Undermounting a drop in Silgranit sink?

In our old kitchen, I had a drop in SS sink that I had undermounted. I loved it, because I could just spray off the gunk around the faucet without soaking the counters. Plus, I didn't have to cut holes into the granite.

So now I'm considering a Silgranit sink, and I am looking at doing the same thing. There are undermount clips as an optional accessory, so I'm assuming it is doable. Has anyone here done this? What's up with the popping out the holes for faucets, etc.?

This is the sink we are considering. Also, our cabinets are standard 24" deep. Are they really big enough for this sink?
