What's the best counter top for food prep?

Take heart those of you who are going through countless layout ideas. The end finally does arrive. You will know it when you see it.

I am thinking about counter top materials. I have a 48'' x 24'' prep area (32'' high counter-yea!) We are vegetarian so the prep is largely fresh fruits and veggies. I am wondering if I should I do all the chopping on the counter top or on a cutting board? What would you recommend for counter top material, and why? What has been your experience? There is a separate area for baking, but I may want a large piece of something to put on top of the prep counter for making pasta and breads. The view is better. Any suggestions what would be good for that as well?
