About to get a commercial range. Any advice?

We are finishing our kitchen and after agonizing over the benefits of BlueStar over Wolf, etc, we finally realized we could get a commercial range for less than half the price. (We did read the FAQ, but since we hadn't finished the kitchen yet anyway, the extra insulation and fire protection was not a problem at all and of minimal cost, relatively speaking. By the way, the dealer has promised in writing to do all service work.) Anyway, my new 60" commercial range with two full ovens, six burners, and a salamander with a 24" raised griddle will be arriving in about 3-4 weeks. My question is this. What different tools will I need to cook with, if any? Anything else I should know? I'm an accomplished home cook and I entertain frequently, but I've never actually cooked on one of these babies before. Can we say excited?
