OT: Happy Thanksgiving TKO'ers, newbies, and forum friends

As you gather 'round your chosen meal, raise a glass, give thanks, and remember. Remember the kitchens that have gone before you, the kitchens to come, the meals that brought you together, and the stresses that have worried you sleepless. Some are just beginning this journey of discovery, some are tidying up loose ends, and others are stopping by to add their much needed advice. Thank you to all that make this "forum family" just like our real families: we add our 2 cents worth, we disagree, we love your choices, we offer alternatives, and we congratulate, hug, and love our homes. Well now all the Turkey is gone, I have done my Black Friday shopping, my GD got to spend the week end with me we had a blast, she got many deals, after being stuffed with Turkey & her favorite Lemon merange pie for dessert all the dishes are done, now we can relax get ready to trim the Christmas tree tommorrow, since a third of my Christmas shopping is done, I Love it Elizabeth

Hi forum friends, since it's still before midnight... Happy Thanksgiving! I am exhausted but it was a good day. We just had a small group, just my 3 children and my daughter-in-law and grandbaby, and of course DH and my mom. My stepchildren came over to visit later, but not to eat since they were stuffed full already. Zeus, Fat Cat Nemo and Lily all enjoyed their turkey too. I did all the cooking like I always do (because I enjoy it) but I hate the cleanup afterwards. I cooked a 20 lb. turkey, homemade stuffing, mashed potatoes, green bean casserole, butternut squash casserole and other assorted dishes. Finished it off later with homemade apple and pumpkin pies. My son and oldest daughter had to work today so our meal was in the evening and I'm still stuffed. It felt very festive here but more like Christmas because of the snow we got a couple of days ago. Everything is covered in white. South of here all they got was rain but we got lots of snow. Somewhere in my day I managed to escape for an hour to go see my Dad in the nursing home. I really missed his smiling face at the dinner table tonight....my Dad always raves about my cooking. I brought him some pumpkin pie and he made me happy by eating it all up with a smile. I was so happy to come here tonight and see some of you checking in. I miss 'visiting' with you all. Rita, Ginny and Nancy...it was great to hear about your day. And dear Jean...I'm sorry you were feeling a little blue today. I wish I could send Zeus over there to snuggle up with you like he does me when I am feeling down. Actually I have brined chicken for fryng too. I cut up the chicken into pieces and mixed a half gallon of water, 1 cup of Kosher salt and 1/2 cup sugar until dissolved. The chicken pieces went into the brine and the whole thing went into the fridge. The instructions said it could soak for an hour or more and then drained. I coated each piece with an egg wash and then a mixture of crushed corn flake crumbs and flour, seasoned with herbs and spices like pepper, corander, onion and garlic powders, ground celery seed, and a few other spices to compliment the flavor. It was pressure fried. As to the turkey, it was just the breast and fit nicly in a big bowl with the brine. Because it was a larger piece of meat, I brined it overnight in the fridge. It was then drained and I tucked the herbed butter under the skin. I roasted 3/4 the way in a covered, stainless steel roasting pan, then I removed the cover to allow it to brown. I must say it was the juiciest breast I have ever eaten. Even though it was a plain, non flavored brine, it made the usually dry breast into someting that could be eaten without having to drink liquids to wash it down. I roasted it with a few cut up carrots, celery onions, garlic, and fresh thyme and rosemary. All the drippings were added to the gravy.

Happy Thanksgiving everyone! I'd really like to see an off topic / conversations section here, I know I'd use it. A lot of us have been around for a while, I'd love to be able to chat about things other then selling my house. BTW, please start sending the selling dust my way after next week. We went to our new house the other day, we're looking at a possible January move. I've mentioned my hubby's accident, I'll be in the hospital from Monday - Friday; plus my daughter fractured her wrist the other day. The house being ready in January wasn't what we wanted to hear right now... lol

Well, I'm a newbie who's thankful for this place and this group of kind and generous people. In a couple weeks, you've changed me from a "somedayer" into a "thisyearer". Okay, besides being a newbie I'm TKO, but that's a good thing right?

Thank you Thank you Thank you all! Here's a toast to all of you! I have spent countless hours on this website during the past 5 months, and I hope once my kitchen is done I will still take the time to stop by and offer my two cents from "the other side". :) Take care and know I am envious of anyone who had a kitchen to cook in this Thanksgiving!!! :) CHEERS!

Hope you all had a wonderful thanksgiving! Thank you to everyone for their wonderful advice as I start my journey. All I could think about on Wednesday was that this was the last holiday baking (hopefully) I will ever have to cook in my less than functional kitchen!
