Ground turkey - delicious flavor with NO grease!

I prefer ground sirlion. Love the flavor.

I'm with ground chuck -- then an egg, some worshire [sp]; A-1 sauce, pepper, salt, 1/2 pack of dried ranch dressing, and some quick oats... mix up & let stand a while - make the patties... grill... yum!

Have been known to make buffalo burgers! Great!

I prefer beef-80% lean. Anything higher is expensive and too dry.

I use to use ground chuck., but don't cook out anymore.

I just went and had a bison burger for lunch today. I compromised by having fries for a change.

Should have said Bison, but buffalo came to mind first.

First one I ever had was at Philmont New Mexico, boy scout leaders camp.

I have bought it frozen, haven't looked for it in years.

sheesh, I buy whatever blend is cheapest.... make into patties. Put a little seasoning on mine, onion powder only on hubs and grill away. Always to med rare. Very good, either grilled or pan fried.
Never tried bison... maybe someday if the price comes down. Not into gamey meat... what does it taste like?

Glenda in America bison is also known as buffalo. True buffalo are only found in Asia and Africa. So when referring to the meat buffalo/bison are interchangeable.

wildchild, I knew that, but when posters mentioned bison, I just posted that I used buffalo instead of bison.

Ted Turner has a restaurant here, that serves buffalo bbq and burgers. Good stuff.

When I went to China, we ate a lot of water buffalo!
Even saw them in the rivers on a cruise :o)

Glenda how does the taste of water buffalo compare to bison? The restaurant I had my Bison burger at today also serves ostrich. I used to love the buffalo(bison) Indian tacosat the fair. Unfortunately they aren't there any more.

The best I have ever had was a mixture of 3/4 regular lean ground beef and 1/4 ground bacon. Our supermarket use to carry it in the summer, but I haven't seen it for a few years. I forgot all about it until you asked this.

I almost never eat red meat, (maybe a bit of venison now and again) so I have to say ground turkey breast or chicken breast. Yummers!!

Africa, I had farm raised ostrich, crocodile, giraffe, zebra, all tasty at the Carnivore restaurante the night before we headed back to the good old USA! Very tasty!

Deer/Venison

Mixed 25% by weight with lean beef. Not beef fat; lean plain beef.

Yum, yumm! It's been our mainstay the past few days.

I no longer eat red meat, so all my burgers are made from lean ground turkey. I enjoy the flavor, but still get a craving for an old fashioned burger sometimes. :)

I'm with Jannie and Wildchild. Gotta have some fat or they taste dried out to me. I was reading a recipe by Bobby Flay the other day that called for ground sirloin--then he added canola oil to it! Guess that may be healthier, but just give me the plain old beef fat!! (And Paula Deen puts butter in her burgers, of course.)

I use 80% ground chuck; have never tried Bison. My daughter worked for years in an organic grocery store before she moved. They sold plenty of Bison meat; I should have tried it while I had her discount. :(

I don't get too hung up on it and usually see what's on sale. I often aim for about 80-85% for pan frying (preferably in bacon grease) and fatter for grilling. I don't know many people who can grill burgers though. I don't like meat raw but I don't like it burned either and there's this idea out there that you have to use superhigh heat with flames shooting all around and on the meat until it's the color and texture of a hockey puck.

I used to go with very lean red meat but of course they ended up without good "burger" flavor. There is a reason "greasy spoons" were so well known for their great burgers - the fat is the flavor. A friend used to tell me that if I bought a burger and it didn't leave a greasy mark on the paper bag, it wasn't any good *LOL*

I buy fatty hamburger and add some raw cooking oatmeal and an egg to actually hold the fat inside and to keep it together as it cooks. It's incredibly bad for you but it's also incredibly delicious.

We love elk burgers - the elk in this area eat stuff which makes the meat wonderful, better than moo meat - we also have animal fat added when having it ground up for us as elk and most venison I know if is *extremely* dry.

This ground elk meat is so good that we don't even bother having the elk meat cut up into anything other than the groud meat anymore - everything else really is too lean and to cook it to tender is to leave it too raw for us.

Turkey burgers are just ok and much healthier but I have made ground chicken and couldn't stand the flavor.

Correction: I do like ground chicken in some recipes (like a recipe I have for chicken sloppy joes, it's *wonderful*) but I don't like it at *all* as a patty burger.

Anyone ever try Bubba Burgers?? Toss them frozen on the grill. They are my favorite!!!!!!!!

Yes, I have used Bubba burgers. They are a bit expensive here. Find them in the frozen food section. Don't they have some different varieties? They were good.
