Let's talk tuna salad!

Tuna packed in oil

Drain most of oil

Crumble the heel of a loaf of bread to soak up the rest of the oil (leftover from my childhood, when mom had to stretch one can of tuna)

Chopped green onions, dill pickles, celery

Light on the Best Foods mayo

Dash of dried mustard, salt and pepper

Served in a sandwich, or on a bed of lettuce, or on saltines or stuffed in half an avocado.

I'm making tuna salad tonight. How do you like it prepared and served?

White albacore packed in water.
Drain water....feed to cat.
Add chopped onion, chopped celery, a sprinkling of raisins and just enough Hellman's mayo to hold it all together.

Tuna Salad
Packed in water and drained
4 hard boiled eggs, chopped
2-4 celery ribs diced
2 Tablespoons of DelMonte Sweet Pickle Relish
Few tablespoons mayonaise
1/4 tsp mustard
1/2 tsp paprika

Serve with Wheat Thins. Yum.

Right now the Silver Queen is primo and we have been having lots of it. We have 2 farms within a mile who are owned by friends so we switch between them. Usually Silver Queen but any super sweet white is good as long as it's not too big. Tonight I had leftover corn and squash with some leftover rice. Yesterday we had grilled chicken legs and corn. Anybody else have chicken legs on sale for a month or more for a dollar a pound? We like them bbq'd so the freezer has plenty. As long as the corn gets cooked within couple hours of picking I can eat it reheated in microwave the next day, so we usually boil a whole dozen for the two of us then eat them later too. I can eat mostly veggies anytime of year, but in summer, it's the norm. Like Linda, my wife Christy starts getting cranky if she doesn't have meat pretty often. Smiles. We have a new dog now, Jessie, and I taught him tonight how to eat corn off the cob. Oh, the corn has lots of butter and some sea salt but no pepper, ever. I don't eat black pepper if I can help it. Tomatoes are a bit late here and when they get started I can often eat just them, plain or with mozzarella and basil, or a nice tomato sandwich with lots of mayo. Sometimes I have a stuffed tomato with chicken or tuna. We grill alot and I try to grill squash or eggplant when we have meat on the grill anyway. I like to use the grilled eggplant for quesadillas during the week. Salads are any kind of mixed greens, tomaotes, mozzarella and a little bit of pickled cauliflower/gardinier. I like hot dogs once in a while. Just mustard, good old yellow mustard, with a bit of relish once in a while. Sauerkraut I usually just eat in the winter. I also like hot dogs cut up into baked beans with buttered french or whole wheat bread on side. Grilled dark but juicy inside. Yup.. nods. We eat a lot of fruit too. I made peach ice cream tonight and had sliced peaches on top. I use strawberries as ground cover in my front perennial bed, so I have some in the freezer for my yogurt smoothies. I have smoothies a lot for lunch, then freeze a little of it for late night snacking. Plain yogurt, half banana, some frozen fruit and a bit of milk to make it go through a straw. Oddly I don't like juice in my smoothies. Breakfast year round is still pasta or chili or homemade soups [navy bean or lentil usually], whatever I made in bulk that week or took a gallon of out of the freezer. I like my breakfast to be the heavy meal, then some lighter fare for lunch and dinner. I will freeze some peaches too as they get cheaper, they just started. Oh yes, I have black raspberry bushes so they make it in the smoothies and elsewhere too. Good thing I just ate that peach ice cream. Heh....

My favorite quick, easy meal in summer ~ when I'm not wanting to heat up the oven . . . and my kitchen~ is my shredded beef enchiladas. I cook up a big roast ahead of time, shred it and then freeze it in meal-sized portions. I reheat it and roll it in corn tortillas; top with my homemade red chile, a bit of shredded Monterey Jack cheese and pop into the microwave, covered with wax paper. Another favorite is a big, hearty salad that I add meat, shrimp or fish to. When I make any meat or fish dish, I always try to cook extra in order to make this salad the following night. I like using garbanzo or black beans, chopped walnuts, pecans or pine nuts, mixed greens, diced cheeses and even fresh fruits to these, depending on the meat/fish I'm using. I make my own salad dressings using EVOO, one of my many different vinegars and fresh herbs, etc. This way, I know we're keeping the calories and fat down. I also like to dip my salad into a small dish/bowl of dressing instead of dousing the whole thing. I tend to use less that way. I serve a few whole grain crackers with this instead of bread. We top them with olive tapenade for our bit of needed carbs. Another fav is a couple slices of grilled meat or fish, a nice Caprese salad and bruschetta topped with sauteed Swiss chard. I do a quick saute with the chopped chard, EVOO and a clove or two of diced garlic. I add a bit of salt to taste when finished. Thanks for this great thread, Oakley! Lynn

Thank you for replying, I wasn't going to come back into the topic but it's been bothering me all day because all I did was jokingly say "Ick" to a food I don't like. What I notice here is that others have made rude comments about Miracle Whip, a food *I* use, but were they called out on their "rudeness" to me? No. Why is it ALWAYS me, especially when I go out of my way to let you all know I'm laughing, just as I would if you were sitting before me. I'm not laughig AT you, I'm laughing at an ingredient in food! I have to disagree with you about people adding the ingredients that I specifically asked NOT to be added. Just as everyone goes into other's topics and apologizes for "hijacking" it, this was MY topic, and MY question. I'm not saying this to be mean, but I was the one who wanted some recipes which do not use fruits and nuts. Unless it was a fruit salad. :) So yes, when I get a reply I expect it to be for ME, and others are more than welcome to chime in. It's no different than if you did a topic on the other forum asking for painting advice on any color EXCEPT black, and everyone replied showing you their black rooms. lol. So I don't see how it was wrong for me to RME when I got the recipes with fruits and nuts. When we do a topic asking a specific question, should others reply for the sake of themselves, or to answer the OP's question? Lastly, I cannot believe how the word "Ick" offended others when no offense was meant at ALL. You all don't know me, but I'm known as the "Peace maker". Sure, I get my feelings hurt just like everyone else does, and I hate arguments especially if they're so trivial as me laughing and saying "Ick." I find it extremely rude to correct people on something so minor especially when it's obvious there was no intent on insulting anyone. I said it good heartedly. Just as I said the word "Yankee." Others have been calling themselves Yankees on this board all the time, but when I say it, it's considered offensive? I just get the feeling that some people here, but not all and just a minority, love to nitpick and bicker with others ad nauseum. We were having a fun and fascinating conversation about sandwiches and Miracle Whip vs. Mayonaise, until... I even found a place that sells the Mayo the "southerners" here like that I can order it online. Now, as far as being southern, I think I said this before. Both of my parents were born and raised in southern Virginia, and moved here to Oklahoma after they married. My father is a graduate of VA. Tech. Every single person in my family except my brother and myself are from Virginia. My uncle had a tobacco farm. I grew up with parents dipping cornbread in Buttermilk. ICK!!!! lol. See? I'm laughing about it, I still laugh at it to my mom when she does it! It's not a derogatory term because it's FOOD. But if you were to serve it to me, I'd be polite and eat it and if I didn't like it, you'd never know. Talking about food tastes is one thing and to turn it into nasty, nasty personal insults is another. Which I know you didn't do. I do however take offense because you are insinuating I am not "sophisticated" because I don't like fruit and nuts in my sandwiches. What? You have no idea what I eat. BTW, if anyone even cares at this point, I decided to make some Vegetable Bars and Tuna Salad finger sandwiches. :)

There is a skating rink here that sells big dill pickles. Then they freeze the juice in little paper cups with a stick in them and sell "picklecicles." How's that for creative thinking? :)

Solid white tuna packed in water
Drain water, feed to cats
Run interference to keep dog from getting it
Mix with:
chopped celery
green onion
black olives
halved cherry tomatoes (a tasty homegrown variety like Black Cherry)
Serve on lettuce

Drain the tuna, add some miracle whip and sliced olives , the kind stuffed with pimiento. This is my Mom's recipe.

Just add mayo to the drained tuna with salt and pepper, and spread on bread, with a lettuce leaf. Simple, but that's the why I like it!

Albacore tuna packed in water, drained and flaked with a fork.
2T fresh chopped dill from the garden, 2-3 stalks celery, diced; one bunch green onions, sliced (whites and about 3" of green part). Enough Hellmann's mayo to hold it together. Fresh ground black pepper to taste.

Very similar to what everyone else uses except I add dried dill and a splash of lemon juice.

Just told Dh this afternoon that it had been forever since I have had tuna. This post makes me really want it. Guess I am going to have to go to the store now!

Tuna packed in water drained for the cat
Mayo
Diced onions
Diced pickles
diced eggs.

1.Tuna packed in water
2.Drain and put into a small mixing bowl.
3.Add sweet pickle relish, about 1/3 of the tuna volume, or more.
4.Add just enough mayo to hold the mix together.
5.Make sandwiches using whole wheat bread.

Optional:
1. Toast bread.
2. Add lettuce leaves.

I make mine pretty much like everyone else. I use hard boiled eggs in mine, some celery, pickle relish, mayo or Miracle Whip, and drained water packed tuna.

try using the olive oil mayo...it is really a nice flavor alternative

Add loads of Dill and Black pepper, and sometime Tarragon.

I've never tried it with olives. Love them, so I'll have to try.

Can of tuna, packed in water. Drain, give water to cat...hard boiled egg, sliced green olives, green or purple onions, Claussen dill, celery, sprinkle of Tony's seasoning.

anyway I can get it...Tuna Salad is probably my favorite sandwich...And I probably never make it the same way twice. I like it as you all mention above but also the same way I make my chicken salad....diced celery, chopped walnuts, and a handful of dried cranberries.

I much prefer it packed in oil but it is hard to find around here. I buy solid albacore in the 8 packs at Sams Club ....

If I am using the tuna packed in oil, I just leave some of the oil and use that as the base to my dressing...

Okay...I read this earlier and HAD to make some! LOL

Albacore tuna, Miracle Whip, mustard, pickle relish...I will HAVE to try olives some time..love them!...and finely chopped onions.

When I was a child, I didn't eat much of anything..VERY picky! In the summer we had 2 weeks of VBS from 9-3, so I would get a packed lunch. My mother would make me a tuna sandwich on buttered white bread and cut the crusts off, a handful of Cheetos and orange pop!!!! I thought I had died and was in heaven! LOL I never ate this at home, but loved it VBS.

Can of tuna,
chopped onion

mayo
salt and pepper......
I might have to make some today....

And here's a shocker, ME the owner of all these cats, didn't know to give them the tuna water.....I can't believe, all these years......

Tuna, usually packed in water but since doing the low carb thing lately been buying it in oil, pre-low carb: Miracle Whip and pickle relish, now: Real mayonaise. Plus chopped onions, celery (if I have it in the house); pre-low carb: spread on lightly toasted bread, now: spoon on top of lettuce.
