New stove came with Griddle Pan-- how to use

How do I use the griddle pan that came with my new slide in range? I know this sounds like a stupid question, but I've never had one come with an oven. It's a slide in with a glass cooktop. Is it for the cooktop or for the oven? I feel so stupid even asking this!

Are you sure it is not a broiler pan? Are there two pieces? One sort of rectangular shape with another piece that goes on top with slats in it? If so, then it is a broiler pan. Use it in the oven when you broil meats. The fat will drip into the bottom pan and not on the bottom of your oven.

mustbenuts- haha, no it's a griddle pan for sure! The broiler pan/tray was also included... That I know how to use!

Which Makes Best Pancakes - Electric Griddle or Griddle on Stove?

Just wanted to report that this thread inspired me to order an electric griddle (I've been making Ann T's oatmeal buttermilk pancakes every other weekend since January!). I used the new electric griddle yesterday, and the pancakes were much prettier and more even than the pancakes on my stovetop griddle, and it was much faster start-to finish given the size of the griddle. My gas range has the two different-sized/output burners, so the rectangular griddle pans never heat evenly (low on the high output burner is like high on the regular burner). And a regular griddle on the low output is just too small to do more than 3-4 small pancakes at once. Now I have to decide where to store the griddle in my tiny kitchen!

The temp has to be higher than the regular oven settings. If you have a self cleaning oven, that will get all that gunk off. My MIL had one they used for hunting camp that had that baked on stuff all over the outside as well as down the inside rim and most of the flat part of the pan. She was going to throw it out but I put it in my oven and turned that stuff to ash. If you don't have a self cleaning oven others here have posted about getting the coals in your grill hot and putting your pan in there to cook it off. I cana't personally attest to that method but that many KTers can't be wrong.. It's worth a try.

FWIW, the silvinox treatment is a chemical wash that just decreases the surface ratio of iron and impurities to chromium/nickel, resulting in what you could call a 18+/10+ stainless steel surface. Kind of like annodizing aluminum, it results in a surface that is harder and more corrosion-resistant than the underlying plain 18/10 steel. Also makes the Demeyere pans a bit smoother and thus less "sticky" than untreated 18/10 stainless pans. As for "seasoning" a stainless pan, plllog is right that you cannot and should not try to season it like cast iron. No need for oiling the pan for storage unless you live on the ocean or in a foggy marine environment and won't be using the stainless pan in the forseeable future. I'm guessing that MizLizzie's question about seasoning may have come from seeing postings by internet "experts" who talk about "seasoning" stainless pans. Their the use of the term "seasoning" is misleading. Now, when you get past the hoopla and hooey, MizLizzie, there actually is an old cook's trick for oiling a stainless pan, but you do it before cooking and you do it to reduce the amount of oil when planning to cook eggs and other such sticky foods. The trick is this. Heat your stainless pan for a couple of minutes. Shut off the heat, wipe on some oil or fat . Let the pan sit and cool down for a several minutes. (Five is usuualy more than enough.) Then wipe out the excess oil with a paper towel. Now, reheat the pan for cooking your eggs or whatever. You can now cook with no more or a lot less oil. This is just for a single cooking session. When done, clean the pan as per usual. Storing it with oil is just going to collect goo and crud.

I actually looked for a stovetop with the griddle, for my bigger family. You probably have a "bridge" element that spans two spots and the griddle goes over that. Start it out about mid range temp (you have to adjust the burners so they work together) I found the high temp was way too high. I also found that it needs oil or I use shortening to prevent food from sticking. Also, just a heads up, mine was uneven when I initially put it on a level surface, but DH adjusted the corner feet which screw in. If you have a smooth cooktop, also double check every time you use the griddle, for burrs on the feet that could scratch your cooktop. If you do find a burr, I would try removing it with a very fine sandpaper or even an emery board.

I love mine, makes great pancakes (8 at a time, 3-4" size) :)

The absolute best way to learn how to use a griddle is to job shadow a short order cook.

I am always surprised when people can't cook pancakes without oil (or other fat on the pan not in the batter) - my Mom always used a griddle and would test it by flicking cold water across the surface - if it dances your good to go. Cast iron griddles in a stove might be different as cast iron is quite porous and rough.

The griddle that I have does seem to have a cast iron finish although the base material is cast aluminum, I think? Trust me, I tried it without the oil to start with, not pretty...but once the oil has been absorbed by the first couple of pancakes, the pan seems fine without adding more (Pseudo seasoning?)
