large wooden cutting board- recommendations please

I would like to purchase one of those large wooden cutting boards that they use on many of the cooking shows. Does anyone have a recommendation on a brand/type of wood to get? I would not be using it for proteins. Mostly veges, fruits, etc.

Thanks for any suggestions.

I'm using a hard rock maple butcher block cutting board, 30" wide x 24" deep, that my builder cut out of the butcher block island countertop salvaged from my previous kitchen. It sits on little rubber feet on my marble island and, though very heavy, it's still portable enough to move off the marble if I want to do pastry work:

I love prepping food on this huge surface, but it sure does get beat-up looking very fast. I treat it from time to time with the homemade beeswax-mineral oil paste recommended by posters on this forum, which keeps it looking reasonable. There's all kinds of advice on the Internet on how to keep your cutting board sanitary.

Just be warned: Once you start oiling your cutting board, re-sanding it will be pretty much out of the question, because the absorbed oil gets stuck in the sandpaper and turns to an oily sludge (ask me how I know!). So, when the board really needs a good face lift, I think it'll have to be planed and re-sanded.

The cutting boards you are seeing on television shows are almost without exception John Boos cutting boards. They are outstanding and come in many shapes and sizes. You can Google John Boos and you will see them right away. Best of luck.

"----CSIRO here has done studies which indicate wood is self-sanitising---" I am familiar with that report, but I am still keeping an open mind. We all know wood goes rotten if not protected soon. That's why wood is used to grow mushrooms. There is very limited ability for wood to sanitize, it seems to me. And the report says, "---Some wooden boards have been reported to exhibit antibacterial properties. After a short period of time, fewer bacteria have been recovered from these boards than from identically treated plastic ones.--" "Some" means not all. "Short period of time"? what does that mean in a kitchen environment? There is also, "Experts disagree on whether wood or plastic cutting boards are the most sanitary. Most governmental agencies in the United States recommend plastic, while other experts say scarred, rutted plastic cutting boards can harbor just as much bacteria as wood." Try this: use a woodworker's scraper and scrape your wood cutting board after you clean it and you will see a lot of stuff that have not been cleaned away. I remember you posting a picture of yours on the "show me thread". I also have wooden cutting boards, 3 of them! All are large! This one is my favorite. I took the woodworkers design and asked to have a double black pinstripe put on either side. Had to wait 2 months to get it tho. The exotic woods are left over from the furniture he makes. I LOVE MINE!!!! All I ever do is put "food grade" mineral oil on it. (Purchased the oil @ Tuesday Morning). This one is 8 years old....I use it daily....cut anything and everything on it.....it retains no odor. After cutting pork or chicken on it I wash it with bleach & let it sit. It still looks FANTASTIC.....altho the little tiny red squiggly line that weaves down the middle isn't very red any more. It looks white in the picture. :0) ENJOY! I have a zillion cutting boards Some are beautiful craft cutting boards done by local artisans - i have trouble using these - but it has little rubber feet on the bottom to prevent scratching. I have a number of plastic "jelly" style cutting boards - probably won't buy anymore of these - in time, the mold in the little cracks... I have 2 Corian boards that I received as wedding gifts - they are still holding up and I toss into the DW. They have little silicon feet that sometimes wash off - so I have extras from Corian and the hardware store. Some of the nicest cutting boards are made by Boos - they have a website. I recently bought my new island with a Boos top - it is beautiful. OK - I can't cut on it yet and use a cutting board on top of it even though it is designed to to use as a cutting board. For my wood boards - I use a food safe mineral oil and I also have Boos board cream which I haven't used on my new island yet. And Cambria sent me a board to match my ktichen. I haven't used that one - i think it will make a nice cheese board as a bit hard on the knives. Here is a shot of where most are stored - my giant ones don't quite fit. The boards in the plastic bag are bread boards and always have residual crumbs... Have fun!

Thanks for offering, but I found one on Ebay from suggestions above. Otherwise, I would have considered your offer. I wanted a plain 22 to 24x30x at least 1 inch board, and they are not easy to find. This is a gift for my son and DIL who just moved into their house and wanted a large board like I have in my kitchen. Mine was specially made by a carpenter when we redid our kitchen 10 years ago, and he is no longer in the area.
