Most of my dishes I freeze in small corning bowls for work lunches.

Larry would eat this every day if he could. I double it and freeze a 9 x 13 dish that he can pull out and heat up if I don't feel like cooking.

Salisbury Steak

2 lbs Lean Ground Beef
2/3 Cup Bread Crumbs or Cracker Crumbs
½ tsp Salt
½ tsp Pepper
2 Eggs
Half a diced onion

Slice the other half of the onion for the gravy
2 Cans Condensed Beef Broth
Package of sliced mushrooms
4 T. Cornstarch
4 T Water
2 Â Packets Brown Gravy Mix

Mix First 6 ingredients together and shape into ovals about ¾ inches thick. Cook patties in a skillet turning once until brown on both sides (about medium rare). Set patties aside on a dish. Saute the mushrooms and onion. Add one can of beef broth. Heat to boiling. Mix the other can of beef broth, water, cornstarch and 2 packets of gravy together (I shake it in a jar). Add to boiling mixture with a wire whisk and whisk until gravy begins to thicken. I then pour the gravy over the patties in the casserole dish and bake at 350 until bubbly.
Serve with rice, mashed potatoes or noodles.

I make breakfast burritos, 50 at a time and freeze them for DH's breakfast. That's enough for 10 weeks if I don't eat any.

I'd say we average homemade but from the freezer 2 nights a week and it makes life MUCH easier. For me it is just as easy to cook two pots of beans as it is to cook one, so I stock up the freezer.

Just about everything. Cooking for two is hard for me so we always have leftovers. I love twice-baked potatoes, so I may steal your idea. I have a food saver and it'd be easy to seal up two in each bag. Thanks for a good idea!

Patti43, I froze the prepared twice baked on a sheet first, then wrapped & bagged them, otherwise they were too soft.

Sausage balls!

oops, sausage balls are not a meal, but I could make a meal out of them :o)

I do the breakfast burritos too. And regular burritos.

scrambled eggs
cooked ham, bacon, sausage or chorizo
shredded cheese

Just roll 'em up tight in a flour tortilla and freeze

Also do refried beans, meat of your choice seasoned with taco seasoning and shredded cheese

These also freeze very well. I love them.

Swedish Pancakes

3 eggs
1 Tbs. sugar
1 cup flour
1/2 tsp. baking powder
1+1/2 cups milk
3 Tbs. melted butter

Whisk flour, sugar, and baking powder into bowl. Add eggs one at a time. Mix well. Add melted butter and milk, stir until smooth. I make double batches and freeze with waxed paper in between and just pull out what I need. Put frozen crepes in microwave and DEFROST. It just takes a few seconds.

Spread with butter and jam or honey or syrup
Fill with fresh fruit, roll and top with whipped cream
Fill with anything you would put in an omelette and top with hollandaise or a light cheese sauce
