What's For Supper this Tuesday Evening?

I have been cleaning black raspberries again today, so far I have 14 quarts in the freezer. I sure hope to get more. For supper I am having breaded tenderloin sandwich and strawberry shortcake. I might just have to brew up some fresh iced tea to go with that! Strawberries were cheap yesterday at Meijer, a dollar a pound. Do you know what your are having tonight for your meal?

Yummy!

We're having a beef gravy (made from chunks of canned beef) over mashed potatoes with cooked fresh broccoli.

Just finished.
Baked boneless chicken breast that was marinated in honey and mustard, fresh broccoli sauteed in oil and herbs and boiled new potatoes in butter and parsley.

We like our dessert a little later:
Fresh cut strawberries and blueberries drizzled with honey over vanilla ice cream.

Yes, the berries are fantastic this year.

Forget tonight, it will be some surprise leftovers. Last night we had Welsh Rarebit. It was made with peas, onions, yellow pepper and ham in the creamy cheese sauce over toast. YUMMY! That is another Irish/Scottish type meal. Since we have been talking about Irish food, I have discovered that my mother was very Irish. I was only 19 when she died, so we really hadn't "talked food" very much, but all these things mentioned are regular foods from my childhood.

Well for lunch, I had Mrs. Murphy's Meatballs. They are a kind of porcupine meatball I found online with onion, cabbage, celery, green pepper and rice in the meatballs. I used Campbell's Vegetable Beef soup (ABC noodles) rather than the tomato soup to cook them in. I like that flavor better, which a friend used in her porcupine meatballs eons ago. You put them in the frying pan with the soup and a 1/2 can water raw. Cook them 45 minutes on low, turn them over for another 45 minutes, add a little more water if necessary. Nice lunch.

I breaded some chicken breasts and baked them. Boiled cauliflower (we have just discovered how good cauliflower is, boiled. I aways saute it, which is so delicious. As long as the cauliflower isn't cooked to mush, we really like it boiled. I also cut a sweet potato into fries and roasted that. It's so hard for me to believe that it's so much more healthy than regular potatoes. I find it so sweet, almost too-much so.

Years ago in college my brother tried to make beer bread by following our mother's recipe. However the recipe had a couple of specific ingredients and steps that he felt "couldn't possible make a difference". One was that you should use a can of warm beer, but he only ever bought bottle beer so he used one of those. It also said the ingredients should be mixed in a glass bowl with a wooden spoon, but his college apartment kitchen only had a metal mixing bowl and a sturdy plastic spoon. Well, some part of those specifications was clearly necessary or he did something else wrong, because the bread rose not-at-all. It was thick and dense and a little chewy, about the consistency of brownies. You might think beer-flavored "brownies" might be a hit with male college students, but no, not so much.

Taco Bell for me, taco salad. Lauren already had eaten when I called from Frankfort a little while ago so I just picked up some Taco Bell. Didn't know Alex would be home by the time I got back....he's asleep. I'll make some spaghetti sauce for him if he wants some when he gets up. Later will have some watermelon. I hope it's good. Ate it nearly every day when I was in Hawaii and it was so good. Store bought melons. Half the time I get an old one, or one that's not ripe. Can't wait for my garden melons to be ready.

made vats of tuna casserole today. one with peas one without, (im the without) love peas, just not in that. also made choc chip cookies...was going to make chipwiches but just didnt have the time.

Went to a fund-raiser picnic tonight....hot dogs, cole slaw, baked beans, etc. Tasted pretty good, too.

Had to take Georgy to obedience class tonight so it was just cottage cheese and fruit for me.....DH had chicken salad and potato salad.

A really wonderful salad...
Haricot Vert, baby lettuces, mushrooms, fat-free feta, kalamata olives, tomato, purple onion ,jalapeno slices and cold roast beef.
Dressing was just olive oil and tarragon vinegar.

DH had chicken with gravy and a baked potato and salad and I had two teeny baby grilled lamb chops with part of a baked potato, no butter and a vegetable salad.
There is fresh rhubarb cake for dessert.

I was good and had a big tossed salad....then I got hungry later and ate a can (yep-a whole can) of sliced pears in heavy sryup....then later some cottage cheese....then even later I craved mint chocolate chip ice cream and actually drove to a Stop'n Go which I knew would still be open late and bought the ice cream PLUS some potato chips. Ate ice cream right out of the box (the heck with a bowl) and ate half the bag of chips. Ugh. At least I didn't buy the bottle of Coke.

We had a big tossed salad with slices of grilled steak on top. Lots of fresh stuff from the garden right now.

I went to the buffet today, well, guess it was technically "yesterday" as of now. The potato salad and coleslaw are a bit old now so I don't want to risk it and I haven't eaten out for quite a while now since I got the stove and frig replaced. It was so hot and humid (90+Â°+ temp & 70+Â° dewpoint) I didn't feel like cooking anything and thought it'd feel good to go spend some time in a cooler place so I decided to treat myself. It was pretty good. I even had some coffee and no way would I have had that at home with the weather as it was.

OT a little, but just a side note: an hour later when I went to bed, after my "Tuesday supper" above, I got the worst stomach cramps and spent the next half hour you know where!
That'll teach me - I hope.

Gosh Ang! You make me feel lazy. LOL! We will have Chicken Marasala with Spinach and Linguine from Corinnas. I picked it up yesterday in Katy. LOL!

Denny grilled pork chops, I made baked potatoes and opened a can of "Grilling Baked beans"

That was it...and it was good.
