What to do with egg yolks?

OK, my Pavlova's in the oven and now I have 4 egg yolks that I don't know what to do with besides scrambing them with some more eggs. Anybody have recipes that just call for the yolks?

If you're looking for a cookie recipe, I have one that calls for 2 egg yolks. And then you can pierce the other two, label them and freeze them, I think.

Was Dr. Carolyn a mutation from Galinas? Would that be considered a sport? I don't have Carolyn's book in front of me, but I think both are in there??? ***** I saved seed from Galina's Yellow and the next year when I sowed those seeds I got plants with salmon, pink, yellow, red and ivory fruits and all the plants were RL. Galina is PL. The ivory colroed one was far and away the best both in terms of taste and plant vigor, and I saved those seeds and wrote mutant on the vial. To this day I have no idea what kind of muation it could have been. A sport can refer to a mutation of the DNA in the seed or to a mutation in the cell of a plant, which are called somatic mutations. When a somatic mutation occurs one can have one wrong colored fruit on a plant with all correct colored fruits, and it was a somatic mutation that led to Yellow Riesentraube. Also with a port ( somatic) mutation one can find one branch with differently colored fruits or a branch with altered shape of fruits. I've had two somatic mutations of that type. At the same time a good friend in Utah, Steve Draper, had had the same thing happen and asked if I'd send him all my different colored ones. I did, and he also thought the ivory one was the best. Without telling me he listed it in the SSE Yearbook as Dr. Carolyn and was I ever surprised. It has some of the genes from Galina's which almost everyone says is a great cherry variety, and I agree. Marigene, I've always counted them as one egg too, unless they were HUGE (which does sometimes happen), then I count them as two. If you're making something that you think the small difference would impact, the conversion charts say that one large egg is 3 tablespoons. You could beat the egg up and measure it. I wouldn't bother, but you could. Annie

Any kind of pudding or custard. Creme Brulee, etc. Holandaise sauce, Bernaise sauce, home made mayo. Frozen custard/ice cream. Any recipe that includes curd. Like lemon or lime curd. So Lemon meriange pie, lemon bars, key lime pie, etc. Caesar salad dressing Any of these grab you? Susan

Those all sound good--as I was coming into the kitchen I thought of something else. Banana pudding. How could I forget THAT?

I usually have the egg whites from making chocolate pudding..LOL

We always give them to the dogs as a treat when we have egg yolks left. They love them!

Any of the above! I freeze them in a little zip lock bag or plastic container. I hate to just throw them away.

They really make breads taste so rich if you use them as part of the eggs the recipe calls for. I would also add them to pancakes or waffles.

I always gave them to my dogs. Now that I'm (temporarily) dogless, it's driving me nuts that I have to throw away egg yolks and chicken or beef scraps.

In most recipes that call for whole eggs, you can sub 2 yolks--you'll get a richer more flavorful product that way.

I was going to suggest those Polish fried cookies (no way I"m going to try to spell that)--but you only have 4, and they take a dozen yolks

Tips For Storing And Using Leftover Egg Yolks
Store Individually
Egg yolks need to be stabilized before freezing or the thawed product will be pasty and hard to mix. For best results store the yolks pre-measured according to future use. If the yolks will be used for sweet or dessert recipes, add 1 tablespoon of sugar or honey per pint of yolks. If the yolks will be used for savory recipes add 1 teaspoon of salt per pint of yolks. The stabilized yolks may be dropped, one egg yolk in each section of a ice cube tray and frozen. Remove the egg yolk cubes and store in a freezer style zip-lock bag.

Thawing Frozen Yolks
All the yolks to thaw in the refrigerator for about 8 to 10 hours.
