Fruit Pizza

I made Fruit Pizza for a pot luck today at my sister-in-law's and thought I would post it while the recipe is still in my head. It would look pretty with blueberries and red raspberries for the Fourth dessert.

FRUIT PIZZA

1 17 ounce slice and bake roll of sugar cookie dough

8 oz cream cheese, softened

1/2 c sugar

1 c apricot jam

1 c whipping cream

1 tsp vanilla

a little orange juice or orange flavored liquour for thinning the apricot jam

Grease a 12-13 inch pizza pan. Cut chilled cookie dough into 1/8 inch slices and arrange touching on pizza pan. With wet fingers, press dough into gaps and even out. Bake for 10 minutes in a 375 oven. Remove from oven and using the flat bottom of a cup, press the cup into the dough flattening the center, leaving a thin ridge of crust higher around the edge. Return to oven till golden--just a couple of minutes.

Cool cookie crust. Melt the apricot jam over low heat and strain it through a sieve. Thin with juice or liquour. Brush apricot mixture on the crust.

Whip the cream till fluffy and add vanilla. In another bowl whip the softened cream cheese with the 1/2 c sugar till fluffy. Gently whip into the cream cheese mixture 1/2 the whipped cream. Then fold in the rest.

Spread the cream cheese mixture evenly over cooled crust. Top the "pizza" with dry fresh or canned fruit--berries, canned mandarin orange slices, sliced apricots or peaches, any mixture you like. (Pineapple may be too acidic, so avoid that.) Then paint the fruit with more apricot mixture. Chill till serving time.
