Good for you, trying new things. I'm afraid I'm too squeamish to try 'new' things. Even watching someone eating something I think is 'different' I get all gaggy. There is a guy on tV who goes all over the world and eats real (in my mind) strange things, I have to turn the channel, I get sick to my stomach. I have heard both Bison and Ostrich meat is way lower in cholesterol, so much better for a person.

A nearby farm sells buffalo meat, but I've avoided it because of the price. I'm sure it's a lot healthier than most supermarket beef--good to know it's tasty, too.

Was it safe to cook it less than well done?

I cooked it well done, just like you do any burger. I added some Uncle Bob's sauce to it and some onion and a seaoning salt, it was very easy. Just don't handle the meat very long or it can get tough. DH & I only each 1/4 lb burger so it will last us for 2 meals for only $5

I like the rich flavor of bison meat.

Ostrich was mentioned, and I have eaten that in ground patties. I enjoy it too. It is low in fat, so to retain tenderness I had to be careful not to overcook it.

I haven't had it, but I'd love to try it. It always gets good reviews. I wonder what ostrich would taste like? Where did you find buffalo?

I myself have cooked ground bison as a burger and everyone enjoyed.

I too have had ostrich, etc, but it was grilled on the bone and cut from a skewer right onto the plate served with dipping sauces

They eat alot of buffalo here. Our friends have a ranch that he sells to a coop and we buy from him. Yes it is expensive but if you get good meat it is real tasty. I have buffalo rib eye in my freezer right now-yes expensive, but oh so good. I cook them on my George Foreman grill, or bar b que. I do mix the burger with beef as it need some fat. Just google buffalo receipes and you will get a big selection. You can even order it by mail. Won't buy it in the store thought. Yes it can be tough as it depends on who raises it, how it processed, and the age of the calves. Ours has no hormones etc.

They serve buffalo burgers on Catalina Island off the shore here in Southern CA. I've eaten it a couple times. I didn't really notice the flavor being much different from beef.

I've had Ostrich (or was it Emu?), on a cruise and again, don't remember too much about the flavor though we all sat around the table saying it "tasted like chicken" :-)

Buffalo/Bison tastes much like grass feed beef.

It will depend on what it's raised on and how lush that is.

I don't have a problem paying more for things that are raised humanly and properly. They are better for our bodies and the environment.

We buy 1/4 of a buffalo every winter, from CO. The first time it was grass fed/free range and the 2nd one was corn fed. We liked both but the corn fed one was SO tender and tasty. I like buffalo sirloin better then beef.

Marie, I first read your post as you have buffalo eye in your freezer! Bet he's watching you! LOL.
I've had it, very good.

I bought the ground bison at walmart, it was close to the ground beef.

DD worked here for years. We've had all kinds of bison.Ribeye,prime rib,burger,jerky,hot dogs,New York Strip, tenderloin steaks melted in your mouth!! It tastes better than beef. It is very,very lean meat. Low cholesterol. If it is tough its because it is overcooked and probably at too high of heat too long. Low and slow is the way to cook it.

My husband loves bison hamburger patties on the barbecue. We have at least one bison "farm" here on Long Island, but I can get the meat in local supermarkets. It is expensive. Never tried ostrich. We ate turtle in New Orleans. I once saw canned rattlesnake meat in a gourmet store, too scared to try it.

I remember eating buffalo as a kid and to me, at least at the time (kid's palette) it was pretty much the same as beef. Never tried ostrich.

This brought back a memory growing up when we were out somewhere and there was a roadside stand selling some "different" kind of food. Something we had never had. Dad asks if we want to try this new stuff. Hey it smelled good to me, was cooked on a grill and was served on a bun, how bad could it be? Plus we didn't get to "eat out" very often and were getting a little hungry. So we tried that strange new stuff. It was a grilled sausage.... called "bratwurst"! Not something ever served in the Sunburg Cafe, that's for sure!

My favorite burger joint serves bison and ostrich burgers. I prefer the bison. Like someone else mentioned it is very lean so even thought I cook all the pink out of my regular burgers I eat the bison ones medium with a bit of pink in the center so they stay juicy.

Bought a small roast today. I'm eager to try it. The butcher recommended cooking it low and slow (like nodakgal said), and serving it medium rare.
