hole for cooktop in granite/quartz counter

This is actually about countertop, not an appliance, but this still seemed like the forum where people would be most knowledgeable.

We currently have laminate countertop. When a new cooktop required a larger opening than the previous one, the installer just used a jigsaw and opened up a larger hole.

We're now in the early stages of planning a remodel, and we'd get a granite or quartz countertop. The initial cooktop opening would be part of that installation.

My question is, if and when we replace that cooktop in future, and the hole is not quite right for the new model, what happens? I know that a diamond saw will cut the countertop, but would an installer have such a tool, and would/should the installer do this given that the countertop might crack?
