Granite pitting

I was at my GMILs home the other day and noticed there was a rather large chunk of granite that was missing from her slab where one of the more irridescent pieces of rock was located. It basically looked like a pebble had popped right out of it. For the life of me I cannot remember the name of her granite, but I'm wondering if this was probably due to a lack of her sealing her granite yearly or if this is possibly just the nature of the stone she selected. I think I read somewhere that if there is mesh on the back of the slab, the rock is being "held together" and this is more likely to happen. Is this true? And are there other ways to tell how durable the stone is other than the mesh on the back?
