Basic fruit cobbler for peaches, strawberries, blueberries, blackberries, raspberries. So easy!

Basic fruit cobbler

1 cup all-purpose flour

2 teaspoons baking powder

3/4 cup white sugar

3/4 cup milk

1/4 cup butter

2 cups sliced fresh peaches

Optional: cinnamon or nutmeg

1.Preheat oven to 325 degrees F (165 degrees C). Melt butter in a 9 x 9 inch baking dish.
2.Blend together flour, baking powder, sugar, and milk.
3.Pour batter in baking dish over the butter. Sprinkle fruit on top of the batter, do not stir. Bake for 1 hour or until golden brown.

Banana Split Dessert

6 egg whites
3/4 tsp. cream of tartar
2 C. sugar
3/4 C. chopped nuts
2 C. finely crushed soda crackers
2 tsp. vanilla

Beat egg whites until foamy. Add Cream of tartar. Keep beating while slowly adding sugar. When peaks form, fold in cracker crumbs. Add nuts and vanilla. Bake in slightly greased glass 9 X 13 at 350, 15 - 20 min. until slightly brown. Cool spread with topping and garnish with chopped nuts and maraschino cherries. Refrigerate at least 6 hour or overnight. serves 12 amply.

Topping: Combine 2 packages of Dream Whip (whipped according to directions), 4 sliced bananas, and 1 medium can crushed pineapple, drained.

Actually, my very favorite is baked alaska pie with chocolate, strawberry and pistachio ice cream, but that's a little harder to transport.

Fresh strawberries or fresh watermelon.

Quick and easy peach cobbler

Peach Cobbler Dump Cake Recipe:

Ingredients:

2 (16 ounce) cans peaches in heavy syrup
1 (18.25 ounce) package yellow cake mix
1/2 cup butter
1/2 teaspoon ground cinnamon, or to taste

Directions:
Preheat oven to 375 degrees F.
Empty peaches into the bottom of one 9x13 inch pan. Cover with the dry cake mix and press down firmly. Cut butter into small pieces and place on top of cake mix. Sprinkle top with cinnamon.
Bake at 375 degrees F for 45 minutes.

Fresh in season summer fruit.
Homemade pound cake. (I just made Pioneer Woman's Perfect Pound Cake for the first time Saturday.) it will be on the make again list!
Lightly sweetened whip cream.

Fruit salad with just fruit, no weird additions like coconut or marshmallows, just lots of yummy fruit. I always add sliced bananas at the last minute.

For dessert, I like to bring cupcakes or cookies. It's portable, simple, and doesn't have to be temperature controlled.

Cold and refreshing....a big container filled with canteloupe and honeydew balls and seedless grapes. Cover with gingerale and freeze overnight. Break apart in chunks to serve.

This zucchini cake recipe is absolutely delicious! I have had it for so long that I do not remember where it came from. It is moist and tastes similar to carrot cake, and you can use young or big old tough zucchini.

ZUCCHINI cake

2 c sugar
1 c cooking oil
3 eggs
2 c flour
1 tsp baking soda
1 tsp salt
1 Tbsp ground cinnamon
2 c shredded, unpeeled zucchini, packed (about 3 smaller ones)
1 c very finely chopped walnuts (best to chop in the food processor)
1 Tbsp vanilla
Cream Cheese Frosting

Scrub zucchini skin well to remove all grit before shredding it--use a vegetable brush if you have one.

Mix sugar, oil and eggs on medium speed of mixer for 4 minutes. Fold shredded zucchini, nuts and vanilla into sugar mixture. Sift dry ingredients and fold into batter. Bake in a greased tube pan at 350 degrees for 60 to 65 minutes. Cool in pan on cooling rack 20 minutes and turn out on rack to finish cooling.

Cream Cheese Frosting

3 c powdered sugar, sifted
2 (3 oz) packages of cream cheese, softened to room temperature
5 Tbsp butter, softened
1 tsp lemon extract.

Beat thoroughly and frost your cake

purchased angelfood cake...slice and lightly sugar (if needed) strawberries....add dollop of cool whip...easy, fast and really good....

I'm late posting, but a couple of our family-favorite desserts for after a cookout are either Yum-Yum Cake or Rhubarb Delight. If you have to travel or will be at a location where it's easier not dealing with refrigeration or plates & forks, then frosted chocolate cupcakes seems to always be the #1 hit!

What are Eton Mess (karenmay) and Yum-Yum Cake (party_music)?

The original recipe for Yum-Yum Cake was something my aunt found many years ago and it used a box cake as the base. I always start by making my favorite yellow cake... then the "yum yum" topping is a mix of vanilla pudding and cream cheese, crushed pineapple, and cool whip (or whipped cream :) on top. I sometimes add m. cherries on top for the kids or as decoration. Must keep it refrigerated and it makes a nice cool treat on a summer day. I can try to find the original recipe if you'd like.

Definitely fruit pizza - it's yummy and pretty!

Yes, fruit pizza is yummy for sure, and a good summer dessert. It is easy to make using a tube of sugar cookie dough, fruit and cream cheese. I can look it up if anyone is interested. For chocoholics, Chocolate Tortilla is also yummy, and I thought I had it on my computer, but I don't apparently.

Good old fashioned strawberry shortcake is always a HIT!

Ina Garten's coconut cupcakes. Makes 2 - 2 1/2 dozen cupcakes and everyone loves them. I brought some to our cart attendants and one of the guys said "Mrs. T., you want to know how good they were? I felt like lighting up a cigarette after I ate one." LOL

Suzieque, Eton mess is a delicious mix of whipped cream, fruit and roughly chopped up meringue, all gently stirred together. Strawberries, raspberries, banana or pineapple all work well. Yummy!

FANCIFUL FRUIT PIZZA

18 oz pkg Sugar Cookie Dough
8 oz whipped cream cheese
ý cup Orange Marmalade
1 T. sugar
1 T. water
Assorted fruit

Cover 14 inch Pizza pan with foil. Slice cookie dough into 1/4 inch slices; arrange on pan with edges slightly overlapping, press lightly together to seal. Bake at 350ð for 10 minutes or til golden brown. Cool; remove from foil. Spread cream cheese over crust; sprinkle with sugar. Arrange fruit. Combine marmalade with water and spread over fruit.

I use pineapple tidbits, mandarin oranges, strawberries, blueberries, etc.

Sue, I've got a question about the fruit pizza. How do you keep the sugar cookie from getting too soft? Do you have to eat the dessert pizza immediately? A friend made sugar cookies topped with cream cheese and just sliced strawberries. The cookies needed to be eaten with a spoon.

My fruit pizza recipe includes the directions to remove the crust from the oven and to press down on the cookie all around the pizza pan with a flat bottomed tumbler or custard cup, leaving an edge of 1/2 inch to hold in the filling. The cookie is nice and firm that way.

APPLE OR PEACH COBBLER
Mix:
5 cups peeled, tart apples or ripe peaches (about 6 fruits or 1 1/2 pounds)
3/4 c sugar
1 tsp vanilla
1/2 tsp cinnamon
1/4 c water for apples only. Peaches are juicy enough
2 Tbsp flour
1/4 tsp salt
1/8 tsp almond extract for peaches as well as vanilla
Turn into an 8 x 8 baking dish. Dot with 2 Tbsp butter.

Make batter:
Combine and beat with wooden spoon till smooth--
1/2 c flour
1/2 c sugar
1/2 tsp baking powder
1/4 tsp salt
2 Tbsp softened butter
1 egg, slightly beaten

Spoon thin dabs of batter evenly over the top of the apples or peaches. There will be gaps and it won't look perfect. Bake in a preheated 375 oven for 40 minutes or until the top is nicely browned all over. Serve warm or room temperature either plain or with whipped cream or ice cream.
Serves 6-8.

I just made this cobbler with my daughter who had some peaches that were not particularly flavorful to use up. I had forgotten how yummy this recipe is, but she had not. It is one of her favorites. You'd never know that the peaches were less than perfect.

alice_sj ,I think the problem would be from using a home-made, possibly thicker, sugar cookie rather than the purchased one, sliced to 1/4 inch thickness. Also, bake, cool, remove from foil.

Here's my recipe for Fruit Pizza. It will keep for several days in the refrigerator (but it is best the first day). Since it is near the 4th of July, it would be nice to use strawberries, blueberries, and bananas.

FRUIT PIZZA

1 roll Slice and Bake sugar cookies - baked according to package directions. Put cookies close together so there wonâÂÂt be any space between them. Bake in a regular-sized pizza pan. COOL.

Mix together:
4 oz. Cool Whip
8 oz. softened Cream Cheese
1 Tablespoon Sugar
1 teaspoon Vanilla Extract

Spread mixture on cooled dough, almost to edge of pan.

Top with circular pattern of any fresh fruit you like. I use canned peaches, and whatever other fruit desired (i.e., kiwi, berries, etc.). Bananas are great, but put a little lemon juice on them first so they donâÂÂt turn brown (if they are completely covered by the glaze, you don't need to use the lemon juice).

Then spread peach or strawberry pie glaze over the top
