Cutting cooktop hole on site

My granite will finally be installed on Wednesday, and I found out at the time of templating that the opening for the drop in cook top will be cut on site in my kitchen. Any words of wisdom or opinions on this?

The layout of the cabinets is u-shaped with the drop in cooktop and the undermount sink situated on the center part of the "u". There will be a seam at the cooktop and at the sink. This seemed to make sense as it will leave the long penninsula/breakfast bar and opposite arm free of seams. I suppose if I really objected, he would have put the seams at the corners.


I am worried about the amount of granite dust that could be generated from this. Will the granite dust scratch my cabinets when I attempt to clean them after the installation? Should I cover them with plastic? Will all this dust drift into ajoining rooms, and scratch the hard wood flooring in those rooms? I have porcelain tile in the kitchen. Not much concerned about that.
