not-finished KAW, how to preserve last tomatoes?

I have the last of my cherry tomatoes, about 1 quart of ripe and another of unripe, which in a normal year would be made into a jar of tomato jam and a jar of green tomato mincemeat. But, my stove is not yet hooked up!

Does anyone have any tips for making preserves in the microwave or toaster oven?

I did make membrillo in the toaster oven a few years ago (that was sooo good!), but I still finished the putting up on the stove.

Help!
