Mini-Chandelier over Sink & Recessed Can Conversion

I am doing a mini-redo of my kitchen. So far I have pulled out vinyl and had hardwood installed. I have selected new wallpaper in a Jacobean style. I do not have the budget to change out the cabinets (traditional raised panel in white) or change the laminate countertops. I am trying to get more of a french country feel. I think I could get decent bang for my buck by changing my lighting.

I am thinking of exploring using a recessed can conversion kit to add two mini-pendants over my peninsula. Has anyone used these? I am curious how the hole cover looks.

Any one have pix?

Currently I have 2 builders-grade flush mount ceiling lights - one is over the sink and the other is about 5 feet away. I was thinking of replacing the one over the sink with a mini chandlier and doing a coordinating flush mount.

My upper cabinets do not have a bridge/apron over the sink but they do at least have crown molding on them. I probably wouldn't considered a mini-chand if the cabinets weren't finished in some way.

Over my table I'd do a coordinating 5 light chandelier.

My biggest concern/fear is too many hanging down things.

The room is 26 x 13. Any thoughts?
