunch for some of my kids today. Grilled hot dogs, sloppy joes, fried potatoes, soup beans, home made cornbread muffins, sweet corn, lime cake with lime icing and fruit salad. Some of the kids are still here working outside. No one was hungry yet but I don't like to eat late so I have already eaten. I had a left over hot dog, some potato chips, and a piece of cake. Iced tea to drink. Very pretty day here but a little on the humid side at times.

jeaninwa, I love egg salad sandwiches. Place I go when craving one serves it with chopped olives in it. Taziki's is the name of the deli.

We had fresh Silver Queen corn on the cob with rosemary, field peas, sliced Cherokee Purple tomatoes and fried okra.

Glenda, I love Taziki's. There is a new one in Trussville but the parking lot is always packed.

Glenda, I'm looking forward to Pinehurst. I've never been there. Sure hope we have good weather. I'm all packed and ready to go. Not too worried about DH. Our Wine and Dine group meets Wednesday night so He'll go out for dinner with them. He can rustle himself up a steak on Thursday. I'll be back home on Friday.

I grew the rosemary and the corn came from the farmer's market they have in Trussville every Tuesday. That was the best corn. The ears were very full and big. That's where I got the okra and tomatoes too. I also got rattlesnake beans (green beans). Week before last I got squash and Chilton Co. peaches too. Everything has been very fresh and delish.

Glenda~~~we got hot and lazy and just stayed home and ordered pizza;)

The best grits I ever had were in a waffle house. Each individual grain was FLUFFY. I asked for cheese grits and we all laughed when it was half a bowl of grits, a slice of processed cheese just sitting there, topped with the rest of the grits LOL.

But it was AWESOME.

Bubba Burgers are found in the meat depts frozen food section at Publix. They are designed to be grilled while stil frozen/ We love them! Also good cooked in my cast iron skillet for lunch!
